We could see it off in the distance from the property. Apparently, the salt air, cool breeze, and limestone soil creates a microclimate that adds to (or enhances) certain grape ripening characteristics. This is especially good for cava making, as we learned the last time we visited the upper part of this region. What we didn't know was how it affected wine and vinegar. We were about to find out. We were greeted by Marco who gave us a very extensive tour of their wine making facilities. We learned so much from this. What made it even more interesting was the wine vinegar tasting part of it. I know most people are familiar with the old expression about turning wine to vinegar. But, it's really not that simple. We entered the oak barrel lined building where the aging process was taking place. This is where we sampled 4 different types of balsamic made from their chardonnay, merlot, and cabernet sauvignon wines. He also treated us to a sample of the 30 year Antigues Reserves which was my absolute favorite of the 4. It's definitely one to be put away for very special occasions due to its price tag. I later found out that many famous chefs use this brand for cooking. I can totally see why. So, I was even more blown away during our wine tasting and lunch experience. The restaurant is on-site in the middle of one of their vineyards. There's indoor and outdoor seating. As a group, we were seated at a large table indoors. I won't go into any more detail. I'll just say that we loved every single dish, as well as the great service. I was also quite surprised to find a Chardonnay that I actually love. I don't know. Maybe it really does have something to do with the type of barrel. Their wines are fermented in oak barrels from the Nevers region of France. I know I'll be looking for this in the future when shopping for wine. My only regret is that I didn't purchase anything that day. It's not readily available in the states. However, I did find the vinegar set online at a sustainable gourmet shop in Tacoma. I've been enjoying it as a vinaigrette, and will eventually use some of the online Avgvstvs Forvm recipes as a reference. There's so much I want to say. Why is it named after the Via Augusta? What happened to the vineyards in Europe during the Great French Wine Blight? You'll just have to read all about it (or take the tour). It was a beautiful and memorable day!!

Having said that, the wine we tasted was quite good as well. This is estate wine where all the grapes are from the vineyards that surround the castle. As these grapes are only found in Spain and the estate does not ship outside of the country, this tasting experience offers foreigners a unique opportunity to taste wines you will not find anywhere else but here. Nice! Being a bit of a wine snob I am always looking for opportunities like this and this and Oller del Mas definitely fit the bill, castle and all!! In addition, the wine is delicious, and uniquely and beautifully packaged. However, few people stay at the farm house when they visit and they are really missing out. The house itself has been thoughtfully and masterfully updated and modernized and has many comforts including some of the most comfortable mattresses I have ever slept on in Europe, high thread-count sheets and pillows, super-plush towels, and beautiful bathtubs. Every detail is in good taste, the house is kept immaculately clean, and the staff is lovely from the groundskeepers, to the host, to the cleaning ladies. Breakfast was delicious and offered local products, some of which they produced themselves. There is a beautiful, and very private, pool to take a dip in at any time. And after breakfast we fed the Iberian pigs on the property breakfast scraps which was a lot of fun. Both the location and the woman managing the property, Lory, made our trip to Catalonia and the Costa Brava. We had such a great time hanging out and Lory's recommendations were incredible. The beaches she suggested were the cleanest, least touristy, and most picturesque I've ever been to in the Mediterranean, and I've been to some incredible beaches. She made reservations for us at incredible restaurants, places that were small, used food from their own gardens and local artisans, and off-the-radar spots no visitor could ever find on their own. Again, she made our stay there our most favorite place in our month long trip across Spain and France. Lory alone makes staying at Bell-Lloc more than worth it. The ride was beautiful as we came closer to Montserrat, the basilica was phenomenal, the market was amazing. I ended up purchasing two delicious cheeses - goat and truffle. The walk to the cross was challenging as we had limited time but well worth it. It's an uphill climb. I loved the family history of the winery. The stability of the family to keep the property in the family for 36 generations since 964 was incredible. The vineyards were started in the 1800's. The ambience was perfect with stone cellars and towers. Great place for an event. Loved it! If you go to Barcelona, DON'T miss it!

They also use old-fashioned, traditional techniques of disgorgement when making wines. It's still done by true artisans, who expel the lees manually at the naturally cool temperatures of the cellars. What also makes their wines unique is the use of their grape juice (instead of using processed sugar) during the fermentation process. Recaredo's long-aged sparkling wines spend a minimum of 2.5 to 20 years in their dark cellars and are only aged with natural cork stoppers. We started the day with a windsurfing lesson on the Mediterranean Sea. On the drive there, Antoine described the Sitges area--its history and culture. He is exceptionally knowledgeable and pointed out all the major things visitors should know, along with great recommendations for things to do. What really set Antoine apart, though, were the little things he did throughout the day. After our windsurfing lesson, the sand was unbelievably hot! I was stranded, standing on my sail to avoid burning my feet, and Antoine ran over, grabbed my sail, and helped me off the beach. It was such a minor effort, but it perfectly reflected how attentive he is. For lunch, he took us to an amazing local restaurant and patiently walked us through the menu, explaining the dishes. Later, when we decided to relax on the beach, he even arranged towels and an umbrella for us to borrow since we hadn't brought any. Again, it was those thoughtful touches that made the experience so memorable. Antoine was simply fantastic with my 15-year-old son, engaging him with ease and making us feel like he wanted to be there with us throughout the day.
