    The food and service were exceptional! The complimentary charro beans were a pleasant surprise as well. I ordered Caro's Special #4. The serving size was plentiful for the price, but what really hit this one out of the park was the flavor. The enchilada was above average, the chicken was flavorful and tender, but the STEAK was exceptional. It was cooked to a perfect medium as I requested, tender, juicy, and rich in flavor. Our server was phenomenal, attentive, quick, and in many cases predicted our needs before we even had to ask. I believe her name was Ashley or Amanda. I'd definitely stop again if in the area.

    Food was yummy! Everything from the sweet tea, the chips and salsa to the puffy tacos was delicious. Service was quick and place looked clean.

    We drove over two hours from South Padre Island to eat at Caro's because we ate at the Caros in Fort Worth Texas numerous times. Unfortunately the Ftw location closed due to bad Mgt. We drove to Rio Grande City today to close our chapter on one last meal from the original Caro's. I can honestly say that today's lunch was so much better than the old Ftw location. I want to say thank you to C.J our waiter who made our visit worthwhile and also thank you to Martha who started working at Caro's in 1987 and has worked there ever since. Martha was so kind and gave us the history of the Caro family in Rio Grande City. I only wish that C.J could move to Fort Worth and open Caro's and run it like the Rio Grande City location.

    Caro's an RGC restaurant with a lot of history. A staple place to get Lunch and or Dinner. It's a great place to find Tex Mex food in Ri During my previous visit. A family friend of ours had just passed by the town, so we invited them over for dinner here. We ordered, of course, two Botana plates and the Pancho platter which feed more of us as expected. The meat was cooked fair as well as the appetizer. My previous experiences here have always been similar but the food has good down just a tad. When I was younger, growing up when we had visitors t was a place we would take them out to eat. But as the years go by, the restaurant began to slow down. It once was in a small cozy spot right in front of its location today, which made it seem almost always crowded. Please visit if I'm ever in town and you would love to know more about the small history of the City and its folk!

    This was a gem of a place. The salsa and chips a unique. I highly recommend the puffed tacos, unlike anything I've ever had and the price was good for the amount of food.

    One of the most perfect examples of Tex-Mex in the valley. And if you ask me one of the last of the original tex-mex locations around. From the incredibly cheesy enchiladas to the awesome puffy tacos and puffy chalupas (I'm not sure but I think these puffy tacos predate all the ones in San Antonio). I think this statement,while controversial, is true. Caro's has been around for over 50-60 years. In all that time the puffy tacos, puffed tostadas and puffy chalupas have been on the menu. Any how, back to my review. I will be upfront and let you all know I will be a tad biased in this review. You see I grew up eating at this place all my life. Having grown up in the area I remember going to Caro's on special occasions to celebrate birthdays or other milestones so nostalgia has tainted my view a bit. Onto to the food. I recommend two dishes to all those who visit. First the Chef's Special which has an enchilada, a chalupa and a puffy taco. It's a big enough plate to satisfy just about anyone. The enchilada is a cheese enchilada. Homemade enchilada sauce. Spicy, smoked cumin forward in taste and earthiness. Great sauce! The cheese that Caro's uses in their enchiladas is not your typical yellow American cheese. It's a cheddar cheese blend that melts perfectly and adds the nice cheddar flavor that compliments the sauce in a way regular American cheese can't. The puffy chalupa and puffy taco come in your choice of ground beef or shredded stewed chicken. I prefer the ground beef. It's not dried out ground beef. It is moist and flavorful. Again it's spiced with cumin, garlic and onion. The shredded chicken is in a very nice tomato based liquid. Either way you can't go wrong. You get to try a trifecta of flavors in one plate. The rice and beans are great. Charro beans especially are winners. Not the best charros you've ever heard but homemade and comforting. The way charro beams are supposed to be. The other dish I recommend is the Caro's Special #3. It has everything in the chef's special but adds an envuelto. An envuelto is basically an enchilada without the sauce and cheese. So not an enchilada lol. It's a filled corn tortilla(again beef or chicken) topped with lettuce and tomato and shredded cheese. You might say isn't that a taco. And you would be wrong. It's not a taco it's an envuelto. Get it. It's good. Don't be afraid to be disappointed. If you are disappointed then blame someone else because I don't care. Think that's a lot for you all to get started. I will say one negative about Caro's. Might get slammed for not disclosing it sooner but it's a true honest complaint. And it's a big one. Caro's is consistently inconsistent. Some days the food is superb and the quality and freshness is apparent. Other times you can tell that the food has been sitting out a touch too long. maybe i should actually give Caro's 3 stars maybe even 2 but i feel that on its good days it's one of the best, unique Tex-mex restaurants around. Those days merit 4 stars.

    Good local food. Their puffy tacos are good which is unique. steak is also really good. No complaints. Service was eh. Legit Mexican spot.

    Drove from Ft Worth to Rio Grande City for puffy tostados and tacos and enchiladas. It is that good.

    It's good, not great Mexican food but good enough if you want to sit down in a cultural place and eat puffed tortillas.

    It was more of a Tex Mex restaurant. They are really known for their puffed tacos which I really recommend.
