Impasto is a trendy spot in Cagliari for pizzas, pastas, and small plates for sharing. To start,…read morethe Tartare di Manzetta was cubes of marinated raw beef tartare served on a slice of brioche toast; and the Polpette al Sugo were dense meatballs in tomato sauce topped with Parmesan. On the side came airy slices of sourdough bread, and we also ordered a mixed salad (lettuce, radicchio, carrots, cucumbers, tomatoes). Fresh from their pizza oven, the Capricciosa came with tomato sauce, fior di latte, artichokes, mushrooms, ham, and a soft egg, all on a chewy crust. But my favorite pizza was the Primaverde Dell'Orto, a seasonal pizza of spring vegetables (leeks, spinach, olives, escarole), fior di latte, and a cream made of green peas (instead of tomato sauce). The highlight was the pea cream, which had a slightly sweet flavor, complementing the earthy green vegetables.
