Amazing as always. This review is for the last 2 times we ate here. On December 5th, Earl was our server. On January 16th, Teresa was our server. To start, the service here, every single time has been outstanding. The staff is very friendly and knowledgeable. We've had their Beef Filet, Beef Ribeye entrees as well as their Chicken Fried Tenderloin entrees. Each time, the food has been cooked perfectly - 3 times out of 3. And the sides - oh my, so good. We've had dessert one time - their Banana Pudding. Very good. While Fly by Night is a bit off the beaten path, it's worth the drive. Fly By Night Steakhouse was an unforgettable dining experience with family. The 16 oz medium-rare ribeye I ordered was cooked perfectly. It was incredibly tender, with just the right amount of marbling to make each bite indulgent. On the side I had the whipped mashed potatoes. They were creamy and buttery, a perfect complement to the steak. My in-laws ordered Calf Fries and they were also good, just a little salty in my opinion. Nonetheless, they were good and my first time eating them... if you know, you know! The atmosphere added to the meal's enjoyment. The rustic ranch setting, with a big window view of the pasture. Unfortunately, there were no livestock out to add to the fun. The staff were friendly and attentive, making sure everything was just right. Our waitress was awesome. Theresa was on top of things. This is a spot I'd happily return to, not just for the steak but for the warm ambiance and excellent service. Highly recommend taking the time to visit this Texas eatery if you're anywhere near Cleburne! My in-laws had been here months prior and it was cool to see how their waiter that served them approached them and carried a conversation with them. I love this place. read more

Had dinner here tonight to celebrate Valentines Day. Saw reviews and wondered if a steak house so close to home could compete and I'm here to say it does! And then some! We had a reservation and we're sat within minutes. The decor inside is so unique and the views of the pasture was beautiful. Our server was very informative and attentive and took great care of us. We started off with the shotgun shells which were very good. Ranch was homemade and only con was the bacon wasn't as cooked as i prefer inside of it. I ordered the salad with salmon and the salad and lemon vinaigrette alone were so good. Adding the salmon which was cooked to my specification of medium well just made it that much better. I wanted to try the corn so i ordered or as a side. My husband ordered the chicken fried steaks and said it was the best he had ever had. I csn say with complete confidence the best thing on his plate for me was the mashed potatoes. Like wow - i can't even adequately describe it. We had to have dessert because it was all so good we knew that would be the perfect ending. We got the banana pudding and it did not disappoint. Worth saying- saw hats inside and saw that was a no no at some point. Either that was misstated or they updated the policy. It's also open carry which in Texas is always welcome. We went back for our second time last night and let me say, what a great experience. Started with the queso, some bread and salad, and then had the 16 oz ribeye with the twice baked potato and brussels. Everything was so good! The vibe of the restaurant is just fabulous and the best part was our server, Teresa. She remembered us by name!!! We were absolutely floored. Walking into the restaurant gives you a feel of comfort and awe as it is located out in the middle of nowhere. It reeks of a place with class as the tables and settings are done very well. We had the shotgun shells for an appetizer. They were very good, even though we didn't taste the bacon. Still worth ordering. My wife had fish and I a steak. The steak was cooked perfectly, but the fish was undercooked, even though my wife asked that it be cooked completely through. The wine glass was very full and reasonably priced. We had okra appetizer which came with an addictive chipotle ranch aïoli. They were so good -like okra French fries :) He had the chicken fried steak and when I tell you it was bigger than his head I am not exaggerating! Wildy huge. The first impression at the door is a bit off putting. I was there for a lovely meal and I was immediate hit with a bunch of no's at the door. It did not feel great as a start to a $200 evening. This place is awesome. My husband and I stumbled across it whilst out on a motorcycle ride. We looked it up and thought we have to come back it sounds cool and it was! It's out on a working ranch and the views are beautiful, very serene. We sat and had a drink at the bar whilst we waited for our table I had the Bonnie and Clyde spicy margarita very good. Our servers both bar and table were very funny and personable, there's not that many tables and it is ranch style decor but tasteful, I loved that cozy vibe. Now the food we of course tried the shotgun shells recommend by the server and the okra both really good. For main I had the burgundy tenderloin medium/rare it was cooked perfectly so tender and full of