It's not like it used to be... if you came here 5 or more years ago you would've received decent serving sizes and pretty good food, but I came back and I was left disappointed. My enchiladas was actually only one enchilada, and it didn't taste as good as I hoped, and for ten dollars too. The shrimp fajitas were pretty large and pretty good, much more worth the money than the enchiladas. The service wasn't very friendly either, and the atmosphere was something that this branch of fiesta Jalisco always lacked in. It's definitely sad to see one of my favorite summit restaurants become a restaurant I'd probably not come back to. UPDATE: it's been 20 minutes and someone still hasn't come to give us the check. I wandered in to this restaurant while on a bit of a road trip. It's the off season, so it was practically deserted, only two other tables were filled. The emptiness during lunch "rush" didn't do much to recommend the place, but I decided to stick it out because I was starving! FOOD The corn chips were warm and fresh, but the salsa was watery, and seemed to have come from a jar. I ordered a combo with two enchiladas; one chicken and one cheese. They were drowning in flavorless red sauce, and the enchiladas themselves were rubbery. The chicken inside was extremely dry and stringy. The cheese enchilada had plenty of cheese, but was very small. There were sides of refried beans and rice, with a little coleslaw. The coleslaw seemed to be vinegary cabbage and a few other veggies (plus what may have been a canned jalapeno). The entire meal was strangely flavorless, not even a hint of spice or even salt and pepper. The beans and rice were terribly bland, weren't even salted, much less had really any particular spices added. I came during lunch, so there were a variety of typical specials on the menu, and the prices are fairly reasonable if you aren't expecting anything spectacular. All in all nothing to write home about. AMBIANCE The restaurant was very clean, although the shopping center is totally lackluster. Typical tacky "Mexican restaurant" decor, with the typical Tejano music playing. The mix-and-match cutlery and plates were fine, but seemed a bit down-market, even for the location. SERVICE There were three servers hovering around the counter, but no one ever came to check on me while I was eating, and I needed a refill for quite a while. First time here. Friendly, fast service. The food was pretty tasty. Really enjoyed the flavor of the rice and beans. I got the chicken carnitas. Yummy and lots of chicken and veggies. And my husband got the ground beef burrito. He also said it was tasty. We enjoyed the large basket of chips and salsa too. Not sure why others gave it a bad review. It was good, not great. The chips were a little off, same with the salsa. Neither had that "must munch me!" taste most Mexican restaurant have. My food was again... meh. They have a gap in their menu. If you want regular enchilada with beans and rice, it's a no go. You have to order their special enchilada with all sorts of lettuce and sauces and their signature enchilada sauce to get a full plate. I got the regular ala carte enchilada and while it certainly was edible, I wouldn't write home to mom about it. The guy that seemed to be running the front of the house was very charismatic and enjoyable to talk with (man with full sleeve tattoos) however the kitchen (and him?) had a real hard time getting my neighbors order right with him running to the kitchen 4 or 5 times. Can't think of a single reason this place deserves more than one star. For starters, the staff was straight up rude. Asking for a table away from the door in a nearly empty restaurant was apparently asking a lot. The food came out faster than it does at McDonald's, which really makes you wonder how long it's been sitting back there. Appetizer came out after the entree, probably because they actually had to deep fry it when ordered and didn't have it pre-made. Enchilada sauce tasted more like a sweet bbq sauce. "Crispy" chili relleno was not fresh and came out mushy. Chicken was dry as if it had been sitting out for hours. Rice and beans were cold enough that the cheese on the beans didn't even start to melt. Overall the meal was just flavorless and expensive for what it is. Almost forgot... Midway though dinner a dog runs across the restaurant coming from another booth?? DO EAT GO HERE! I went here last night around 6pm with my girlfriend and kids, and then drove back to Denver. It's was okay at best, and then around 4am it really started falling apart. Cold chills, aching joints to the point that I couldn't barely move, diarrhea, vomiting, headache, nausea, blurred vision. Yep, food poisoning. It's was/is extremely horrible. I couldn't make it into work this morning, and It's 1am the next morning (about 30 hours after eating here), and I still feel horrible. Luckily, the diarrhea has gone, so I don't need to make a trip to the restroom after I puke my guts anymore, but definitely looking like I won't be able to make it into again today. We're a vegan/vegetarian family and just discovered this place on our ski trip. Food is fresh and delicious. Huge portions of veggies in the veggie fajitas and enchiladas. We were looking for a break from the traffic on I-70 so stopped in for dinner. The Margs were ok, decent amount of alcohol for the price. We ordered several different items; chorizo burrito, pork burrito and a tostada salad. The chorizo burrito was a bit dry and didn't have a whole lot of flavor, the sauce was also pretty bland. The pork burrito was filled with random vegetables (including carrots and broccoli), and was just ok. The salad was missing the avocado and mushrooms listed on the menu, and when asked about it the waiter simply said sorry and didn't offer any fix. He seemed disinterested. Overall very unimpressive and over priced, so many better places in Frisco and Dillon/Silverthorne to stop for food. read more

