I googled where to buy it fresh and found Vic's meats. Vic's meats has a history going back to 1996 starting in Oxford st Darlinghurst. They have a "Market day" on Saturdays from 8am- 12pm. That's 4 hours to get your mits on some Top of the top quality meats at reduced prices. They supply to Level 41 Restaurant if you need a resume it back it up Noted selections included Grain fed T-bone. There was only one left by the time I got there at 11am. Wagyu.... Master. Kobe. 9BMS. What what? That's right. At the special price of $69.95 a kilo, and before you baulk, it's usually $110. Meat lollies! Wagyu burger patties, Wagyu Chorizo sausages, Wagyu Bresaola. Tomahawk. Fancy yourself a Viking feast? It can be yours for about 50 rods. If size does matter, impress the family at the Xmas BBQ with your cave woman sized Beef with full length rib bone in. Berkshire pork. Pork Belly, American Pork Ribs.. I mean Flintstone size again.. The Butchers themselves are in house and can give you advice and cut meat to your personal request. It is unique to butcher shops with windows and Kogarah Best meats has a big one. It's a Chinese butchery that does just about anything*. Pork hocks.. the short ones. Pork knuckle. Try and find them anywhere! Kogarah Best has them and Pigs trotters. I love it of course because Pork seems to be their thing. I recently asked for marrow bone for my culinary pursuits and the staff were so happy that I did. They'll cut anything up as you like it. Probably the busiest butchery in town and I've never seen them without half a dozen customers inside. Prices are low and reasonable. I just bought some lamb ribs for $2.99 kg. I'm about to go H.A.M in the kitchen on them. *didn't see wagyu here.

When I asked for a giant ribeye and held my hands about a foot apart, they didn't look at me like I had two heads, they asked for 24 hours and, realizing I was dreaming the impossible dream, provided me with 2 beautifully trimmed extra large steaks that worked just as well. When I pop in for skirt steak (once a fortnight on average), these gents happily go into the back and trim me up a few delicious cuts to get me through the coming weeks. My request for chicken livers was instantly and happily fulfilled (still haven't told Bdub those were in that pasta sauce...) And they do it all with a smile.

They sell a great range of meats at prices not that much higher than your average supermarket and their adjacent shop, AC Poultry, sells great chicken products including kievs, schnitzels, roast rolls, whole birds, interesting sausage combinations and pretty much any part of a bird you would want. The new house rule has been implemented. Sorry supermarkets, but there's no competing with AC for flavour, freshness and diversity.

Then I noticed the lamb was from Cowra (a place known for quality lamb) so I started picking a few things. T bones steaks, yes. Lamb leg and cutlets.. yes. Brisket, yes. Beef tendon- sure why not (needs further explanation - next time..). Scotch fillet, yes. What about pork scotch, why not? Pork roast, yes add it on. When I said it might be too much to carry, she offered help to carry to the car and convinced me to buy some chicken wings and breast fillets. So, from having a quick look to $280. But still great value. And they did get a dude from the back to help carry to the car. The biggest challenge was fitting it in the freezer when I got home. Definitely worth checking out for great value, quality and variety. Oh, they threw in some sausages for free and we're very unusual. First tine I had 'Chinese flavoured' sausages.

They have Black Angus cattle, calves, lambs, Inglewood Chicken, Sunforest Organic Turkeys, free-range pork as well as a range of organic products like organic pasta sauce. Their Mediterranean crumbed chicken schnitzel is the best I've ever eaten. The meat is understandable more than you'll find in the Coles across the mall but it really is worth it. My sister bought a supermarket schnitzel from their 'fresh' meat counter and it made us all feel slightly off - like you feel after a fast food purge. You just don't get that with the Naturally Organic Meats. Their number one supplier is "Strictly Organic" and are know in the industry for sourcing only the finest breeders of Australian Organic produce. Breeders include Mark & Kerry Foster of Ellesmere Beef Angus Cattle who have over 30 years of experience in the bio-organic farming. If you live in the Sydney Metropolitan area they will deliver for free if your order is over $100. All the meat is fresh - i.e. not frozen - and delivered in a chiller bag or foam box.

When I started shopping at Coles in Neutral Bay I did notice Naturally Organic Meat & Poultry. One week when I was feeling adventurous I thought I would give it a try. I bought a weeks worth of meat - two rissoles, five rosemary and mint sausages, lamb backstrap and two eye fillet steaks. The grand total came to $35! I couldn't believe such good value! The eye fillet steaks were the highlight of the week with the meat so tender it was melt in your mouth. Naturally Organic Meat & Poultry is now my go-to place for meat -never again Coles or Woolworths!

Been doing it for years and I always got the hams from my Golf club under the misapprehension that they were good value. Last Chrissy I did a bit of research (read 'bored at work') and I stumbled upon Sunshine Meats. The more I read the more I wanted one. These guys win every Ham competition they go in, but I hadn't seen them in SMH reviews that always come out just before Chrissy and usually just after I've ordered my hams. I now realise that those reviews only include 'bone in' hams presumably because of our customs and quarantine laws requiring any 'bone in' ham to be Australian. In other words 'boneless' pork can come from anywhere, even Canada ...or worse, Victoria! I decided on their Boneless Double Smoked Maple Infused ham. The pork is sourced from Australian producers, it won Best Artisan Ham in 2014 and 2015. It was sensational. Being boneless it was so easy to carve, but it was still moist and had a delicious smokey flavour. It came with a quality calico ham bag and a really nice Chrissy flower thingy that looked like Holly but was instead a little wreath of lemon myrtle ...I think? You should check out the website and see if you can justify getting a ham outside the Chrissy hols. I am seriously thinking about getting another one. They do all sorts of smallgood stuff (even though my ham was huge) and they deliver for free, which is important because they are in Milperra. Come to think of it, why is it called 'smallgoods' when most of the stuff is big? Anyway this place is just brilliant.
