The seaweed was paired with this other really sweet sauce. The soup was way too salty. The rice grains were small and hard. The dipping sauce for the meat didn't have enough complexity. And then there was the smoked chicken - coated in homemade spice rub, then slow smoked to tender juicy perfection with skin thin as paper as the fat all melted off. This is some of the best chicken I've ever eaten! The "coup de grace" was the brisket - the holy grail of all meats. I had a small slice of the center part of the brisket, the most tender, juicy, meat full beefy flavours - especially the burnt edges where caramelization is most prominent.
