This is such a cool spot in Ithaca! We got the vodka sauce pasta and the breakfast burrito. We are vegetarian, so we asked if the burrito could be made with veggies instead of meat, and he made us a custom burrito! It was very yummy!! The pasta was a little cold in places, but we were the first ones there exactly when they opened, so it might be because everything was still starting up! Circus Truck is such a unique find in the commons. It is parked in a somewhat secluded bank parking lot on weekdays until late lunch time. The food is extremely greasy, and fattening but still quite delicious. The garbage fries were my personal favorite. The pasta that was served (freestyle pasta up to the chef's choice) was not bad but I found it under seasoned and the mozzarella added on top was not melted in at all. The food also takes a while to come out, understandably since it is one man cooking and taking all orders. Also make sure to bring cash; this place only takes cash but there are banks near by you that have ATMs. I would definitely come back again for the experience because of how fun/unique it is but it isn't something I would regularly go for! read more

This is a great food truck that serves pasta ($8-$9), sandwiches ($8-9), hot dogs, pancakes ($5-$7), breakfast burritos ($5), breakfast sandwiches ($3 - $4) and much more. Now I object to the reviewer that said "fresh homemade pasta". The pasta I was served was definitely dried and from a box, but the sauce is fresh and homemade, so perhaps what the reviewer meant, or perhaps only sometimes the circus truck makes their own pasta. I had the eggplant pasta with tomato sauce, olive oil garlic, shaved parmesan and fresh basil for $8 and it was very tasty. He uses a lot of extra virgin olive oil and while perhaps its a bit greasy, it really hits the spot after a few cocktails, glasses of wine, pints of beer (and?)/or shots at any of the nearby bars. The pasta is far better than many of the sit down Italian restaurants in the Ithaca area, and an unusual dish for a food truck to have. I love it. When I'm too lazy to make my own pasta sauce from scratch, I now have a place to go. After eating at places like this (and making my own pasta sauce) I can never go back to the jared stuff again. read more

My favorite thing to order was the pasta bolognese, and the best thing about it is he makes everything from scratch in the spot, so he would use only beef (no pork) and add no cheese. After a lot of research for our short visit to Ithaca, Circus Truck won one of our meal times because of their vegan/vegetarian options. Both lunches we got (BBQ Seitan Sandwich and Spicy Pasta) were incredible. In fact, my daughter said she has rarely seen me so happy as when I ate that BBQ sandwich.
