Leisurely walking around the village, we saw several folks from my previous school outside a corner house and found out that they were there to have their regular tapsilog fix. Curious, we went and tried it to see what was special about this place that people come back for it. The tapa was indeed good, served with freshly cooked fried rice and egg, plus small bites of yummy chicharon. To neutralize the taste, they serve their tapa with a bit of pickled kangkong, which for me was the best part of the meal. It was so yummy I even asked if they sell it by the bottle, and they do! Delighted, I had some friends go back with me and even they are now regular customers of this eatery. Always fun to discover and share discoveries with fellow-foodie friends.

Real affordable, served over steaming rice, with a bowl of really hot sabaw to sober up your liquor muddled brain. Sinangag Express used to be a small tapsihan where kids crash after a long night of drinking. They weren't a big franchise then. But that's way over in the Paranaque area. Unless you live in BF Paranaque or already there, it's a bit tedious to have to trudge over to that part of the South to get a tapsi fix. So you search closer to home. Inside Philam is a little haven called Sese's Tapsilog. What's really good here is that their serving of tapa comes with little bits of crushed chicharon. A real plus, if you're into that sort of thing. The real kicker though is their acharang kangkong. I just love achara, and their kangkong version is seriously top notch.

I heard that a restaurant down in the South offered a Cubano that was worth a try and I decided that I wanted to try it out. Man, oh man, was I not disappointed. I was incredibly satisfied, actually. When the Classic Cubano was put in front of me, I was so ready to demolish it, manners be damned! The image of the layers of pork, cheese, jalapeno, and ham together were enough to satisfy my craving but of course, nothing beats the taste. The pork may taste dry at first but then when you continue to bite in and taste the rest, you realize why it's the way it is. The last kick of jalapeno definitely brought it home. It was everything I hoped to be and then some. The next I tasted was another burger, but this time it was two grilled cheese sandwiches with a beef patty between it. We ordered different things for the family to try and I must say that the food was good! We ordered the Paella Valenciana which is the flavor/variant we all know of. We also ordered the Caldo Gallego which was a hearty soup composed of beef, chicken, beans, vegetables and Spanish chorizo. We had the Salpicao, Croquetas and Bacalao ala Vizcaina (cod in tomato sauce). All of those dishes were really good! To end the meal, we ordered Sangria and partnered it with Bandeja de Jamon, Chorizo Y Quezo which was a platter of cold cuts, hams and cheese. The restaurant definitely captured the taste of Spain. Honestly though we weren't expecting that much since it was only a neighborhood joint and we suspected would not offer Spanish dishes quite as authentic and fresh as those we've had in more expensive restaurants, but boy were we wrong. Calderon is fantastic. Their flavors was bold and their dishes though made with simple ingredients really pack a punch. The place is cozy and warm, the décor classic and earthy. The food offered is classic Spanish and we ordered salpicao, paella, gambas, and croquettas, all staple Spanish food. I was blown away by how tasty and great everything was. The tapas options are killer. I could honestly go home with a pot filled with their salpicao and just gorge on that and rice for a week. The ultimate test (at least for my mom) was their paella and it did not disappoint it was flavorful, salty, packed with meat and veggies. Calderon is certainly a must-try!
