Wife N and I are in town for a week's getaway from our Portland Oregon home. We ate at Chimney Park a few years back when we last visited, and couldn't wait to eat here again. Hopped in with Thursday night reservations, and we were seated within a few minutes. The menu is as fantastic looking as we remember. Pretty much, this is one of those places you go when you want to eat a bougie dinner. Oh, and the cocktails! Wife N. started with the Woo Girl a lovely off-fizzy gin-based hibiscus drink. Delightful. I went with an Old Fashioned. They have three different Old Fashioned choices (I've had all, and all are stellar) but tonight I went with the "With a Twist" which adds in some unique pineapple and vanilla notes. Fabulous! The apps arrived. We started with the Fois Gras Terrine--pretty much you can't go wrong with Fois Gras and Chimney park gussied it up with marinated apricots, pistachios, and what turned out to be the most delightful edible flowers (the purple poofy one looked like a garlic flower and had a light garlicy taste which, with the Fois was a bite of heaven---many folks think flowers are just garnish but don't shy away from trying a bite or you'll miss out! The only drawback was we ran out of the (two) toast points a third the way through the terrine. No big deal, we just spread it on their wonderful table bread. Bison tartare. Perfect egg yolk on top and a lovely dijon cream, served with housemade potato chips. Best tartare in recent memory. Next, the lobster bisque which we mentioned we were sharing. It arrived split into two perfect servings, with bisque poured tableside. Chunks of fresh lobster swimming in a delightfully tasty bisque with just a bit of spicy heat to it. I think if there was only one thing I was allowed to eat for the rest of my life, it would be this dish. On to the mains. She had the pan roasted Chilean sea bass. Flawlessly cooked and glistening, on a bed of pea risotto and adorned with pea shoots, most excellent. I had the mushroom-crusted New England scallops. Five #12 scallops, perfectly seared, on a bed of black rice, served with morels, bok choi and a couple black truffle shavings with a beurre blanc. This was a delicious umami bomb. Everything on the plate had a reason for being there and, on the off-chance I managed to get all the elements in a single bite it was a bite of heaven. Stuffed to the gills, we could only take home a dessert. So the flourless chocolate torte made its way into a to-go box and we had it back at the hotel room. Everything you'd expect a delicious wrap-up to be. Second visit in two years, and the quality of service and food was consistent across both visits. We're Chimney Park fans, and will be back any time we're back in the area. Wouldn't miss it for the world. read more

The food has always been michelin quality. Then Jason remodeled to an even more upscale unique interior. I am grieving the loss of this fine eating establishment due to the fire. Recently gifted the opportunity to experience the Chef's tasting menu dated March 12, 2024, which was terrific in all aspects of dining. Be sure to include the wine pairing; more on that below. I go for foie gras whenever possible, and this was the best yet, nicely crisp on the outside and perfectly delicate inside. The cauliflower artichoke bisque was a deliciously shocking surprise, and the Japanese wagyu was melt-in-your-mouth perfection. (Eye roll perfection) Service...THE service was excellent, with friendly communication, timeliness, and professionalism. The Sommelier is a smooth operator. There was a balance between taking time to clearly explain the thoughtful and tasty pairings and making a personal connection while not taking up too much of the dining experience. (I have some stories where this wasn't the case, haha, funny not funny) It's not a time where I would take food pics or selfies (trust me, I usually do), so you have to trust me when I say that plate presentations were clean and enticing. Another fantastic evening at Chimney Park. Our server, Alexa, is always wonderful. She knows the menu well and is friendly and professional. As usual, the octopus appetizer is a must-have! I had the Chilean Sea Bass which was perfectly cooked and served with a snap pea risotto and roasted peppers. This is one of the best meals I've ever had. The generous serving of mushroom-crusted sea scallops with vegetables were also perfect. My friends ordered the gnudi, lobster bisque and a couple of salads. I tasted everything ( we share food!) and we loved it all. It's difficult to not fill up on the excellent bread and butter. But, you should try! I like nice restaurants and I like good food and I can be a little picky on both. I have to say this is probably the nicest restaurant I have ever been to and only the second chef's tasting I've ever done. We were out to celebrate my partner's new job and I really wanted to do something special. I had looked on Reddit for fine dining places in the FC area and people spoke really highly of this place. I remember one person saying that it was worth saving up a year to go here then go to another place a couple times a year. We were able to get a reservation about 4 days out and I did call to inquire about the attire. The person answered the phone said that jeans and a nice top were fine. I think on their website they say no ball caps. The vibe was exactly what we were looking for... It was quiet, romantic, and had an elegant and chill feel about it. We did both the chef's tasting and the wine pairing and between the food and the overall experience, we had an amazing time. I recommend it to anyone that is looking to celebrate a special occasion. read more

