To give some context, I'm an American who has traveled to many countries but my time in France has been limited (24 hours in Paris) and I prob should disclose I'm a low-key francophile.
To start, the location is adjacent to the city center/town square which has tons of shops, restaurants, hotels, and felt safe to walk around (even as a woman late at night!) While the hotel is old, the bathroom is gorgeous and had the PERFECT amount of counter space. The bed was comfortable and while the room I stayed in (cheapest available) wasn't gigantic, it had a desk to work from and allowed me to open the windows to get fresh air. I loved the decor but I also prefer vintage style over modern looks. The wifi was great and I fell in love with the soap products (sold only in France, sob). The staff (Alexandre, Laura, and others) were all extremely friendly with my random inquiries (iron, things to do, etc) and spoke English (while not making fun of my very poor french).
I chose to take the stairs to walk off my daily wine, however this might not be great for someone who isn't able to get up stairs easily (there aren't many floors, fortunately). Their elevator is quite small so something else to consider (for accessibility and packing!)
If you're interested in fine dining and checking off Michelin starred restaurants, you're as close as you can get to the only one in Toulouse.
Sadly, I did not get a chance to try anything from their kitchen or see anything beyond their lobby. If you're looking for a pool, sauna, gym then you might want to look elsewhere. If you're looking for a spot with a local feel and great service, this is definitely for you. Personally, I can't wait to come back.
