The service here was the worst I have experienced in Vegas, and I was born and raised here . I made a reservation for 8:15p. Was not seated until close to 8:30. Our server, Kylie, either was having a bad day or just didn't want to serve us. No positive emotion in that girl whatsoever. We had to find someone just so we can pay and leave . The server for the table behind us was a lot more attentive so maybe we just lucked out. The food was just okay. The birria tacos were 01/10. They were soggy, not flavorful, and you get two small tacos for almost $30. I got the short rib and it was a lot better, but I've had better other places. We recently visited Amaya during our trip to Las Vegas and overall had a great experience. For our appetizer, we ordered the shrimp aguachile. Unfortunately, it wasn't what we expected. As someone who enjoys aguachile, this version tasted very little like a traditional aguachile and was overwhelmed by greens. It just wasn't for us, and we ended up sending it back. That said, the rest of the meal more than made up for it. I ordered the surf and turf, and it was absolutely fantastic. The steak was cooked perfectly, the seafood was flavorful, and the entire dish was well executed. It was easily the highlight of the meal. For dessert, we tried the flan and the churro tree. The flan was a little different from what I'm used to, but it was rich, creamy, and very enjoyable. The churro tree was also delicious, especially paired with the strawberry-guava sauce, which added the perfect amount of sweetness and flavor. She said it was going to be over an hour wait even though it was clearly not packed and there was no line but we were hungry and this place looked really good so we put our name down. We were greeted, checked in and taken to our table within minutes. The dining room is gorgeous. It is dark, classy, elegant and comfortable. Yes, you can have all of those adjectives in one place! Our server was wonderful this evening. He was timely on everything and him and the team made everything run smoothly. For dinner we started with the complimentary chips and salsa. The salsa was delicious; however, we also decided to order and add the guacamole. The guacamole was definitely among the top tier of guac that I have had. We then shared an appetizer of the Mariscos Al Fuego. As the name implies, the dish came out on fire and it was a delicious combination of shrimp and scallops in a lovely lemon butter mixture. It was very savory and very delicious. We then shared the Birria Short Rib. Although this was very delicious, we almost felt it tasted like mole sauce, and we were a bit confused about if we actually got what we ordered. We came here on vacation and I'm really happy we tried Amaya in Las Vegas. I'm honestly looking forward to coming back the next time we're in town. Overall, I'd give it 4 stars. Ambiance is easily 5 stars beautiful, sexy, dim, and really well-designed. Service was also 5 stars across the board. Reservations were easy to get, and we came on a Thursday around 6 p.m. The hostesses were incredibly friendly and welcoming. Every single person at the front made us feel taken care of, and they were genuinely warm and sweet. Our server (I unfortunately forgot her name) was also very pleasant and attentive. For food, I'd rate it around 4 to 4.5 stars. We started with chips and salsa, which were excellent, and we also ordered guacamole. For mains, I had the chicken fajitas, we also got shrimp tacos, and a chicken quesadilla for my son. The chips and salsa were honestly so good, I couldn't stop eating them. The fajitas were good, but the seasoning was okay. The chicken seemed a bit more like it was in a wet sauce rather than nicely grilled or seared, and I would've preferred it sliced a bit more cleanly. I also didn't love that rice and beans weren't included and had to be ordered separately. I ordered the side of rice and the portionwas quite large, and I think a small standard side of rice and beans should be included with fajitas. That said, everyone enjoyed their meals overall. I didn't get a chance to try the drinks, but I definitely will next time. All in all, it's a beautiful restaurant with great service and a strong menu. So to be honest they weren't really accommodating. The table we were at like I mentioned wasn't what I was expecting, the lighting was too dark, it was just awkward. The food: The Chips & Salsa were good My friends said their Tortilla Soup was great The Birria Taco Plate one of them said the Consume wasn't that flavorful The Shrimp Ceviche I got was good but I ended up getting an allergic reaction to this plate. We started with the Mariscos al Fuego, which are offered as an appetizer, and they were absolutely delicious. Honestly, they were one of my favorite dishes from the entire trip. It's not easy to impress me when it comes to Mexican food, and this modern take on it really did. The cordial staff greets you with crispy chips and salsa right out of the gate. We had the shrimp enchiladas, cooked in a savory guajillo cream sauce and topped