Because we previously had one of their beers and were in the area, we decided to go out and check out this brewery in southern Belgium.
We walked through the arch entrance and were greeted by Martin, one of the brewers.
He was very friendly and gave us a great tour of the brewery, along with a tasting in this very medieval tasting room.
He not only explained the brewing process and what he uses in the recipes, but also the history of the brewery. Because the demand in the late 1960s was for lagers and pils styles beers, Brasserie stopped brewing in 1969. In 2004, the family run brewery decided to restart brewing.
The saison we sampled was brewed with elder flowers - it was fantastic.
