I am a baker and I'm always looking for that perfect bakery. Well today I found it! Bakin' It Up Collective in Fallbrook had everything you could want in a bakery. The most moist, tall, flavorful muffins. I had the Pistachio, White Chocolate and Cranberry muffin. Sooooo good! The sourdough bread had the perfect texture, crust crispy but not so much it tore your mouth to shreds. The inside, soft and still warm at 8:15am. Scones were light and moist, Banana bread was super moist with large pieces of Walnuts. Coffee was strong and piping hot (for my hubby). Best of all I appreciated them having decaf since I can't have caffeine but I still love coffee. We live in O'Side but will not hesitate to drive the 20 minutes or so to visit this jewel of a bakery. I recently moved from the San Francisco/Bay Area (where I lived for over 35 years) and love and know sourdough bread quality. We just discovered this bakery today and let me say, they have their sourdough down pat! The starter is amazing, with just the right amount of tang and salt and the crust was perfect! If you're a sourdough aficionado, you won't be disappointed. We also tried the baked ham and cheese croissant which was also excellent. We will be back! read more

Bakin' It Up Collective is every small towns dream. It's like we live in Paris and have our own pastry shop around the corner. This incredible addition to our town is ran by female powerhouses Kelly and her partner in crime, Kneaded Distraction Joanna. Kelly is the bakery goodies and Joanna is the delicious sourdough treats. Kelly makes a variety of baked goods that are gluten-free, keto, and vegan! The best things that we've enjoyed are the cupcakes, cookies, and pies that are none of those things. Y to the UM, pure sugar and carb deliciousness. Today we picked up a pumpkin chocolate tart which will be we devoured after dinner. Joanna's sourdough bagels are a literal godsent the days I've gotten no sleep because of the baby and have no energy. She makes a jalapeno cheddar sourdough bagel that I cannot live without. During hatch Chile season she made hatch Chile English muffins and they were mind blowing scrumptious. Bakin' It Up is also home to other goodies that the people of Fallbrook curate . Savvy Macs, Deluz Coffee, and some organic produce is being used from Canyon View Farms that can all be found within the shop. We are so appreciative that Kelly started this venture and we especially love Visiting with Joanna when we stop in. She has been watching our daughter grow up in this small town and now our daughter is eating her goodies too! Looking forward to the events they are going to host. read more

We were blown away with how yummy the food was. My friend had the pumpkin bars with a browned butter cream cheese frosting. I could be in food Heaven with just a plateful of this yummy whipped icing alone. I purchased three scrumptious cookies. Two of them were tasty cookies( the peanut butter. & chocolate chip but that toffee oatmeal with coconut was oh so heavenly. What a fun find today. We were just walking around Main Street and looking at all the cool scarecrows that are everywhere in Fallbrook right now. I understand that they sell bread and lots of other great looking and smelling treats. We will definitely be back. read more

The Bakin' It Up Collective location on Main Street is a gem. We've gotten breakfast there two weekends in a row now, and the food was consistently delicious. The Brie toast was out of this world, also loved the coffee cake. My husband really enjoyed his egg sandwich and cinnamon roll. Love that you can get whole sourdough loves there too. read more

I've been a few times now, and not only is it a really cute place, their offerings are always good. This has become my new homework spot when I need to get out of the house. The staff is friendly, it's fairly quiet even when there are a lot of patrons, and it's always clean. I definitely recommend you stop by. read more

HOLY CRAP! I just found this place and the offerings are amazing! Ham and Swiss croissant is one of the best I've ever had and they launched a corned beef hash that you won't find as good many places in Southern California! I took a Sourdough loaf home as it looked so good. They carry so many good choices I can't imagine being done with this place in less than 10 trips...and then who knows what will be new!!!
