We were apprehensive that we would not be able to get into this restaurant with its wonderful references. Fortunately, perseverance does win! Like most of the city, parking can be tight, the convenient central location of this restaurant allows for easy access in the downtown area. Upon arrival, we were met outside the restaurant at street level for our reservation. We were a little early, but this was no problem for the staff who pleasantly greeted us and quickly seated us. The dining room is very comfortable with table spacing that allows privacy yet enough room for some people watching! We noted private dining is available with appropriate reservations. The decor is a welcoming mix of fine dining and whimsy. We absolutely loved the team of servers who kindly walked us through the menu options, and all the details around each meticulously, extravagantly, and artistically made courses. Our well versed sommelier offered us a wonderful wine pairing with each course; we were provided a card at the end of our meal, that shared all the pairing information. Each dish was so special it's hard to describe. Many of the offerings were new experience for us, and we've tried food all over the world. From start to finish, the amuse bouche offered a specific nod towards environmentally friendly fishing and a finishing drink that included a combination of pine, sherry and citric juices that brought me back to camping days of my youth in the mountains, everything was sheer perfection. Attractive, friendly, and competent people. I started with the absolutely delicious Ping Pong cocktail, a mix of lychee and passion fruit purées with gin. Wow was that a great drink! I had two. Next I started with three Guillardeaux oysters. They were so plump and sweet. Astounding, actually. I could have made a meal of these if not so expensive (€3.50 each). I also tried a small croquette of Roquefort and spinach that was everything a croquette should be. Next up was an amazing Thai fish cake. It was crunchy and tender and mildly spicy with a nice hit of fresh coriander. It was a starter that I was sad to see disappear so quickly. It's a taste I want to experience again. My main course was a tiradito of local seafood. It's basically a ceviche but they amped up the flavor with a Thai-inspired marinade. The shellfish were amazingly sweet and tender and played well with that sauce. A very generous portion, too. I finished with dessert, a small disc of cheesecake topped with both a caramel sauce and berry purée. Neither was overly sweet. It was surrounded by beautiful chopped, toasted hazelnuts and a crunch derived from coffee. The entire dish worked beautifully. All of this came to €65! Very good value. Walking away from Valencia city center, through a rather unattractive Soviet looking neighborhood of monotone run down apartment buildings and lost youth wondering the streets, one arrives at what looks frankly, like nothing. A brick one story building without a clear entrance, rusty doors and a sense of confusion that begins to creep into the mind. How can such a supposedly high end dining establishment be located here? One might blame the Google maps immediately or nervously scroll through the reservation email to double check the address. But, it is also important to maintain calmness, know that all will be fine. A few deep breaths later, circling the building initiates and that is when the wide open entrance with a greeter will enter the purview. Being led into a gorgeous waiting area with notable cookbooks and an industrial inspired warm decor, there is a light refreshment served and a bite sized onion snack. Unfortunately, this was probably the most frustrating part of the experience as the wait turned out to be about 45 minutes with just that virgin cocktail and a bite sized snack. For a restaurant of this caliber, this is a pretty major oddity. But, the rest of the meal was so spectacular, it is hard for any initial criticism to maintain its validity. The theme of the restaurant is usability if every part of the vegetable in different ways and dishes. For example, zucchini stuffed with steak tartare in one course, then reusing zucchini peel shavings in a dessert. The courses are certainly an adventure, with crazy delicacies such as black caviar purée with tiny shrimp, zucchini ice cream, garden strawberries with beet root and many others. The olive oil topped Valencian bread also stood out as undoubtedly the best bread I've ever tried, anywhere. The tasting menu is massive and will be extremely filling. Having a chance to meet the chef himself was quite special also. Thus, this is a restaurant that is highly curated and a unique experience that separates it even from some of the most prestigious restaurants in the world. Ricard Camarena's establishment certainly has a league of its own and a well deserved place in the Michelin guide, but more importantly, it is a place that has created very fond memories of Valencia.