with avocado, but the real star of the show was the charred octopus. They serve the entire octopus on top of chorizo, potatoes, and white beans. It's marinated in guajillo chile so it stays tender, and the char gives it a deliciously smoky finish. We wrapped up a more-than-satisfying meal in the peaceful, relaxing atmosphere with the flan, which had a nice hint of orange that set it apar, though I'd call it just good rather than great, so I'll try a different dessert next time. The entree of Carne Asada was beautifully presented, surprisingly plentiful (we split it), and cooked perfectly (they recommend medium or medium well - we requested medium and it was perfect). The carne asada, Mexican corn and frijoles charros were all perfectly seasoned. The Mexican corn wasn't bathing in mayonnaise which kept the dish with a great balance of flavor and appropriate texture. The frijoles charros are also popular and we now understand why as they were perfectly cooked and seasoned. The drinks were spectacular and very aesthetically pleasing. Sadly we had to drop our rating from 5 to 4 stars as the temperature of all three dishes was less than desired as we don't know if the food sat for too long before arriving at our table or what. Like many have mentioned, the ambiance transport you to Tulum. On weekends after 8pm, the vibes come to life with a live DJ playing deep house mix and fire dancers roaming around the restaurant. Their chips & salsa are complimentary here. This automatically deserves 4 stars right off the bat. Because honestly, very few Mexican restaurants on The Strip give you chips & salsa without being charged $8.00+. Between the two of us, we ordered the Aguachile as our appetizer. And then we shared the birria tacos, carne asada (meat dish, not the tacos) and chicken taquitos. Everything was flavorful. I read a few reviews mentioning bland food items. Amaya is a very nice Mexican restaurant located on second floor of the dining area in The Cosmopolitan. I highly recommend making a reservation ahead of time on OpenTable. The exterior has an eye-catching striped wood pattern that wraps around the side and to the front. It is open on the side and gives a view into the bar area. The interior is gorgeous with a lot of wood, plants, and very unique chandeliers. It feels kind of tropical, and has a trendy upscale vibe. After being seated, we were greeted by our server who also brought complementary chips and salsa. We also ordered the guacamole ($18). The chips were very good and slightly thicker than your average chip. The salsa had nice flavor with a little smokiness. The guacamole is served in a heavy stone bowl with sliced radish and herbs on top. It is a generous portion and tasted great. I ordered the Carajillo cocktail (Licor 43, Frangelico, Amaro Montenegro, Rosemary & Carrot Infused Foam, $21). Call me naive, but I didn't know this was a coffee cocktail. The cocktail menu omits cold brew espresso as an ingredient. My naivety was a good thing because it was very good and I probably would have not ordered it if I saw the coldbrew. This had the most epic foam top of any cocktail I've ever had. The foam was very thick and creamy with a large amount. It had its own flavor and really mellowed out the coldbrew along with the other liquors. For my entrée, I had the shrimp enchiladas ($39). The plate is served with three smaller than average sized enchiladas with a fair amount of shrimp. There are avocado and red jalapeno slices on top. I prefer green sauce on my shrimp enchiladas, and didn't realize that this plate came with a red sauce. It was good, but for the size and price, I wouldn't get it again. She had the crispy avocado tacos ($24). The plate comes with two tacos and a side of salsa. She said they were very good and very filling. She was stuffed after eating both. It was very kind of our server to bring a complementary dessert for my birthday. It was a small lava cake with ice cream, fruit, and a caramel-cinnamon drizzle. Came by our first night in Vegas, put a reservation in about 4 weeks prior, especially due to the high volume of patrons in the city for the Beyonce and Backstreet Boyz concert. Right when we were seated, they began with their hourly fire show, which I could definitely say caught our attention, especially in that very dark, moody ambiance. The restaurant could receive a 5-star just for the interior design they put into it. They also have bottle service as well for those who may be interested. For drinks, we ordered Smoke & Mirrors (8.5/10) and Amaya Paloma (8.8/10). Then for appetizers, we order the Queso Fundido to go with our chips & salsa. The cheese was freshly melted and tasted amazing with the chorizo (9.0/10). For entrees, I ordered the Shrimp Tacos, which were really good. Only thing I would note is the portion size, as only giving 2 tacos for that price is a little concerning, I think they can do better than that. The salsa that came with it was amazing. All in all, I had a good experience at this establishment, loved the shows that came with the meal. In