The Hand Cut is the full service restaurant of the Downtown Nashville Embassy Suites. It is accessible to the hotel lobby and Demonbreun Street. During our week long stay here; my Dad, Brother,and I dined here two times. The Hand Cut menu includes steak, burgers, and pasta. Being that I am a pasta fan I ordered the Balsamic Tomato Bucatini. It is a pasta based dish that incorporates garlic, roasted tomatoes, aged balsamic, fresh basil, balsamic pearls, whipped ricotta, and Parmesan. It costs $23 before tips and taxes. Even though it is a bit on the pricey side for a pasta based dish, I was satisfied with it. I was so satisfied with it that I ordered it both times. Now the same couldn't be said about their steak burger. My Brother's steak burger was so tiny that he had to exchange it for a hamburger. To avoid caffeine, I ordered a bottomless Starry. This is a visually appetizing restaurant to dine in. The ambiance changes between day and night. On our first visit we arrived inside from the Embassy Suites lobby at 8:45 pm. The ambiance was both elegant and interesting. With the exception of looking outside to the Bridgestone Arena, the dim lighting kept my eyes inside. It was so dim that my Dad had to use his iPhone flashlight to read the menu. Being in the present moment, I took in the cow motif, brown brick wall, impressive ceiling lamps, and stage. Throughout both visits, the duo performed acoustic-based songs while sports played above them on the flat screen TV. When we visited during daylight at around 3:45 pm, the Hand Cut had a different vibe. In place of the dim lighting that plays a significant role in the elegant and interesting nighttime ambiance, during the day the natural sunlight from the windows overlooking Bridgestone Arena and Music City Center brightened up the room. At this time, the majority of the action was at the bar during Happy Hour. Maria was our waitress on both visits. She was welcoming. For example , when my Brother requested to exchange the tiny steak sandwich for a hamburger, she was very agreeable to his request. She would check up on us and was prompt with the beverage refills. I decided to go with a Routstock Cabernet and small salty fries for an appetizer. For the main I chose the ribeye and citrus asparagus. Steak was cooked well. I would have preferred a thick cut version for a bit more. Thin cut steaks remind me too much of a Waffle House breakfast item. The lava cake for dessert was the crowning item. The raspberry compote was an amazing addition to the cake. Service and atmosphere are good. Me and my family were visiting Nashville for a few nights, we went to Hand Cut on the first night. After a long travel day, we wanted a quiet and relaxing place. The lighting in the restaurant was perfect, and the atmosphere was gorgeous. They had live music, more like folk covers of songs. That in my opinion was PERFECT because it gave off that night-life that you look for in Nashville but not overwhelming. The food was INCREDIBLE, I had the burger with house sauce and it was arguably the best burger i've ever eaten, which says a lot considering i'm from Chicago. My father ate the New York strip and loved it, cooked to perfection. The service was wonderful, quick and attentive. Also, my father had like a smoked mai tai or something? unsure but he said it was the best thing he had ever drank. Overall, I couldn't recommend a place more. 10/10!! read more

My only negative would be the noise level. It was loud. I loved the live music and that was not the issue that was at a great volume. It was just the general noise in the room. Other than that, our food was phenomenal. The drinks were delicious and the bottle of wine we had was reasonably priced. I didn't keep the pictures, but my husband had the New York strip. We (2 Couples) went into Hand Cut with high expectations after reading so many reviews but we were sadly disappointed. The guitar player was very talented and we lingered after our disaster dinner to watch him play several more songs. The massive bank of TVs with football games on behind him was distracting and turned an upscale steakhouse into a sports bar. With live music, the waitress should have come and stood by each of us individually as we gave our orders so she could hear us, but instead she stayed in one place for all four orders, and as a result, misheard our orders. Our friends ordered a salad to share and a truffled steak dish to share. They also ordered truffled mash potatoes but were later told the restaurant was out of them. They asked for extra dressing and assumed the salad would come out before the entree as most nice steakhouses do. Hubby ordered a steak salad, no onions, blue cheese, or tomatoes and changed the dressing to vinaigrette. He also ordered fries. I ordered a truffle burger no bun and no candied tomatoes. The waitress never refilled water glasses or asked if hubby wanted another soft drink, so by the time some of the food came out, only the two wine drinkers had anything to drink. All the food including salads came out at once. No steak salad for hubby and his fries did not come out with everything else. They brought out two identical salads, one with no dressing at all and the other with a small cup of dressing on the side. We assumed the kitchen split our friend''s salad and we were waiting for hubby's steak salad and fries. My truffle burger did not have truffle Mayo so my friend shared his with me. Hubby had no food at all. We asked for the food runner to find our waitress to report the missing and incorrect orders. Five minutes later, no waitress so we asked the food runner again to find our waitress. She finally came over and said hubby's fries would be out shortly. She then indicated one of the salads we had already received was hubby's even though it had tomatoes and It had no steak and no dressing, She said she missed that he ordered a steak salad and stated the kitchen would make him a new salad. She also indicated the fries will be coming and a minute or two later, the fries arrived. She agreed to bring more dressing for our friends' salad. She appeared annoyed that we were unhappy. She seemed to blame us for "our" miscommunication because we asked for "a lot of modifications". The waitress indicated she had notified the manager that there were problems. I mentioned that my truffle burger did not have truffle Mayo and she said that was "the manager's problem". Eventually, she apologized but it was disingenuous. Three of us finished our food while hubby just had French fries. No drinks refilled and no sign of the manager. Waitress came by and told us the manager comped hubby's steak salad and left without asking about more drinks or filling the now empty water glasses or offering hubby another soft drink. Hubby finally got angry enough to seek out the manager who apologized and eventually comped our whole meal. Finally hubby's salad came but by then he was too angry/annoyed to eat it. He eventually came home and had leftovers from a previous restaurant. We stayed for two more songs from the amazing musician. Three stars because the manager really tried to apologize and make it right, but the manager should consider if this waitress is suitable for the service industry and the waitress really needs to think about if waitressing is the right job for her. Oh, and turn off those TVs when performers are on stage or charge sports bar pricing. read more

It was cooked to the correct temperature but somehow the char flavor on the outside was so strong it overtook everything else. Such a let down for a $65 price tag on just the steak. I ordered the crab Mac and cheese. It needs to be renamed because there was no cheese sauce to be found. It tasted like a watered down cream with diced tomato sauce. Very bland. I took just a couple bites, had shells in it and was done. We enjoyed the ambiance and service, who did surprise us with a dessert for our anniversary. While staying at Embassy Suotes for a work conference, I dined and had drinks here on two nights and just had drinks on an additional night. For food, I had the Chicken BLT Sandwich wrapped in lettuce one night and it was satisfying. It only came with the sandwich which was perfect for me. I had the California Burger wrapped in lettuce another night and it was very tasty! I highly recommend. I tried several different drinks. The Guava Margarita was delightful and refreshing. The guava was a perfect touch. Their tequila sodas with fresh lime juice are incredible! They are strong but taste good. I enjoyed a glass of Saldo one night and it had a nice richness to it. Lastly, I had an Old Fashioned night cap on my last evening. I am not much a brown liquor drinker but I actually enjoyed it and finished the drink! The clear ice block is perfect. It melts at a perfect rate so not to dilute the cocktail. All the bartenders at Hand Cut are very friendly and attentive. While dining alone one night, they covered my drink while I went to the restroom. I really appreciated this! The ambiance was immaculate. Great for all settings--drinks with coworkers, date night, dinner with friends, dinner alone, etc. They have live music and each artist that performed was fantastic!