Located on Main Street in Windsor we found it a very quaint place you would really enjoy taking your favorite people to. Have to say, my wife and I were pleasantly surprised. We had Steak, lobster bisque, bison tar-tar, Sea Bass and wine that was to died for...also with an intimate atmosphere, quality and not to frufru, it was perfect for welcoming us here from Tennessee and our new home! Fantastic fine dining in Windsor, CO!!! If I could give 10 stars to Chimney Park, I would without hesitation! Initially, I came through 3 years ago, when I was working in Greeley, CO. Although I was only working for about 2 weeks, I came here at least 3 times, and brought my husband to enjoy their restuarant. This past summer I've been working in Fort Collins, CO, which, by it's own right has some great restaurants, but somehow I'm always drawn back to Chimney Park. Is it the phenomenal customer service? Is it the comprehensive wine list? is the consistent food menu? It is all of the above and more. I'm usually dining solo, so I opt for the bar area - and honestly, it holds the best seats in the house. You get to see all the action, although I kind of wish they had an open kitchen... But the staff interact well with each other, I see all the food passing by and watch the bartenders make delicious concoctions. On recent visits, I've had the pleasure of interacting with Chris (bartender), Ryan (wine specialist/sommolier), Kim (front of the house), among others who I didn't catch their names. You will not have a better more fluid team of staff. As for the food, I have never been dissappointed. They always give you a bite from the chef (a little something to wet your palate and lay the groundwork of what's to come). Yesterday, it was a hamachi ceviche with tobiko creme fresh, a delicate bite of fantastic flavors. Their house bread is also served with butter and some sea salt. Generally, I tend to opt for their rib-eye or bison, but I have had the duck breast in the past, which was done really well! I think you will find you cannot go wrong with any dishes from Chimney Park, from the appetizers/shareables to the desserts. Fantastic visit the other night. We were staying in Loveland and figured we'd drive a bit to get dinner. Wow. Totally unexpected--great service and food. Started with cocktails and the ode to lavender was great. Really well balanced and complex. We did the tasting menu with supplements. They asked us early on how to pace with the cocktails which was very nice and overall the pacing was really nice. Not too fast and not too slow. The amuse bouche of crab salad was very tasty. The ahi crudo was also great. The foie gras was good but the wagyu was outstanding. Cooked perfectly. Haven't had better. While the hanger steak was good, the morel bread pudding was amazing. The somm also did a great job with interesting wines along the way which all paired beautifully. We arent in Loveland all that much but we will be back! read more

We had dinner there last night. Our waiter was phenomenal. He was knowledgeable about the food and very attentive. We would give 5 stars for service. They also had a very nice room set up for us. But, the food was not very good. The crab cakes were good because they had a lot of crab in them. But, the crab cakes did not have much flavor. The lobster bisque was flavorful. But, the soup was served just a little warm. It would have been better if hot soup. Portion size of soup was small. Three of us ordered the special ($64). The scallops were nicely cooked. But, the steak was full of gristle and we had to "saw" the meat to cut it. I have had better steak at a diner! We expected higher quality of food and were disappointed. However, not everyone in the party was disappointed, so I rated the restaurant with 4 stars instead of 3. read more

To have a restaurant of this caliber anywhere near NOCO is a huge asset! In an unassuming location on Main Street, once inside, you can tell it's not just any local establishment. The entire staff works together, so the service is present but not intrusive. The real star of the show is the menu; whether there to order off the a la carte menu or the sumptuous 5 coarse tasting and wine pairing meals. Everything on the menu is exceptional, and yes, I've tasted most offerings. My favorites are the Spanish Octopus, the Lobster Bisque, and one of the many quality beef entrees. Went here for a date night and was not disappointed. First off, ensure you have a reservation. We were greeted promptly by the hostess and didn't wait more than a few minutes for our table. They offered a set dinner (with two or so choices per course) or an ala carte menu. We chose the ala carte as the set would have been too much food. Each course was outstanding for quality and taste. They try and use local when possible. The wine options are good and make good recommendations for pairing if you wish. We had a wonderful experience from the friendliness of the staff, to the taste and appearance of food and even the wine connoisseur who presented each wine to us and explained why it was paired with our individual meals. I had a dinner meeting here last week, wow what a restaurant!! Just the week before I was in Denver for dinner at an Italian restaurant with a high rating on yelp. What a disappointment it was!!! But this restaurant is worth all 5 stars that I am giving it. I had the lobster bisque and the then the duck for my main course. Both were very very good. Even though I didn't drink, I did look at the wine list, what a well balanced list they had. This is a place that knows their wine and I would love to come back here and take advantage of what they have to offer. Also they do a very job with their stemware, so many restaurants may have a nice list but then their stemware leaves something to be desired. Hope to be back here soon. read more

What an amazing place to have dinner! If you haven't been to Chimney Park in Windsor, you should definitely change that and get your reservation on the books. A beautiful place with friendly people and excellent food. When making reservations, you are asked for your choice between high top or regular seating. The tables are nicely spaced and you don't feel like you are in the middle of the next table's conversation. The lighting is subtle as is the music. The decor is sophisticated without being snobby. We loved that we received an amuse bouche. A nice way for the chef to share their style even before dinner. They have excellent wine options and can even do a pairing with each course. The menu is adventurous with barramundi, bison and scallops, but also includes vegetarian options and beef ribeyes among others. A very memorable evening, indeed! read more

