Let me put it this way....La Fragua was the first restaurant we went to on our month long journey…read morethrough Spain. We came back to Madrid two days early so we could visit La Fragua one more time before we flew home. This is a very simple restaurant plopped down in the middle of a Madrid suburban neighborhood. From the outside it is only a door in a wall of an office building but inside it is a delightful restaurante serving a great version of Cocido Madrileno. The patrons we observed on both of our visits appeared not to be strangers which made us believe the quality of food brings locals back time and again. The English here is limited to non-existent but communication is easy. On our second visit the house was full and we arrived without reservations but they made a table for us anyway and treated us very graciously. To be sure we sampled other dishes during our two visits but the Cocido will have us coming back. Their house wine is Ramon Bilbao and the inventive tapas that accompany every meal are not only tasty but mini works of art. We came here twice...we will come back again.

Located on a quiet square, it has tables outside but I opted to eat indoors. I thought, as I'm on a Spanish Island, Paella would be a good choice. I certainly wasn't disappointed. There must have been every choice of meat and fish in the dish. The waiters giggled as I picked up a prawn and posed with it at the end of my nose for a photo (I know, my mum always told me not to play with my food)! It was far better eating it.completely stuffed, I unshamedly asked for a doggy bag as I didn't want to waste a morsel and warming it up the next day tasted even better!

Most of their menu consists of fried noodle, fired rice, etc. Basically your stereotypical Chinese food but since we were tired of the fried food we ordered dishes that were not on their menu. You can make these request but make sure to know what you want and also make sure these are typical dishes you would see at a restaurant; it shouldn't be something like orange chicken but instead more along the lines of noodle soup, or chicken mushroom.

We started with the on demand options: lemon grain bread with butter from caw raw milk, so creamy that you literally won't believe it's butter! Another starter gem was the prawn tartare with tomatillo, which I usually find tasteless in every place I order it, but in this case the tuna was soaked under a mellow sauce that gave it a very unique flavor. We added a perfectly balanced curry Pardina lentil bowl where you could taste each ingredient without overlapping any condiment. For the main course, we delighted our carnivorous appetite with Cebon chop, 100% grass-fed with baked potatoes and pepper. Even though, the meat was not cooked to the medium rare point that I like, the taste was so organic and tender that I couldn't be more impressed of how good it was. And of course, we needed to taste the desserts that sealed the mark of an amazing gastronomic experience. The brioche bath in caramel sauce with lemon zest was moist, spongy, and slightly warmed to heat up your sweet tooth. The succulent white chocolate lemon cream capsuled in slides of thin layers of cookies powder our mouths. All of this gourmet spectacle was orchestrated by our waiter, Edgar, who ensured our table bread (brown/multigrain) was warmed enough when served, even though the night was chili.
