We tried the tasting menu, and every dish was delicious and beautifully presented. What stood out most was how they used local Valencian flavors and traditions but gave them a modern twist. The wine pairing worked really well too. We tried some unique spanish wines for first time. The pace of the dinner was comfortable, and we never felt rushed. We were apprehensive that we would not be able to get into this restaurant with its wonderful references. Fortunately, perseverance does win! Like most of the city, parking can be tight, the convenient central location of this restaurant allows for easy access in the downtown area. Upon arrival, we were met outside the restaurant at street level for our reservation. We were a little early, but this was no problem for the staff who pleasantly greeted us and quickly seated us. The dining room is very comfortable with table spacing that allows privacy yet enough room for some people watching! We noted private dining is available with appropriate reservations. The decor is a welcoming mix of fine dining and whimsy. We absolutely loved the team of servers who kindly walked us through the menu options, and all the details around each meticulously, extravagantly, and artistically made courses. Our well versed sommelier offered us a wonderful wine pairing with each course; we were provided a card at the end of our meal, that shared all the pairing information. Each dish was so special it's hard to describe. Many of the offerings were new experience for us, and we've tried food all over the world. From start to finish, the amuse bouche offered a specific nod towards environmentally friendly fishing and a finishing drink that included a combination of pine, sherry and citric juices that brought me back to camping days of my youth in the mountains, everything was sheer perfection. I can't say enough about this wonderful restaurant and hope to have the opportunity to come back here again. Highly recommended for anyone who can appreciate the fine art offered in the form of food and attention to detail in every form.

    I didn't eat at the location so I can't give them a full five stars, but will say that it can be…read moredifficult to find a place in Spain (let alone Valencia) that serves paella for one person (many have a two person minimum). After venturing to a couple of other restaurants, I was referred to La Valenciana by one of the restaurants as a place where I could possibly get a single order of paella. I went into this location of La Valenciana but they informed me they could only do paella for a minimum of two people; however, they were kind enough to call their other location to see if that location could do it for one person which they said they could. So I was given a business card which included directions on how to get to their other location which wasn't far away. Customer service plus! The other location (Caballeros, 21. 46001) was just as lovely. I was warmly greeted. In fact, they expected me and showed me to my seat right away! Oh, yeees with the special treatment. Ha! Anyways, I thought of ordering the vegetable paella but went with the seafood paella to get a more traditional taste. It did not disappoint! Check out the photos and you'll see EXACTLY what I mean. Delicious! (I imagine the locations are consistent in both service and taste.)

I'm glad to have gotten it out of the way because I don't see myself eating it again for a very long time. It's not that the food was bad, but it's a lot. We shared the seafood paella and the traditional paella. I mostly had the seafood paella but I did try a few bites of the traditional one with rabbit and escargot. The seafood was fresh, and there was a healthy amount of prawns and squid. If you're not really into seafood or can't stand too much of the aroma or essence of seafood, do NOT get it because it is strong. After a while I got sick of the seafood flavor, which isn't a knock on the food, but a lesson that paella simply needs to be complemented with other foods. The traditional paella was quite good as well, and neither had rice that was too burnt (which I liked). I also didn't think the escargot and rabbit were particularly special. Again, portions were tremendous and I think we all left very, very full. Keep in mind that you need at least two people ordering paella in order to get it. It runs at about 18€ per person for any paella, which isn't on the low end, but you do get filled up since it's all rice.
