The noodles the first time around were a tad overcooked, but the kae-dama was cooked al dente. It's funny, because I'd almost forgotten how non Sun Noodle ramen noodles tasted! I chatted with the chefs about my ramen adventures in the US, as well as my own attempts at cooking some tonkotsu, and it was overall a great experience.
