My family and I have been going to Guadalajaras for 17 years. The service is always great and the menu is extensive and has something for everyone. My husband and I love the chicken molichi and steak Jalisco. Their margaritas are awesome too and they have lots of options for kids. The ambiance is very colorful, decorated with traditional Mexican decor. If you're celebrating a birthday, they will bring out a large sombrero and sing to you. I am really sorry, I hate writing a bad reviews. My family and I had an early dinner here. We had an absolute horrible experience. From the very start, the host was not friendly, we had a bit of an attitude from the waitress who was impatient with us because one of the people in our party had to use the restroom and so we took a few extra minutes ordering. I ordered an enchilada combo, and the 3 other people in our party ordered chili rellenos, and a mole enchilada. The chips at the beginning of the meal were stale. The enchilada sauce was sweet, inedible, the beans were not good. I can not speak for any one else at our table, but none of us finished our food and we did not ask for boxes to take home. Unfortunately, the food upset all of our stomachs. None of us felt well on the way home or in the evening and we have all been experiencing stomach upset. We love Guadalajara. Although we haven't been in awhile, a buy-one-get-one free drink coupon compelled us to return rather than explore the new high-dollar La Loma and Los Dos Potrillos restaurants. Gotta pay for those million dollar views somehow. Dinner for six (6) was fine. Wenceslao #5 was great. All was to be expected (food, service, etc.) however, we were not expecting a $14 guacamole bowl, or $18 chipotle enchiladas. I guess it helps (pays) to look at the prices listed on the menu. Scrawny portions, high prices are a turn-off. Order accordingly. Again, $14 guacamole and $18 enchiladas? $8.75 for bland canned queso? No bueno! We requested a water refill that was returned with a straw. At least pretend you're providing a fresh new glass. Who knows for sure if it was ours? Otherwise, a decent evening out for such an extended absence. Let's see what Catrina's in Elizabeth has to offer. Might just be worth the drive. We already know that Adrianna's isnt. Keep trying. The food, is just not Mexican food; It's American-style Mexican. The quality of the ingredients (what tastes like canned beans, and store-bought flour tortillas.) compared with the prices at which they are offered are, kind of offensive to the term "Mexican". It took us long enough, but we finally tried Guadalajara Family Mexican Restaurant in Castle Rock. I have been on the hunt for a dark, rich mole since I moved to town. I haven't had any real success quite yet, but this was the closest I've found so far. Their mole is a little sweeter than the traditional one my grandmother used to make and a little greasier. We tried an al pastor taco on a corn tortilla. The flavor of the meat was nice and the grilled onions were better than the raw onions I expected. Finally, my husband and tried a steak burrito. It wasn't drowning in sauce which was a pleasant surprise and the steak was pretty good. Part of my dinner was initially wrong hit they fixed it right away. The chips are as expected but the salsa had a really nice flavor. They have a huge menu and seem to have a little something for everyone. read more

The Pollo a la Crema is my absolute favorite entree, and the House Margarita is SO delicious...and so deceptively strong! You will be feeling pretty amazing after the first couple of sips! Excellent first-time dining experience. Sat outside on the patio under umbrellas with appropriate social distancing. Queso dip very taste with only a slight back bite. Combo plates were very tasty. The cheese inside has to be THE BEST glob of ooy gooy heaven I've ever devoured. You're missing out if you don't give it a try. I know that I shouldn't be judgmental like that, and the experience at Guadalajara reinforces the whole ideal of not judging a book by its cover. Our family of four went for dinner on Fathers Day. It was busy, and the wait was about 20 minutes for a table. The food was excellent. Easily the best Mexican food in Castle Rock.- The chips and salsa were a great start. The Chile verde pork was excellent. My older daughter loved her burrito, and the younger daughter loved the tacos. This used to be my family's go-to Mexican restaurant in Castle Rock. We always found the food to be very good for the price across the entire menu. The service was never superb and the facility itself was always a bit old. Well before inflation struck in noticeable ways, the prices kept skyrocketing here ever year to where prices now are at about 150% of what they were just four years ago. My husband and I had the Loco Burrito and the queso. The burrito was really good but there was nothing special about the queso. The service was TERRIBLE. We received our drinks immediately and waited forever to order our food. We asked two different employees to find our server so we could order. We had to ask another server to refill our salsa and chips. Our server only came to the table to deliver drinks, order our food, check in one time, and bring us our check after we stopped him when he was walking by. I ate dinner here tonight with friends of mine. The parking lot was full so we had to park next door at the abandoned hotel parking lot. I was surprised how full the lot and restaurant was for a Thursday night. It didn't take long to get seated. Actually, shortly after asking for a table they seated us at a booth. It's chopped mushrooms, onions, cilantro and spices. I've never had this before. My friend told me you need to ask for it. The first small plate of it is free. If you ask for another they charge you. I enjoyed the mushroom salsa a lot. It was a nice spin than the regular salsa served. The regular salsa was good. Nice and hot. For my entree I ordered the Steak Jalisco (skirt steak grilled to your liking, onions, mushrooms and peppers sautéed) and served with rice, refried beans and flour tortillas. This dish was good and I would order it again, however, I felt that it was cooked in a little too much oil. Overall, had a great time here. The interior is decorated nicely and staff is courteous. Another waitress stopped by our table and asked if I needed another Diet Pepsi. This was very nice of her. Lastly, they offer A LOT of options on the menu. Be prepared for a lot of different choices. On 11/22/23 we ate dinner at Guadalajara in Castle Rock. We ordered a Tapatio Salad-$18.99 and a Deluxe Burrito $16.25, we also ordered a Margarita-$12.50 and a Sangria-$8.50 for dinner. The Service was good and the food portions were large and the food was hot just the way it should be. Pricing is somewhat high on food and the drinks. Both care out quick and hot and were amazing. The fajita steak in the burrito was so well seasoned/marinated. The reviews are way better than the food :( Here are our thoughts 1. The red salsas and sauces are ketchup based, with onion and possibly pepper added. 2. The burritos were mushy and gross (although the grilled chicken inside was good). There were TONS of beans and very little rice. The onion, lettuce and tomato was on the outside of the burrito. Also the lettuce was brown and soggy. 3. A side of guacamole was $5. Not a table size serving... a SIDE. The servers were nice, but forgot about us and we waited a while for him to remember. This used to be my favorite Mexican restaurant in town however they gradually started to go downhill. It's unfortunate because they used to be the bomb, and I would anticipate eating there when the company would go for our evening dinners every once in a while. It went from THE spot to not the spot anymore if you will. The price for the amount of food is good I will say. You most definitely will not leave hungry. Unless of course, the food leaves you in a position where you cannot finish it. The quality has gone down not sure if they switched management or kitchen staff but holy smokes. Ok well let me rephrase that, it is not inedible but the standards have certainly slipped from what they used to be. $10-15 for meal so the price is pretty standard for the portions you recieve. One of the best Mexican meals I have had in colorado. I ordered a combo with soft chile relleno (one of the best I've ever had anywhere), cheese enchilada (sauce was amazing), grilled chicken taco. The rice and beans were superb. I wish could stick my face in the beans. That's how good they were. Chips and salsa were free and had two salsas, both of which were spicy and unique.