flavour I didn't even use the sauce. My husband loved he's shrimp and grits too. My mom really enjoys this place and suggested we go since I was visiting. The southern/country vibe isn't for me, but I can appreciate a farm-to-table concept. The servers were all very kind and all courses came out as they should. The okra pods tasted like burnt okra chips. The charcuterie board is.. well a charcuterie board. I don't think you can mess these up but it didn't really stand out for $18. They ask if you want to add a salad to your steak and my brother didn't end up wanting it, so I tried it with a vinaigrette. I think they forgot to shake up the dressing because it was just an oily salad that I ended up putting chipotle ranch from the okra app on. HOWEVER, the cuts of steaks were amazing. They were so tender, juicy, and perfectly cooked. My only gripe is that they just weren't very seasoned. Things didn't seem to have a lot of seasoning here. And the mashed potatoes were over whipped. I don't know. Something was off with the texture that wasn't sitting right with me. My mom's husband paid so I wasn't one to complain. Overall I think if you live near this place then it's a good "nice" steakhouse option so you don't have to drive to Dallas or Fort Worth. My fiancé and I went last night for her birthday. Great atmosphere, great people. I ordered the ribeye with the twice baked potatoes, my fiancé ordered the tenderloin. Both our steaks were delicious, cooked to perfection. Better quality meat/flavor than we have received at the 5 star restaurants in DFW. They also gave my fiancé a banana pudding on the house, which was a nice gesture (and delicious!) We will definitely be going back and taking our friends with us. Only thing to improve is the bar. It seams as though 1 bartender was making all the drinks for the bar area and the dining area. We waited about 20 minutes for an unsweet tea and a Long Island ice tea. There were about 8 people total in the bar. Our table was ready before the drinks came. At the table we waited about 15 min for each mixed drink we ordered while eating. This was our first time dining in at Fly By Night. We loved the whole experience. The decor was true to the name. Cow hides and funky animal decor all throughout. We started off with margaritas which I thought were just ok. I am picky about my margaritas though, I really dislike the taste of mixer. For appetizers we had the crispy okra pods. The okra was a tad overdone but the aioli was so good. The entrees were amazing! The chicken fried with green hatch chili gravy. We asked for extra gravy because it was that good. I had the salmon with crab on top. The brussel sprouts come with bacon so I had to ask for it without, as I do not eat bacon. The chef made an exception and I really appreciated that. What a unique, one of a kind restaurant! It's very country, casual, and located down a county road. You feel like you're at someone's house, a step back in time. Strands of lights that hang over the outdoor area give off a sense of twinkle touch. One drawback is there isn't a kids menu, however the establishment is very kid & family friendly. We ordered Queso Blanco, a margarita, a Bloody Mary, the grilled ribeye with mashed potatoes and green beans, the Burgundy Tenderloin with mashed potatoes and asparagus, and creme brule. The Bloody Mary here is GIGANTIC! Both of our meals tasted delicious and our steaks were both correctly cooked as requested. Presentation is lovely and simple on square white plates. The queso and margaritas we so-so, nothing fancy. The potatoes were too salty for me, and I wished they offered a baked potato option. The creme brule wasn't the smoothest, but was still tasty and I was glad to have dessert options available. It should be noted the side salad is an eclectic mix of dried cranberries, pecans, and queso fresco over a bed of mixed greens. For such a straight forward "meat and potatoes" type of steakhouse, I was expecting a more traditional rendition. I was caught off guard when a basic mix of iceberg, tomato, shredded carrot, and croutons wasn't set down in front of me. I'm not sure how I feel about the salad, but wish there was a more familiar and standard side salad option. This restaurant is such a cool spot because there's no other restaurant like it! This is one of the better "high end" restaurants in Cleburne. That said, it's in Cleburne which does not have high end restaurants. The last time we went was during covid and it was not a good experience. But I am not considering that in this review. Prior to that, we had a couple of good experiences there and the food was good. Visited your restaurant coming from Hurst, Texas celebrating our 43 year anniversary to be let down. The atmosphere was good and so was our waiter, but the steak was not at all very good plus my wife ask for well done, but as you will see in the pictures wasn't. Our waiter did ask my wife to cut into her steak and on the end she cut was fine not so much as you got to the center. What an absolute treat! I was visiting Cleburne and wanted somewhere nicer for a solo dinner. I went to Fly By Night