Fun, colorful neighborhood up a (relatively) easy hill from downtown. The food seemed like a modern blend of Chilean, Italian, Seafood, and Peruvian items. I had a steak on shrimp-sauce rice, and it was delicious. The rice was so flavorful and rich it didn't even need the steak to be a complete dish. Our daughter had salmon, which was very fresh and perfectly cooked. We ate early (by Chilean standards), so I can't testify to what the scene or service are like when it's busier.

We had a busy day exploring Valpo and Vina del Mar, and we simply wanted to spend our last hour in Chile drinking pisco sour. Stumbling upon SaborColor was such a wonderful coincidence. The restaurant is located a little bit up the hill in Cerro Concepcion in beautifully renovated house. The ambiance is warm and woody, the walls decorated with quite impressive paintings for sale, jazz music playing in the background. The most important thing, they make pisco sours, all kind of them. Our cocktails were the best we had in Chile. I started with the classical one and switched to the ginger version, both were so well balanced and subtle. I wish I could stay longer and have more versions of it. Certainly a place to stop by for a drink and more! Salud!

We were greeted warmly as we entered the room, and our server got our order quite quickly, taking time to answer all our questions. A couple of minutes later we had a basket of warm, delicious bread and a little bowl of very mild and tasty 'pebre' at our table. The lunch menu is moderately pricey, around 9000 per person, and a bargain at that price. There is a choice of typical Chilean starters including a varied and tasty salad of traditional Chilean goodies like carrots and hearts of palm on a bed of greens, or you could opt for the ceviche. For the main course we tried the fish of the day in a mildly spicy sauce, accompanied by your choice of mashed potatoes, rice, or salad, but the beef and veggie offerings looked good as well. Dessert choices included a Chilean flan, a strawberry mousse, tiramisu, or tapioca. All in all a charming place with very good food for the money, a lovely ambiance, and great service. This will doubtless become a regular stop on future visits to Valparaiso.
