The capable staff from Eau De Vie have created a sophisticated whisky & beer bar in the Melbourne CBD. Ladies - this a great place to bring your man for a date. Gentlemen - this is a great place to take this lady for a date. There are approximately 600 different whiskeys available and a good variety of independent craft beers that rotate on tap. The menu is arranged by flavour, rather than origin, so it's accessible for both connoisseurs and novices. I recommend trying one of their signature boiler makers. It's a craft beer and whiskey pairing served with a small, flavourful bite, such as a square of dark chocolate or a crispy piece of bacon. These paired items work together to enhance each other's flavours for your drinking pleasure. The team is also working to create a selection of quality meats and cheeses. This is not the place for students looking to down Irish car bombs. Come here for quality drinks and conversation. I visited Boilermaker late on a Sunday evening and appreciated the relaxed atmosphere that gave us time to chat with our bartender. Word on the street is that the weekends are already busy at this new establishment, so you may want to plan accordingly. Pull back the large wooden door to discover a special spot in the city.

This place was amazing. I bookmarked Boilermaker while researching cool bars in Melbourne before I left for Australia. 100% did not disappoint. It's easily found, facing the streets & not down some laneway Americans don't understand. The menu is fantastic in that it changes whenever they run out of one of the craft beers or bottles of fine whiskey. They rewrite or create new Boilermaker recipes belased on what's in that morning. All the staff were dressed adorably in semi-vintage camping looks... I can't think of any other way to describe it. The interior is so magical, somewhere between a library and a patio garden. There was only a table or two open when we arrived and lucked out on a booth. There was a cute gas camping light on the table that I loved visually but could have done without the smell. They also gave my table of 3 all a free sip of a magical, fruit infused whiskey cocktail because there was a Birthday at the table. I ordered a Boilermaker, which consists of a special beer, an aged whiskey and a paired nibbled snack. I chose the Bittersweet Symphony Boilermaker. It was a Danish ale, a delicious 16yr old whiskey and some dried fruit candies. A fantastic pairing served on a cute wooden plank. For the amount of drink, it was a good deal at $29 considering a single whiskey can be $15-20 Down Under. 100% recommend.

Were there with the busy late Friday night crowd, and as I'm just getting into my whisky and heard good things I was pretty excited to finally be popping in. Place is suitable dark and cool inside and the staff were very helpful and knowledgeable. Of course I got a boiler-maker, which was a little pricier than I was expecting, but you get that when trying new whiskies. Found the food pairing you get with a BM a little odd - it was so tiny you wonder why they bother - but otherwise the beer and whisky pairing was perfect, and I'll be back to try a bunch more stuff soon.

Whisky lovers, this place have rows and rows of whisky, on the visit, I had 3 cocktails and my favourite is Miss Decadence, it came in a coffee cup with a biscuit. I prefer my cocktail to not taste like alcohol and this taste like a dessert. I would come back to this place just for the cocktail. Like any bar, the music is a tad too loud and conversation is a little hard with those caross the table when you are in the booth.

when ur sitting sobering up .. sipping that beat ~$50 scotch... ** don't ask me what it was can't remember .. I just kept nodding!! "Yep" ** you realise it's funny watching drunk people fall over ... Xmas parties were everywhere!! anyways this place has a great vibe and atmosphere. If you're looking for a sophisticated drink this is it! scotches and whiskeys and cocktails .... plus ur usual local garden variety ... beers, basic spirits...

Great place to visit and enjoy a whiskey!

Very interesting place to visit and enjoy an evening of whiskey, conversation & food. A huge variety of whiskeys available from all over the world presented in both bottles and "on tap" (really?). The bartenders were friendly and helpful in the selection of a good whiskey, but while I did find the price a tad steep, the quality made it worth it. My wife and I split the Polenta & blue cheese dip. It was tasty & warm, but I thought there should be more dipping sauce for the amount of Polenta chips. The chicken liver pate was incredible, but again, more bread chips would have helped as we had more pate than bread. Kind of hard to find though as there were outdoor seats, but if you looked in, the bar was behind a door, which gave it a bit of a speakeasy feel. Keep looking though because it's worth finding in Melbourne.

No one informed us about any policy. We paid for the bottle with 5% service charge which I do not think they deserved. We had a sudden work call at 11.30pm and grabbed the bottle to go, only for the staff to chase us to the front of the bar to inform us that they do not have a takeaway license. For christ sake, we already had bought the bottle!! Though it's alright, we respect policy. They highlighted that they needed to keep the bottle in the establishment. We asked if we could come back and finish it. They said they would keep our bottle. We rushed back to our hotel (Marriott- 200m away for the call). When we returned at 11.58pm, they had already thrown our bottle away. Unbelievable! They were quick to receive our money but equally quick to throw our experience out the window. No doubt, we returned almost at closing times but throwing our wine before closing time - if you wanna go by the book, that is still not your closing time. When we raised our grievances to the staff, she said she told us about closing time at 12 midnight. However, we emphasised that she should have let us know about the takeaway policy and license. Had we known, we would not have ordered a bottle. She looked at us blankly and simply replied "feedback received, but we do not allow anyone in after 12, so you have to leave". Quite honestly, ChatGPT / Claude / Grok could have conveyed more empathy. I am not a VIP customer nor am I a high spender. That being said, I value places with a human connection and empathy, and would regularly visit such places with joy and happiness multiple times. This place is not one of them. For this reason, I will never visit again. If you think likewise, and value authenticity and a true Aussie welcome, you would not visit this place. I hate to give negative reviews but please spend your money elsewhere.
