To get good results, you have to pay attention to the details. Just like a quality thermometer to pull that brisket at the right time, you need quality clean burning dry wood. I have a box of Smoak Firewood cherry, white oak, hickory and pecan at the ready at all times, if I get an urge to grill out or smoke on my PK360 or Cookshack. Every box appears to be hand picked, and clean and fresh but most importantly it's kiln dried. Having several boxes at the ready allows me to pick and match the wood to the thing I'm cooking. The owner Amy and staff are incredible folks that can answer any questions you have and even provide appropriately sized pieces. I'd much rather give my money to a local small business like this. If I'm remembering right, I believe they also supply several restaurants with cooking wood. This wood is even packaged so nice, it would be a great gift for a foodie! It was a little more expensive than some, but the quality is better than anything I've had before. Why does that matter? It starts easily but burns much longer.