and it is quite the hidden, off the beaten path gem! I HIGHLY recommend reservations. I sat in the bar area and loved how it was still intimate and quiet. The menu is thoughtful but concise with some unique cocktail options. I think you can tell so much about a restaurant by their side salad- it's an easy item to go low effort on but Fly by Night's was AMAZING. My entree came quickly. They always treat my dietary restriction with such care. That menu is can't miss. The huge picture windows make this a great place to take out-of-town visitors. After hearing wonderful things about this place our dining group gave it a try last night and we were for the most part disappointed with what we found. After arriving early for a reservation we found a busy bar with extremely $$$ pricey cocktails. A couple in our group asked for different sides instead of what was offered & even though the sides were priced the same we were all told there would be no substitutions allowed and would be charged extra if we wanted those sides instead of what was offered. The food did arrive promptly but was not what was expected. Chopped steak was doused with enough pepper alone to make me sweat, chicken fried tenderloin was coated in something other than traditional flour and appeared to be made of corn meal or grits instead of traditional flour and several sides that were ordered didn't arrive. Let's break it on down, Break it on down: Shot gun shell... well If I was watching the super bowl I would want like 20 of these. Sides- the mash and gravy 4.3 stars hot and all day. Apology if I hurt someone's feelings. The wife's Rib eye: bummed, no cap, was the leanest rib eye ever, also to thin 3/4" - cut. Very dry, order it medium was more on the pink- going well, not red and juicy. Again apologize. But it was tender, really tender. Now the peach cobbler: let me say I am a pure hillbilly and grew up on peach cobbler. Okay no peach' peach mash cobbler is something you don't serve at a ranch steak house, no texture, way to much cinnamon, crust was, well boooooo boo, roll some butter in that with some sugar, chill the thing, get some peaches and let's go. In that area you better put a add in the paper and find /hire some retired grandma that knows cobbler and crust. The most of the staff was putting in work, working hard. Our server dude, you could tell doesn't love the business. And well didn't pay attention to the details... if your going to serve and be in the industry. Get into the game if you want me to put something on the table. It wasn't that busy. Also beer was cold, the drinks were week Sauce. C- Listen I hope the chef and crew take this and make this place a destination place. Because right now it's not worth the drive from Dallas... Their staff is wonderful and the restaurant itself is really great rustic ranch style. For appetizers we got the calf fries and the jalapeño poppers. The calf fries were really good but just barely warm. The poppers were nothing special. We had a big group so I got to have a bite of a lot of different entrees. The chicken fried tenderloin steak was massive. It was cut super thin and everyone at the table agreed we could've got better at an IHOP, Dennys or similar. It was really tough and I find it hard to believe to be tenderloin. The prime rib which I ordered was a good prime rib. One of my son's ribeyes was way over cooked as was his lobster tail. The salmon was dry and was very hard to even identify the crab on it. The absolute best part of our meal was the Brussel sprouts. They were outstanding! The Cowboy corn was really good. Open carry dining and the friendliest people around. Rolls as soft as a pillow with naturally sweet butter. The burgundy tenderloin is divine. Also had the jalapeño poppers and the best sliders ever! My wife and I came here for our anniversary, looking for something different than the standard fare in our town. Fly By Night came highly recommended, so we took the 40-minute drive to Cleburne. I ordered the chicken fried tenderloin ($24) that came with mashed potatoes and green beans. My wife ordered the 12oz ribeye ($42) with the same sides plus a small salad. My wife's steak was cooked to perfection; no steak sauce needed here. It absolutely melted in your mouth. My chicken fried tenderloin needed salt, but the breading was crispy and the meat was super tender (I assumed it would be since I opted for the tenderloin instead of the standard chicken fried flank steak). Our biggest problems were with the sides. The mashed potatoes were absolutely nothing spectacular and the green beans were obviously cooked from frozen. We thought, "well, this is a place that's Texas to the bone" so we ordered peach cobbler and blackberry cobbler. Big mistake. What self-respecting Texas restaurant serves something so mediocre? My wife said that she'd bet that the peaches were canned, and I felt the same about the blackberries. AND THEY WERE SERVED COLD. WITH BLUE BELL ICE CREAM ON TOP. What a missed opportunity for a way to top off an awesome Texas meal... Would we go again? Only if they fixed the sides and went to homemade cobblers served warm.
