This spot is a MUST for everyone visiting Waco. I'm from Houston... and this was hands down the BEST CAJUN FOOD I have ever had. Cajun Craft was amazing, and I am honestly jealous that we don't have a comparable spot in Houston. (Plus, I just loved the look and vibe of this place as well. It was home-y clean and the service was fantastic). What we had: Boudin Balls - which came out super hot and fresh (perfect amount of fry) and had this amazing dipping sauce on the side. New Orleans Trio (which included Gumbo, Crawfish Etouffee, Red Beans and Rice) - Great deal bringing these three items together for 1 entree. All three were top notch. Jalapeno Cornbread - Were also fantastic, I could not get enough (and I don't typically even like cornbread all that much) Beignets - The perfect way to end the meal. Yelp led me to this Cajun restaurant while passing through Waco. It is in its own building with parking spots available around the building. Cajun Craft is a counter service restaurant with 2 indoor dining areas and outside seating too. I ordered the Trio ($22) which is a sampling of three of their gumbo type meals that are served in bowls. It consisted of a chicken and sausage gumbo with rice, crawfish etouffe' with rice and red beans and rice. The meal arrived about 10 minutes after ordering. The gumbo had plenty of content in it and was good taste wise that I graded at a 3.5. The crawfish etouffe' had a deliciously smooth flavor that I rated at a 4 and the red beans and rice had a nice smokey aroma and taste that I gave a 4.5. I liked all 3 bowls and together gave me a satisfying meal. One oddity was that the 3 bowls came with 2 small slices of french bread and 2 crackers (like saltines) but flavored that Cajun Craft call firecrackers. Actually they were quite tasty and I liked them but only 2 crackers with 3 bowls of food? With an iced tea and tax this meal came to $27 which is a little expensive for Waco. I talked to one of the owners and he is well versed with Cajun cuisine. This is a good place to eat. read more

Everything was delicious and I know that because I not only ate my catfish and fries w/ hush puppies. I also had the boudin balls and cajun corn. Some of the better food I've had in Waco. The place is small but the food and service is amazing. I had the shrimp po boy with Cajun fries and I could not have been more satisfied. Every time I work in Waco I come to Cajun craft because they don't have good Cajun food where I'm from. I usually get the Catfish Atchaflaya cause that's what got me hooked but tonight I got the red beans and rice and it SMACKED. Last week I got their fried chicken lunch special and that was killer to. Authentic southern fried chicken! Crackly, crunchy yet light batter encases each piece of chicken and fried to perfection. Piping hot and very moist (even the breast). It transported me back to my trips to Atlanta and Louisiana. The tenders very also moist and juicy. The fried okra and mashed potatoes w/ boudin gravy were paired perfectly. The gentleman ordering next to me said the etouffes are some of the best...so good that it's the only dish he and his family orders here (for the last 6 years) and I think he was right as we saw a lot of etouffe coming out of the kitchen.
