    El mejor! If you think about paellas, there are so many restaurants that could cater to that. We're rice-loving folk and probably one of the best Spanish contributions in our culture is the paella! Calderon is just one of the best in the Metro! One of four restaurants along F. Calderon Street, Calderon is the last restaurant along the street huddled with the likes of Tori Box, Le Creperie and 67 Nathan Pub. When we ate there, it was already our third attempt to try and squeeze in the many folk who would like their taste of Calderon's paellas and tapas. The place is very small like the other three restaurants in F. Calderon. The place gets easily full especially during peak hours. Their menu is in Spanish so it was good practise for someone like me who's learning how to be fluent in it. For those who aren't well-versed in the language, don't worry. They have descriptions below each menu item. We ordered Paella Negra in pequeña (small, P780), Salpicao (P450), Bandeja de Jamón, Chorizo Y Quezo (P620) and Lengua Con Setas (P580). I think our friends and I agreed about how much we love their food. From their paella specialty, to their tapas and especialidades. During the night we dined at Calderon, there was an acoustic set for the guests. It was very intimate because the space wasn't that big. It wasn't too in your face either. It blended so well with the Spanish interiors and ambience of the place. If I ever needed another dish of Paella Negra, I would most certainly come back! Porque necesito en mi vidaaaa!

    Calderon is a quaint restaurant off on one of the sidestreets of Wilson Street in Greenhills. They serve really delicious Spanish food. On some nights, there's even live music. It's a great place to come with a group of friends or with family and bond over paella, tapas and sangria. We've tried different kinds of paellas - my favorite being Paella Negra or the squid ink paella. If you're on your first date, you might want to try the Paella Valenciana (chicken, seafood and veggies). Paella Negra can make you look like a zombie what with your black teeth and all. Both are really flavorful and are especially good when very hot. We've also tried different kinds of tapas, the notable ones being salpicao, gambas al ajillo, calamares, croquetas, and jamon, chorizo y queso or ham, chorizo and cheese. You won't be disappointed. It's a small place so they are almost often booked solid though the night. I advise against walking in unless you come early like around 5:30 - 6:00 pm.

    Fantastic paella. Great service. Owner was very accommodating. Very cozy ambiance. Will definitely come back.

It looked like a bricked house and once you've settled in a table, you'd feel like you're really in Spain. The music and ambiance really suite the whole theme. And don't get me started with the food! We ordered different things for the family to try and I must say that the food was good! We ordered the Paella Valenciana which is the flavor/variant we all know of. We also ordered the Caldo Gallego which was a hearty soup composed of beef, chicken, beans, vegetables and Spanish chorizo. We had the Salpicao, Croquetas and Bacalao ala Vizcaina (cod in tomato sauce). All of those dishes were really good! To end the meal, we ordered Sangria and partnered it with Bandeja de Jamon, Chorizo Y Quezo which was a platter of cold cuts, hams and cheese. The restaurant definitely captured the taste of Spain. I found it to be a great place to be with a big group or even just a one on one intimate dinner. The vibe for me was great. My overall experience in Calderon was pleasant! Honestly though we weren't expecting that much since it was only a neighborhood joint and we suspected would not offer Spanish dishes quite as authentic and fresh as those we've had in more expensive restaurants, but boy were we wrong. Calderon is fantastic. Their flavors was bold and their dishes though made with simple ingredients really pack a punch. The place is cozy and warm, the décor classic and earthy. The food offered is classic Spanish and we ordered salpicao, paella, gambas, and croquettas, all staple Spanish food. I was blown away by how tasty and great everything was. The tapas options are killer. I could honestly go home with a pot filled with their salpicao and just gorge on that and rice for a week. The ultimate test (at least for my mom) was their paella and it did not disappoint it was flavorful, salty, packed with meat and veggies. Calderon is certainly a must-try!

I was honored to be invited in their tasting event. The restaurant's ambiance looked like modern art and you will have a feeling of eating at a museum, very elegant. The creative talents of Chef Chele can be tasted by patrons, especially those who wants to experience something different, something contemporary. The Tapas Bar serves more than just authentic tapas, but delicious French-style cuisines as well. We started the tasting event with cold tapas: Crab Hollandaise Pintxo, Tomato and Ricotta Salad, and Cochinillo Tacos. Each offers a different flavor and texture, but what stood out was the salad because of the fresh and sweet tomato in balsamic reduction, plus the fun feeling of the tapioca pearls. We then moved to having hot tapas: Txipirones Croquettas, 62 degrees Egg and Foie Gras, and Vieras Gratinada. I love the croquettas. It is black-colored because it is made with squid ink. The texture of the croquette is mellow. The 62 degree egg on the other hand, was cooked perfectly, enough to wet its mashed potato companion. The foie gras was a little small for its portion though. Main courses include Rabo Al Vino Tinto, Chicken and Chorizo, and Lamb and Vanilla. Rabo Al Vino Tinto or braised oxtail with rustic potatoes is very close to the chef's heart because it is inspired by his family's cooking. The lamb was the juiciest I have tried yet sinful too. My favorite would be the chicken and chorizo because of its tenderness, flavor, and that bacon mashed potato! For dessert, we had Deconstructed Carrot Cake, Tarta de Calamansi, Watermelon Sangria, and Chocolate Brownie. The Chocolate Brownie was the star as the chef pours chocolate syrup over the cake, its walls melted and different textures of chocolates appear: chocolate mousse, chocolate cotton candy, chocolate brownie, and dark chocolate syrup. A dish not only entertains but also gives a rich and fruitful evening. Chef Chele is a genius in the kitchen, and although it was my first time to visit his restaurant, I am pretty sure it won't be my last.

On entering the restaurant, one cannot but notice the well-appointed red tablecloth tables with cloth napkins. The dishes at our disposal were many. They were Gambas (shrimp) in garlic and oil, potato croquettes, Spanish sausage, baked oysters, mushrooms, crostini with dip, chicken, spinach pizza and of course, seafood paella. My favorites were the croquettes, the baked oysters and the seafood paella. The croquettes were crisp on the outside and soft on the inside. The oysters though small, came 12 to a plate and were moist and well charred to bring out the baked parmesan fragrance. The seafood paella was the crown jewel of the evening. It contained several seafood varieties and was made fresh. It came out slightly charred at the bottom, as does any good paella.