I was looking forward to the restaurant as this is a classy sophisticated restaurant. However, if you have house rules then the restaurant should abide by these rules. I walked into the bar area and assumed I was inline for dress attire with a ball cap. I was asked to remove my cap which I would have followed if the lady sitting right next to me was not wearing a ball cap. When I asked the hostess then she apologized, she had overlooked and had not noticed the lady at the bar. I am sure the restaurant will make amends - however the manager will need to stay on top of the house rules and train the staff accordingly. Excellent!!! The closest dinning experience I have seen in Colorado to a Michelin Star Restaurant. You need to book in advance to make sure you have a table as this is not a big restaurant and gets fully book pretty fast. The parking can be tricky as it's on the Main Street, but you can find spots close by. The sevice is a 5 top star and the food is well presented. The elaboration of the plates is being done carefully and you can enjoy the flavors. You can sense the balance of ingredients on every bite. Highly recommended for a special occasion!! I've been staying in Fort Collins for three months and wish I'd found this place long before my final week in Colorado! It's one of those places you'd fly back to just for dinner, like Per Se or the James Beard house in NYC. It's very special. I arrived just before closing so opted for only three courses. They were expertly prepared and the service was stellar! The service outweighs the flavors, but it's still amazing. When an Amuse Bouche arrives at your table it's always a good sign! A glorious spoon full of flavor to start the evening. Watermelon drizzled with balsamic. Hmm... ok. Not exactly inventive but appreciated. The amuse which impresses will challenge your senses. One of the best I've had in my life was in LA. The spoon had a tiny quenelle of avocado ice cream with a miniature deep fried jalapeño and topped with a saffron tulle. Another was in Paris which was a tiny ravioli style pocket of pasta, stuffed with Foie Gras and lingering in a consommé topped with shaved white truffle. But watermelon and vinegar is delicious when presented well. The seared Foie Gras was a sizable portion, crispy but not rendered and definitely the star of the plate. I'll have to admit the char was concerning, almost deep fried because the flavor tastes burnt, and I've ordered it there twice. Due to the severity of the "crunch" and burnt flavor I'd say it was deep fried. They denied this, claiming it was a 'super hot' cast iron skillet. In my experience as a French trained chef I know that's nonsense. The Foie would've melted into liquid in a cast iron pan and burst into flames at high temps. Nobody does that. Moving on, I ordered Halibut for my entree, lightly cooked and juicy, with substantial pairings of spinach and seared fingerlings. Elegant onion beurre blanc sauce. The dessert was a little bit too sweet for my taste but definitely made a good impression, paired with a taste of Dolce dessert wine. The bartender Chris was offering wine pairings expertly designed for each dish. I enjoyed the food, the perfect service and the entire experience so much I'm going back on my last night in Colorado! Tonight Chimney Park will go down in history as one of my very favorites. read more

Decided try it again and come for happy hour, there was no one sitting at the bar at all ( it was 4:30). Had the prix fixe menu on Wed with my cousin visiting in CO. Started out with a Caipirinha and it was perfect. Only cocktail I had there.. 2 of em. The service was great and friendly. Presentation was beautiful. Food exceeded my expectations. Flavors were well balanced and the ingredients were high quality. I can't eat cucumbers didn't know the Salmon came with. So I just passed it to my dinner companion. Waiter overhead me... and without hesitation brought out another without cucumber. I didn't even need to ask. Great service! See the pics. Chimney Park lives up to the hype. Their service is spectacular and the food outshines their stellar service! The price point is a bit steep for northern Colorado, but it will be worth every penny. We went for our wedding anniversary and opted for the five course Chef's tasting menu. Some highlights include the yellowtail sashimi, the lobster bisque, the pork belly, the beet salad and the beef tenderloin. I will also share that during COVID times, they were incredibly responsible about wearing masks, keeping the tables safely distanced, and making their guests feel comfortable. read more

Went for a celebration of life with a group of 5 it was atleast 15-20 minutes between courses. We all had to participate in the 5 course meal if that's what we wanted. Staff was rude for a high end restaurant. Head chef was disrespectful over wait times laughing and looking at us like we were dumb when we spend 850 at they restaurant. If there's 5 people in your party they'll charge u gratuity regardless of they shitty service. read more

Chimney Park had been our go-to fancy, celebratory restaurant but based on last night's quality of food and service, we will not be back. We always get the chef's menu, and there were several items in several courses in which the 'stand-out flavor' was salt. We couldn't even finish one of the main courses, as the fish tasted so off. I could go into detail about the lack of appealing flavors, and the fact that the server cared not when she saw items going unfinished, but why rehash it? A group of HR team members swarmed upon Chimney Park after an all day meeting to get to know each other outside of the office and break bread. What a great experience here at Chimney Park! We started out with cocktails and wine and progressed to apps. Some of the apps we shared at the table included the octopus, pork belly, shrimp, gnudi. Everything was delicious and flavorful. Entrees ranged from the rib eye to scallops, to pork loin. I enjoyed the pork loin - though a little over cooked and a tad salty, I enjoyed the fresh made spaetzle, and veggies under the loin. Trio of ice cream was perfection - although the scoops could have been a tad bit bigger the combo I chose of vanilla, chocolate and mocha almond fudge were a great ending to a nice meal. read more
