De eerste eigenaar heeft het restaurant verpacht, verhuurd en in 1996 verkocht. De afgelopen 14 jaar, hebben we niet stil gezeten, we hebben de speeltuin uitgebreid tot een paradijsje voor kinderen en de parkeer gelegenheid vergroot van 12 naar 31 parkeerplaatsen. We hebben ook nog een kleine veestapel opgebouwd, zoals kippen, hangbuikzwijnen, geiten en een pauw. Verder is ons interieur gezellig oud-Hollands ingericht met veel antiek. De "open" keuken voldoet aan alle eisen van deze tijd. Op zomerse dagen in het weekend en op feestdagen bereiden wij ongeveer 300 maaltijden per dag. Veel gasten komen graag terug en zien wij maandelijks een pannenkoek bij ons eten. Het pand is in het verleden voor verschillende doeleinden gebruikt; antiek verkoop, klompen- en kaasmakerij, mecano tentoonstelling en spelletjesopslag was vroeger allemaal mogelijk. Momenteel is Pannekoekbakkerij "Houtlust" alleen restaurant met een kindvriendelijke speeltuin, terras en ook een "warme", "fijne" en "gezellige" plek voor feesten en partijen.
