    I had the pleasure of attending the Pastime Event - Prohibition era themed at Chuckanut Bay Distillery . The fee was $20 which included a fantastic table of Charcuterie and Salmon Canapés . Live Jazz tunes from a trio of very talented musicians entertained us for the evening. The owner Ethan was in attendance and was very attentive to every detail, making sure everyone was having a great time and even gave private tours to view the rooftop bar. The bar tenders were fantastic and attentive, and the prohibition era cocktails were great! I especially love how they went the extra step and made the old fashioned and served them in a flask, hidden in a faux Bible. The whole experience was phenomenal! Their Spirits speak for themselves! If you haven't done a tasting in the beautiful tasting room.. what are you waiting for? I can't wait for all the upcoming events like the Krampus celebration and many others!

    Valentine's Day and this was our backup lol. It was worth it tho! Amazing bourbon crab bisque! I had the shrimp with polenta cakes and my bf had the winter squash salad. OMG their Aperol citrus spritz are the BEST! I had 2 of those in mocktail form! Drinks are pretty good here. We will definitely be back!

    Beautiful menu, beautiful interior, and a wonderful cocktail menu with fantastic drinks. Loved speaking to the bartender about their specialty cocktails they all come up with. Can't wait for the patio to open if it hasn't already!

    We came for drinks before going to dinner. They have a lot of great drink options. And their food menu was also pretty extensive. I chose the flight that included 4 different liquors they make at the distillery. They were all great but my favorite was the hazelnut liqueur. I bought a bottle to take home. Service was great at the bar.

    Our experience was nothing short of spectacular! We started off, sharing the whiskey queso, which did not disappoint. We then shared a traditional Chicago style pizza that was flipped in front of us, and had all the right flavor without being overpowering. We also shared the honey Dijon chicken wings that were perfectly sauced! The ambience is trendy with cool views of the distillery! FYI they host special events as well!

    Bellingham did not disappoint! Wandered into this place starving and intrigued by the backstory. Bustling, noisy but fun on a Friday night. Shockingly we only waited 30 seconds and our lovely human of a server sat us. We chose our drinks from the draft cocktail list and they were absolutely delicious. We got a few plates from the small but interesting menu. Everything tasted great and thoughtful and the people watching was fantastic.

    First time there. Went relying on reviews and we were not disappointed! Shrimp and pot pizza (don't remember the real name) were so so delicious. Cocktail was fantastic. Beef slider wasn't impressive. We go back again

    The restaurant experience was great, the food, the service, the beverages. I did not enjoy the tasting however, I go to distilleries wherever we travel, and just returned from one in Whistler Canada, enjoyed that, everything tasted unrefined at this Distillery.

    I loooooooooooooooooooove this place!!!!!!! The happy hour is fantastic, and if you only listen to me once, make it this time: Get the Mezze plate. Presentation is GORGEOUS and it's even more delicious. I'm not embarrassed to say we ate every single drop of food and dip on the two plates. It's also enough food to suffice as a small meal - they have really knocked it out of the park with this one! Drinks are very inventive and I love that they use all the Chuckanut Distillery goods - which are fantastic and you should probably buy some, because the Krampus is the best holiday spirit in coffee, hot cocoa, straight up.... There's a mix of classic and signature cocktails, and the bartenders are able to create something off the cuff for you too. It's a stunning building with lots of history and I know they have big plans for the next few years - rooftop bar, speakeasy, renting out for events....I am thrilled that something like this opened downtown and it's fast become one of my go-to places. Excited to see what is coming up next!

Each used n/a spirits (n/a mezcal in the latter) and a symphony of sophisticated ingredients, which wish I tell you what. Each had a speared dried citrus slice and a luscious ginger bite (or something!) a top. The first had included honey, but it wasn't sweet--just complexified with a little snap to it that the honey smoothed; the second was a little sweeter in tone, including a bit of huckleberry along with the mezcal. (Connor might recall them by my play name for them. Inspired by a book in my hand on collecting meteorites, I nicknamed the first the "Extraterrestrial Visitor" and the second the "Heavenly Visitor.") They were so delicious I suggested he put them on the menu. If he does or doesn't, no matter. Just ask him if he has time to get creative for you. He'll ask you flavor tone preferences, or you can just go for whatever he wants to make, like I did. Again, he is excellent. I enjoyed my lovely drinks with a Caesar salad (another OMG!) which included crispy bacon bits and loads of tiny shreds of a delicious white cheese along with a creamy dressing. It was scrumptious as was the very lovely charcuterie plate. Pistachios, green apple slices, fat outstanding Castelvetrano olives (caution: with pits), a luscious pepper jelly that went beautifully dipped into with their choice of excellent crackers, delicately flavored salami and a prosciutto so elegantly-flavored it could make you weep. The place wasn't busy which was nice, and it's got this cool old-timey vibe, like a classy prohibition bar but still comfy. There was a guy playing guitar live which totally fit the mood. Our waiter was great, super friendly and happy to go find answers for us when we asked questions. You could tell he actually cared. Hubby got the corned beef scramble and an orange juice and I got a coffee cocktail that was AMAZING. The best part was watching our server train the other staff on how to make my drink, so I got to lowkey eavesdrop on the whole process. Kinda fun! I also ordered a side of fruit and it was shockingly fresh, dragon fruit, orange, blueberries, like not sad hotel fruit at all.
