The old-fashioned was balanced--that rare moment where sweet and spirit and bitters hit in the right proportion. The Cocktail of the Year from 2023 more than earned the title. Crisp, layered, the kind of drink that makes you sit up and pay attention. The 48-hour focaccia with 12-year aged balsamic opened the meal right. The bread ferments into something with real depth and structure, the balsamic is dark and tangy, the oil is there to round it. Simple and deliberate. The fried chicken that followed--buttermilk crust so good you hear it crack when you cut into it, hot honey and n'duja mayo cutting through the richness. This is how you do fried chicken. My pork chop came dark with mustard seeds cutting through, radicchio pulling bitter notes, potatoes that deserved their own mention. Market in Dalkey,. Just three stops away on the Dart. Their Google listing indicated that their kitchen closes at 9 pm. By the time we got going, it was already a little after 8 pm, but we hopped on the train and got there by 8:25. Instead of being turned away, we were greeted at the door by the hostess and told we could sit wherever we'd like. Such a different reception, and we had a fabulous meal. Our experience at The Fish Shack was inexplicable and disappointing to say the least, but God turned it around for good because we had a wonderful experience, at a welcoming place at Bubba's! Who knows if we'll ever make it back to Ireland again, but if we do, we'll never go back to the Fish Shack again.

It had toast, bacon, poached eggs, tomatos and avocado puree. My only only qualm was that the avocado puree tasted a little stale - like it maybe wasn't made that day. I have a lot to say about the burger bowl, which was having a major identify crisis. I think it was trying to be a salad. There was a large slab of goat cheese on top of the burger, but the salad underneath it had large chunks of feta. Feta and goat don't go together. Pick one. The burger was thick and had potential. It would have been better if it wasn't well done, but we weren't asked how we wanted it cooked. I know a lot of places won't cook anything rarer than medium, but a well done burger is a travesty. The burger was served on a bed of mostly inedible greens - you know, the kind that look like artificial plants that your body would have some difficulty digesting. It was a greek salad with olives, feta, tomatoes, and onions, so you'd expect greek dressing to be an option, but it wasn't. You get either balsamic, tomato relish, or pesto. It was a strange meal, but not a bad one. When we were finished and ready to leave, it took us a while to chase down our server. They were very busy, so we understood.