terms of pricing, it is on slightly higher side but is as expected with majority of other restaurants in Las Vegas, just wish portions were more fulfilling. It wass good for a 1st time visit. We had a fantastic experience at Amaya Modern Mexican which is located inside The Cosmopolitan Hotel. We made a last minute decision to dine there while in Las Vegas for the weekend so without a reservation we were seated at the bar. The restaurant was full to capacity but the service from the bar staff was fast and attentive. The birria tacos and fish tacos were absolutely amazing, flavourful, perfectly prepared, and easily some of the best tacos we've had in a while. The La Niña and El Niño mocktails were refreshing and delicious, a great complement to the meal. But the true standout was the pineapple sorbet dessert. It was hands down the best thing I've eaten all year. Pineapple sorbet with mango and pineapple chunks with caramel and passion fruit drizzle. AMAZING! It was time to try out Amaya, at the Cosmopolitan. I came here via Uber, to try the 2 pound lobster. But then when I got here, something didn't feel right. So, I started with the complimentary chips and salsa. Both super. Then ordered the Oysters Oaxacafeller. Four of them came to the table with a very strong stale odor. First, I thought it was the table next to me. Then, after some sniffing, I actually discovered it was my oyster dish. Still, I ate one oyster preparation to make sure... absolutely pungent with no flavor at all, almost gagged, and excessively buried in breadcrumbs. That should've told me something. So I informed the server.... Pushy as he was. I told him..I can't eat this. What surprised me was his response. Immediately, without even arguing or questioning he took it away. Then I see him talk to somebody, probably the manager. I could see that they knew what was happening. By then, I had already ordered a side of Frioles. These pinto beans were good.... nice texture, not overdone, super bite, subtle but with immense flavor. So the afternoon was done for me. The tagline for this new restaurant is "Modern Mexican" ....really? I'm still stunned at how they could serve this stale (probably spoiled) food, to a customer. Extremely disappointing. read more

I made a reservation in advance before coming in for dinner. I booked at 7pm and we were seated right on time. Nice atmosphere, good for date night, group dinner and girls night out. It's pretty dim in there so you might not get the best photos without using flash. Personally it was too warm inside and I was sweating. For dinner I ordered a side of elote, scallop and rice as the main dish, charred octopus and alcohol. Chips and salsa were complimentary. I enjoyed chips here as they were freshly made and crispy. I believe our server was Logan and he was friendly and provided excellent service. He always checked on us and made sure to follow up on our food and drinks. The only complaint I have would be the timing of when the food came out. Charred octopus came out first and we waited a long time before the other two dishes finally came out. The food was delicious. Charred octopus wasn't chewy. I liked cream sauce that it came with. It was two big pieces and we couldn't finish it. I also love the flavor of elote. Didn't even need lime, it was already well seasoned. Scallop was so soft and easy to bite into. Overall I enjoyed my time here. Food and service were amazing. The bill, of course, reflected the quality. There was a table with children who complained about the bills saying the portion wasn't big enough. Personally I won't bring kids here. We have been visiting Vegas in the recent years and haven't visit Amaya yet, so we decided to give it a try. We made a reservation on a Tuesday at 6, but went around 5:30 and was able to be seated right away. The restaurant look and feel fancy, with the moody interior decoration and wait staffs wearing formal dresses. Once we got seated, our server greeted us right away and took our order. We ordered two cocktails, two entrances and a dessert. All our food arrived with delays, but our server was vigilant and the chip & salsa kept us occupied. We got the Quesobirria tacos and the octopus. My husband liked his tacos, but felt very underwhalming when there's only two small tacos for the 30 dollar price tag. Overall I enjoyed my octopus plate as it was tender and delicious. However, the ends were burnt to charcoal resulting very bitter taste. For someone who's avoiding burnt food, it was a bit underwhalming despite the dish was otherwise well prepared. We got Golden Goodness for dessert, and it was a show stopper. With golden dust on the chocolate rock and dry ice flowing on the bottom. Everyone seemed to be impressed and ask what we ordered. TBH it was a bit too much and too sweet for two of us. I think it would be perfect for a table of four chocolate lovers. Overall, we were impressed and underwhelmed with our dinner experience, at the same time! With so many restaurants to choose from, it's hard to say if we would return again. read more
