The egg is not in fact required. The flavors are rich, the chips are perfectly crunchy and crispy yet still drenched in salsa, and the meats and toppings just sing. Definitely by far the best chilaquiles we've ever had, and it's not even close. I don't know how good vegan food could be but this is fine and interesting. The meal normally is 160 pesos per person with tips. Since we were already heading that way, we took a slight detour to see if there might be an elusive parking spot on Calle 51. It wasn't looking too promising, but we lucked out and found a spot on the next block. When we entered the restaurant, we got the last available table. For those who don't know, the Centro location is small, with five small tables and a few seats at the counter. We ordered coffee. The menu is the same as the other location, so I went with my favorite: the omelette en costra, an omelette with cheese baked on the outside to make a nice crust, served with bacon, half an avocado, and their delicious sourdough toast. My wife chose the grilled cheese, which she said was divine. The coffee was also delicious. Service was very good overall, although our waiter never brought my wife water after she asked for a glass. It wasn't an inexpensive breakfast, but I think the prices were reasonable considering the quality. Our two dishes and two coffee drinks came to $550 MXN before tip. My wife said the bathrooms were nice and clean.

It was good. -I ordered the chilaquiles with green salsa and chicken. I really enjoyed the chicken, but overall not great. -My wife ordered eggs and toast, not great. And they charged us extra for butter and jelly. -She had an Americano, I ordered a latte. Both were good. They forgot to bring hers out. The mansion dates back centuries and was transformed into the grand family home you see today during Mérida's golden era. What makes staying here especially wonderful is that the family connection continues. The great-grandson of the original owner personally greets guests as they check in, and in the morning he is often there in the beautiful open-air rotunda, graciously making his way from table to table to see how everyone is enjoying their stay. That kind of hospitality simply cannot be manufactured. And the mansion itself is glorious. The rooms are extraordinarily elegant, with exaggeratedly high ceilings, beautiful architectural details and the wonderful sense of scale that only a true historic mansion can provide. And, on a very practical note: GREAT water pressure! Anyone who travels frequently in Mexico will appreciate just how noteworthy that can be. The location may be equally perfect. Mansión Mérida sits beside Parque Hidalgo, one of the cultural gathering places in the historic center, surrounded by magnificent architecture and just steps from the cathedral, shops, galleries and some of the best restaurants in Mérida. You can walk almost everywhere you want to go. There are many beautiful hotels in Mexico. Mansión Mérida is something more--a magnificent old family home whose history, elegance and gracious hospitality are still very much alive. We loved it the first time, came back a second, and will most certainly return.
