Overall, we had a decent dining experience at Chan. Chan offers Korean fusion dishes, most of which we enjoyed. They also participate in the Resy network, which was the main reason we chose this restaurant. We had a reservation which helped avoid any wait, as they were quite busy on a weekday evening. Service at the restaurant left a bit to be desired though, as the server spoke so softly as if he didn't want to be heard, and the restaurant does not pace the dishes at all -- everything just comes out all at once and no attempt was made to help us find/make room on the table. There were a couple of dishes that we particularly enjoyed, but also a few misses. The chicken wings were alright, but nothing mind blowing. The crispy rice salad was terrible - description indicated usage of napa cabbage, but we definitely got iceberg lettuce. The overall dish was also disappointing for $18 - there were like maybe 2 pieces of avocado and tomato. We enjoyed the duck sot bap, but the duck was a bit overcooked and there was no crispy rice at the bottom of the pot, which was disappointing. Steak tartare was also fine, but not standout worthy either. The drinks generally were mediocre -- some tasted fine, but others lacked the noted flavors per the menu. On the other hand, the roasted cauliflower was well flavored and tasty. The beef cheek ragu was also a standout, and was like a korean version of ragu gnocchi. The wagyu colulotte ssam was very flavorful and tasty and we really enjoyed the meat, but it was a very loose representation of ssam and the thick cut of the meat made it difficult to eat in true ssam style. As other reviews may have noted, the restaurant does not have their own restrooms, you have to ask a staff member for a hotel key card, take the elevator to the 2nd floor and then access hotel restrooms there (key card swipe needed for both the restroom door and elevator), which was a bit of a hassle. It also wasn't communicated to us by any staff member and they only tell you this upon request. The hotel also had one broken elevator, so only one elevator was usable. All in all, Chan was not a bad restaurant, but I probably would not come back nor recommend it. The price point and service were not up to par, and they charge a 3% fee for cc processing.

Visited here for restaurant week and got app, entree, and a dessert for $50! The highlight was the rice dish and the salmon appetizer! Wonderful Korean fusion food and great service

Amazing fusion food and favorites were the cauliflower and rice cake with beef cheek ragu! The detail and variety in ingredients that go in each dish mesh very well. The place is cozy and service is amazing. Food came out super fast within like 10 minutes!

Outstanding taste rooted in Asian flavors, and modernized. Excellent choice to celebrate an anniversary or special occasion. We were greeted warmly by our host, Steven, and seated earlier than our reservation. He and his colleagues was attentive and hospitable through the meal. The steak tartare was excellent with the sweetness of Asian pear paired with the earthiness of beef. The black cod sauce was addicting and balanced between sweet and savory, and the cod was flaky. The hanger steak ssam was blended at the table and had great richness and body with the beef. The sharpness from the cod sauce helped even out the buttery rice. The ginger crème brûlée was unique. The crème delivered the ginger in a bold, but not overpowering way. The caramel sauce and ice cream cooperated with all the flavor. Not too sweet It has been a long time since experiencing an "elevated" Asian meal as corny as it sounds. If you're into internet memes, then the charge is having a succulent Korean meal. Possible improvements: standard size plates instead of tapas style small plates (though I understand heir intent was for family style sharing). Additional table linen or plates to place your utensils because a small plate can't hold a fork, spoon, and chopsticks while you take portions from the main dishes. Conjoined to the paramount hotel, not sure what the parking situation is like since we arrived via light rail. Definitely would recommend if you're in the area.

I went during Seattle Restaurant Week. I got the bone marrow, pork jowl, and basque cheesecake which was $50 pre-tax during SRW. On the regular menu, if you get all of those individually, it adds up $10-15 more so it's a great value and time to try during SRW. In terms of food quality, the bone marrow was way too oily and the sourdough it came with was quite hard. The pork jowl and basque cheesecake were tasty and great though. I also got to try my friend's short ribs which was delicious! It was tender and the pumpkin with the cashew was a good combo. The service was pretty good. They served the main dish pretty soon after the appetizer. The back of the restaurant is pretty loud, so my friend and I asked to move to a quieter space in the middle soon after they sat us in the back. Recommend doing a reservation like we did.

I ordered the chicken wings, brussel sprouts, beef brisket spicy rice cakes, and the pork jowls. All of them came out really quick and were great. The sprouts came near the end of the meal, which was surprising so I hope that was just a one off situation. The service was extremely attentive and asked how was the food, double checked if everything was alright. The place was starting to get packed for dinner service so it was understandable if they got sidetracked. The ambiance is really nice as it would be great for a nice small dinner or a date night. It is going to be hard to hear the other person since the place is small, I couldn't hear the person across from me. I highly recommend this place!

