This staff member (the same guy every weekend) is always so cheerful and friendly. It gets interesting once you come inside. You would almost feel guilty if you walked away depending on how many sausages you have tried. Their cooked gourmet sausages is a great hook to come inside. Truly divine. More like a deli instead of a butchery of gourmet meats. The staff are so energetic (full of protein literally) and I always (without fail) order two parmas that just need to be whacked into the microwave for a few minutes, and they are just a meal in itself for me on those respective two nights a week I am not in the mood to cook. One my brief visit I noticed lots of the trendy foods - coconut sugar, cocoa nibs, mesquite powder, hemp and many more to pimp your green smoothie or raw foodie creation. There's plenty of cooking ingredients too -- flours, grains, pulses and pastas. Up the back there's oils including olive, macadamia, cold pressed sesame (I'll be all over this next time) and raw coconut oil. And pay a visit to the corner of chocolate goodness, they have carob and couverture to name a few, and there's plenty of fruit covered options so it's healthy right? Just about everything on the premises is worthwhile, but you can't leave without trying some sort of cheese from the extensive local and imported selection. The tasting plates are wonderful and make sure you've been briefed on the specials before making any decisions. Some of the best dishes are the four-cheese leek and sweet potato ravioli, and the Angus Steak sandwich. Cornelius also has an alcohol license so ask Matt for recommendations with your meal, or for a special occasion. Just taking the time to have a look at the imported and local produce is worthwhile stopping off. You'll be exposed to some of the best cheese and wine around.

Dark chocolate, milk chocolate, ginger, hazelnut, peanuts, coffee - it's all here. My favourites? The milk chocolate orange tablet, or the premium dark chocolate tablet. Divine. Expect great service, the sales assistants are fantastic and helpful. If you can't make up your mind or just need some great advice make sure you catch their eye. All the varieties they have recommended to me or my family have been winners. If you are after a gift consider getting one of the selections that come in various sizes. There are ones devoted to particular types of chocolate, or enormous ones that have samples of almost every flavour. A word of warning: avoid at Easter or close to Christmas. Don't even try unless it is within the first hour of opening.

I don't mean that they simply pour their own chocolate in the molds or package it themselves... but that they manage the entire production process from the very beginning. From the raw cacao bean right through to the samples handed out by their staff. I've always admired their dedication to this entire process, one of the few Australian companies to do so. I also like that they go for classic flavours and don't do anything too "out there" when it comes to flavourings and fillings. Sure, interesting flavours are great - but Haigh's does classic chocolate excellently and for that I respect them highly.
