Even so, every dish was exceptional. The flavors were beautifully balanced, and the sauces in particular were extraordinary. The beef was so tender and perfectly cooked and the quenelle, chef signature dish was to die for. The deserts were equally superb but the stand out was the rhubarb based one. The red burgundy ( Cote de Beaune)was so well picked by the young professional sommelier: Monthelie 1 cru "Les clous" 2020. On the nose ,violets and pepper. Au palais, this dark-fruited wine showed a good balance of tannin and acidity. Juicy red cherry and plum notes linger in the finish. One of our best meals in France . We can't wait to come back !!!