We stopped by Chan right before a show at the Paramount and were able to snag a table without a reservation since my husband and I arrived fairly early. Service was good throughout the meal, and we enjoyed trying a variety of dishes. The K-fried chicken wings came with a chili caramel glaze, peanuts, scallions, and pickled radish. They were flavorful, though the portion felt a bit small for the price. The beef cheek ragù rice cakes were my favorite dish of the night. Rich, comforting, and well prepared, though they could have used a touch more salt to really make the flavors pop. We also ordered the sot bap with grilled black angus hanger steak, cured egg yolk, scallions, crispy shallots, sesame oil, and butter, which was hearty and satisfying. One thing to note: accessing the restroom is a bit of a process. You'll need to ask a staff member for a keycard, take the elevator up one level using the card for access, and then use the keycard again to enter the restroom. Lastly, for anyone with Resy dining credits through their credit card, Chan uses Resy. We were pleasantly surprised to see a statement credit post after our meal, which was a nice bonus.

Great experience at this restaurant, service was excellent, easy reservations thru Resy and very close to the Paramount theater. We had their brussel sprouts and the appetizer is fantastic, there is a yummy sauce at the bottom so dig deep in the bowl. We also had the two person Sot Bap with steak and the fresh flavors were great. They also bring some mix-ins like kimchi, gochujang sauce, seaweed and something else that was yummy and crunchy. We didn't try this cocktails, but they had some very creative choices. We can recommend the creme brulee for dessert. It's definitely going to be a favorite spot for theater evenings.

I'd actually give this place a 4.5 if I could--mainly because the desserts weren't spectacular and the restaurant felt a bit chilly--but otherwise we loved everything from start to finish. The cocktails were delicious. All the small plates were great, especially the Brussels sprouts and beef sliders. The cauliflower dish was also unique, flavorful, and delicious. Our table also enjoyed the beef brisket spicy rice cakes--tangy, sweet, and spicy. I personally would've preferred them a little less sweet, but they were still very good. The standout dish was definitely the grilled steak Sot Bop , which comes out in a cast-iron pot and serves two or more. And the best part: it's right across from the Paramount Theatre, with plenty of space, making it a perfect spot for dinner before a show.

Visited for Seattle Restaurant Week and can't say I came out very impressed. For a higher-end modern Korean restaurant, they failed to deliver. Our waitress, Anna, was very sweet though! They cook their duck very well but the food was overwhelmingly bland and the dessert took an hour to come out. I'm disappointed after having a long-time interest in visiting. Maybe they're usually better outside of SRW, but I'm discouraged from spending the money to visit again.

Not bad. Chan is located inside the hotel. I made reservations ahead of time and noticed the restaurant wasn't too packed. I got seated by the high tops by the kitchen counter. I got to observe the cooks working. I already knew what I wanted to order. I got the beef brisket spicy rice cakes $18 -- this was the main reason why I decided to eat here because the pics online looked too appealing. Khrystyna was a great server. She recommended the Passport to paradise drink $16 -- and it was a great rec for sure! The brisket spicy rice cakes had a nice spice kick and the rice cakes were HUGE!! I had to cut it up a bit so it would be easier to eat. The dish was flavorful. The egg was cooked perfectly. Ambiance is chill. I would come back to try a different dish next time.

The dol sot bowl and the brussel sprouts (and I usually never go for veggie plates lol) was the best here. the flavor of the brussel sprout was incredible, I was dipping all my food into the sauces of that bowl. however the ramen was by far the worst ramen i've ever tasted, anywhere. I get we're doing fusion here but it doesn't hit the mark for any dimension of grading. absolutely disliked that one. everything else was decent, and service is super nice. i'd say for price point and this being a $$$ place, i'd never recommend it since the restaurant interior / food x price, doesn't impress in fact it's barely meeting the bar overall. people working here are great though no complaints there.

We came here during Seattle restaurant week and it was overall pretty good! The Seattle restaurant week deal is amazing and if you have the Amex plat or gold, you can get Resy credit here. The inside if the restaurant is sleek, modern, and upscale. I like that the lighting was dim and music choice was on point! Service was friendly and fast. We ordered: Tuna tartare: 5/5 Soy cured creme salmon: 5/5 American wagyu coulotte SSAM: 3/5 (Unimpressed by the cook of the meat) Smoked duck sot bap: 5/5 Black sesame basque cheesecake: 2/5 (Not enough black sesame flavor)

I'll go out for a quality cocktail experience at Needle & Thread, The Doctor's Office, or maybe the Red Onion, lol. But I won't be coming back here ever again.

My favorite was the tart au citron-- it was sweet and tart and a perfect cocktail! My friend really loved the espresso martini-- I had a sip and it's probably one of the best in the city. Definitely worth a try and will be what we get again next time we come again!

I told him I'm a big fan of an Old Fashioned, and he suggested an Eagle Rare Old Fashioned. It was, without question, one of the best Old Fashioneds I've ever had at any establishment. The balance of flavors was outstanding, and the attention to detail was obvious from the first sip. I was so impressed by both the drink and the overall experience that I asked him how he made it and what ingredients he used so I could try to recreate it at home. While I'm probably only 90% of the way there, I'll never quite match the perfection he achieved that evening. The atmosphere, service, and cocktails were all exceptional.
