((4.75 stars)) Fermento Pizza is jammed into a small spot on Varick. the tiny pizzeria is clean, bright, and has a few standing-style tables with a couple of stools tucked inside and some placed right outside. the interior is casual with a modern relaxed vibe. definitely a good grab-n-go slice and pie joint in the West Village--not a place meant for long stays. been here a few times, i'd definitely put this on a recommended list for the classic New York slice. the "NYC slice" crust is thin and light with a nice snap (crunch to it when folded. listen to the vid attached to this review) while also having a nice chew to it that's not too firm and not too soft. the dough is clearly fermented differently/longer than a typical slice. i daresay might be a sourdough crust. the crust underneath had nice color to it--the right amount of browning plus char. topping the crust is a bright fresh flavorful sauce where you get the flavor of the san marzano tomatoes cleanly. atop the sauce is a thin layer of melty smooth mozzarella cheese that adds that fatty richness to each bite. the slice is finished with fresh basil, grated Parmigiano Reggiano, and a drizzle of olive oil. overall, the crust is the true star of the "NYC" slice. the rest of the slice is balanced and really uses the other ingredients to enhance how well-made the crust is, while also adding their layers of flavor, texture, and scent to each bite. Fermento offers pizzeria variety beyond the classic slice from a spicy pepperoni vodka square to a "broken burrata" pizza. it's very much a pizzeria that caters to customers's different tastes (from the classics to more over-the-top options) and needs (i believe gluten-free pizza is an option, here). it gets busy-ish post work hours during the week. service is friendly-ish and quick. another great addition to the pizza landscape in Manhattan). read more

Side note- one of the only poor reviews of this place comments on the fact that they don't have oregano, hot flakes, and Parmesan cheese. The fact that they're therefore obviously comparing this spot to a 2Bros or $1.50 slice is funny at best. Anyway, I was at this small slice place post a not-so-filling meal at the trendy Umeko (review forthcoming) with one other who was also a bit hungry a while back, with the other person having heard of this spot. As this is a more artisanal pizza spot, I went with the Broken Burrata, with San Marzano tomatoes, grated Parmigiano Reggiano, Pecorino Romano, fresh mozzarella, fresh basil, and extra virgin olive oil. The crust was the most noticeable part, airy with an almost cracker-thin texture, with the bottom slightly burnt, but not too much so that there's unwanted bitterness. The tomato sauce was pretty solid, being fresh with herbs, along with a bit of sweetness and sourness. I guess my only complaint would be that the grated cheese blend felt just a bit too salty, and I think it would work better if the blend had more mozzarella, or possibly, I would skip adding the grated cheese next time. Otherwise, it felt a bit oily, as there was a tad too much EVOO. In terms of the topping, the smaller pieces from it being broken were a nice touch, as you could get a bite with it pretty often. This added a bit of creaminess, of course, and went well with the rest of the pie. The other person had the $4.50 Roni Cup with similar toppings, but with pepperoni, of course, instead of burrata. From what I remember, he thought it was good. Good above-average slice spot that isn't too overpriced compared to some other fancier places. Would recommend if you want a burrata slice and don't want to wait in the giant lines at a certain other famous place. read more

2nd best slice of pizza I had in NYC. I was able to order right away and only had to wait a few minutes for my slices. I got a pepperoni slice and a prosciutto slice. The pepperoni was great. Paper thin crust which was noticeable right away. Zero structural integrity problems though which was impressive. Good flavor as well. I liked the basil addition which the other spots I had lacked. A little more parm would have elevated this slice. Still; great as it came. The prosciutto slice was amazing. Lots of prosciutto and the ricotta was a nice compliment. I wished there was a bit more mushroom as it was tough to taste, but I still thoroughly enjoyed it. This had more parm which I liked. Ate here with a friend who cant eat gluten. I was impressed by the gluten free pizza. You can hardly tell it's not made of flour. The only give away is the softer/fluffier texture when you bite into it. It doesn't have the same toughness/bite that gluten has. It did take 25 minutes to come out of the oven (we were initially told 15). I appreciated that the guy making the pizza changed gloves while making it (limiting gluten exposure/contamination). I also ate a slice of the vodka upside down (gluten), it came out quickly and had the perfect thin crispy crust. read more

My friend and I was really looking forward to have some slices here at Fermento Pizza. I eat pizza and few time's a week and know where's all the good places are. Unfortunately Fermento pizza didn't make the grade. Why? We ordered 4 slices and seriously the cheese pizza had a small amount of cheese. Lot's of other places the cheese dominates the slice. There's way more dough than cheese too. The taste is a grade higher than the $1.50 pizza. The owners were very nice and I wish them well. I'm pretty surprised how they got all great views on the other post's. read more

Wow! Walking around downtown and not expecting to discover such a fantastic 5-star pizzeria! Fermento makes amazing, memorable, reasonably priced slices!!! A bit hungry when I walked into this really small space, so decided to try a slice of their basic NYC slice and Vodka Upside Down. Paid in cash and noticed when that the prices for each slice were oddly and without explanation, slightly higher than posted even after tax, amounting to 30 cents, but thought it petty to question. Regardless, after receiving my beautiful slices, it really didn't matter. Both slices were topped with fresh basil, fresh grated cheese, and olive oil light drizzle plus perfect crusts (from my understanding using long-fermented dough, hence the name) - the flavor of each was unequivocally outstanding! As I finished, the young guy behind the counter walked out and asked how it was. Needless to say, I really look forward and may even go out of my way to grab more, delicious Fermento slices. I wish them well-deserved success, although not those lines of obnoxious, IG/Tiktok obsessed, FOMO tourists that dissuade us locals and kills the pleasure of being your customer! read more

Sourdough crust pizzas are all the rage. The lines at l'industrie wrap around the block, so it was inevitable that similar spots popped up. This is one of them. No lines and very similar flavor. This pizza was amazing. We had a regular pie, Sicilian spicy pep vodka pie and a ham jam pie. The Sicilian piece was really good, most of the Sicilian pepperoni pies in NYC are dripping with grease and messy but this pie was fantastic and didnt make a mess. The regular pie was top notch and it was on the thin side. All of the pies came with fresh basil on the side which is a nice touch. I didn't have the ham jam but the people who did said it was really good and a nice balance of sweet and savory. Manhattan pizza spots have been put on notice. Typical "congealzza". my invented word for a pizza sitting out for a while causing the cheese to harden (i.e., congeal)...only to be thrown in the oven to try and bring it back to life. New Yorker/Food Tour guide here and That was a nice square of pizza! The dough is indeed super yummy. Fluffy, crunchy and tasty. The guy even did a little olive oil drizzle and added some freshly grated cheese onto the slice after it came out of the oven. Great flavor, attention to detail. Would def recommend. For 5 stars you gotta be one of the best slices I've ever had and while this is not that it is a solid, delicious and slightly different slice than most other places in the city.