I really struggled with how to rate this restaurant. I went on a Monday and ordered the Burrito Cancun. It was fantastic. The burrito was exactly as described on the menu. It came without rice and beans, smothered in delicious tomatillo sauce. I've never seen anything like it at any other restaurant and I absolutely loved it. The service was normal. Nothing to write home about, but certainly nothing to complain about. Because I had such a great meal on Monday, I went back 5 days later, on a Saturday. I had a terrible experience. My son and I both ordered the Burrito Cancun, but the waiter only brought one. He thought we ordered one to share, even though I specified leave the guacamole off my son's, but put it on mine. Then he brought me one with red sauce on it, which it's not supposed to have. When I finally got my food, it had spinach in it. That's not in the description on the menu and it was not in the same burrito on Monday. Plus, at least half the plate was taken up by rice and beans, leaving less room to smother it in that wonderful tomatillo sauce. I ate it anyway. Horrible place. Waitress had miserable written all over her face..she told me they couldn't put enchilada sauce on my enchiladas...what? She didn't really understand us. She knew we only spoke English and she was talking to us in Spanish!! My bf asked for light rice and she cut him off and went on a huge ordeal saying that he can't have half chicken and half steak..like what? After that she went over to the counter and started gossiping about us to the other workers and they were all staring at us until we left. We were eating chips and guac and decided to leave so they didn't spit in our food and she charged us 10 dollars for a small side of guacamole lol. We asked for the manager and she said no. I went off on her because we go to restaurants and THEY give us service that WE pay for..not the other way around. She overcharged us for the guacamole and we are in the process of filing a complaint. This place deserves no customers and to be closed! The waitress with the bow needs to be fired. We have a home in Summit County and Fiesta Jalisco has always been one of our favorite places to stop for mexican food. Great green chili, awesome meaty burritos (not filled with rice and beans, like most others), delicious chunky guacamole, and friendly staff. But, when we decided to "quarantine" in the mountains during the pandemic, Fiesta provided our weekly "fix" for yummy food! They really outshined so many other restaurants with their take out service! The food was always hot and well-packaged, and our orders were always accurate and ready when we got there. Service is quick but everything is extremely overpriced. The salsa is watery, and falls right off the chips that taste like the ones that have been at the bottom of the bag for a while. What the hell is wrong with you people?? The food here SUCKS. It looks like something that will make me piss out of my ass if I eat it. I only got a beef taco and it wasn't really that good. My boyfriend, on the other hand, got a dinner entree, with the rice and beans on the side... the beans looked really gross, like something you'd see out of Hell's Kitchen. (flashback to that episode where Ramsey goes in a kitchen and finds beans that's been sitting in a large chemical bucket for days) BARF. My boyfriend also is fluent in Spanish and he said that the workers there were very rude- cursing in Spanish out loud in front of all the customers. I definitely will not eat here again, and stayed true to my word when we and our friends somehow ended up a second time there. I only ate the chips (the salsa sucks) and drank margaritas, which actually weren't bad... they were pretty strong! I think they want people to get drunk so they don't notice how much the food sucks. This restaurant has a really really good fiesta burrito. It has shredded chicken and a very good red sauce on top. It is also a very big burrito for the price. However, I would not recommend getting their "nachos". I don't even know how they can pass these as nachos. They are literally tortilla chips with shredded cheese on top. read more

The Cadillac margaritas are good the house margarita is cheap crap and I've ordered the Cadillac 3 times and gotten the house 2..?. Free chips and salsa. The salsa was good but the chips were stale. I had the chicken en mole which was ok. It tastes a little burnt and the chicken was tough. Came here again and had carnitas de res and it was gross.
