Wine pairing
Michael M.

My wife loves wine so I decided to take her her for her birthday. And we had an amazing experience. The wines were fantastic. I loved the food pairings to bring out the flavors in the wine. The service was impeccable. I loved the setup of the space and the ambiance. Great experience overall!

If you are looking for a sparkling wine flight, this is the place to go. My friends and I went to the tasting room. I do enjoy a good bubbly. Also be sure to try some of the almonds with your wine flight. FYI - For non wine club members, the tasting room is standing room only. If you're a wine club member, you get sit. As a non wine club member, you can have a glass or bottle of wine... you can only do the tasting.

Very nice afternoon at Heath Sparkling Wines! We stopped in for the bubbles tasting on our way hour from a New Year's week in Fredericksburg. It's a beautiful setting, relatively new and all shiny! We were a walk-in (no reservation), but they were able to accommodate us within about 15 minutes. We were paired with another group for the tasting, which was nice got get more diverse reactions and comments on the bubbles. Our presenter, Kathy, did a great job. Very personable, very knowledgeable about the wines AND the bubbles production process. Heath has invested in its own "secondary fermentation in the bottle" equipment to now do that on site (instead of shipping their wines to CA for that process), and their automated system to riddle the wine in 4-5 days instead of 18 months! Impressive! We enjoyed all the bubbles, and decided to pick up a few bottles as well as join the wine club. Looking forward to our next visit to Heath!

We really enjoyed our visit here, the wines were great. We learned a lot about the history of making sparkling wine which was super fascinating. Our only this was our server seemed to interact more with the others in our serving group, no matter how much we tried to chat We were the youngest at the table, so we are assuming it's that haha This place is beautiful, and the tasting/pairing is SO AMAZING.

Ambiance is nice when you walk in. Looks very new and clean. You have a view of their vineyards too. We got a private room for our tasting. We had to wait a little bit though because they got out reservations wrong over the phone. I'm not usually a fan of sparkling wines but my wife and friends enjoyed it. The tasting experience was interesting. They give you a brief history of how the vineyard was developed and how their wines are made. Tastings do run on the higher end of $30 a pop. The food pairings complemented their wines well. Nota bene: you have to be a member to access most of their venues to include patios and restaurants, etc. Overall, a nice experience but I rate it 3 stars for the price and wait/reservation mishap.

I love Heath! I am a member and always come here when in Fredericksburg! I love the presentation of the tasting glasses an of course all of the sparkling wines are amazing! The property is gorgeous too! I would love to try the wine and bite tasting! I do wish it was included as a member perk

PSA: You have to be a member of Heath Sparkling Wines or Grape Creek Vineyard to enjoy the patio. They will turn you away if you are not a member. It is clearly posted on their website and on site, but so you know before arriving. We did a flight on the patio. The view is gorgeous, but it can get pretty windy (it even knocked someone's drink off the table) requiring the shades to be put down. The staff were very nice and knowledgeable about the sparkling wines. On the patio, the only menu items served are the light bites. None of them tickled our fancy, so I can't speak to how the food is. The wines were refreshing and became more complex as we went on. The pours were generous and a great size for us to share. The is a great location to enjoy a glass (or 2) of wine.

Great spot amongst the Fredericksburg strip - we had a really nice experience. The place is very crisp and modern. We did the sparkling wine tasting for 2 (~$35pp). Unfortunately, we were tabled with two very drunk women who were cussing and being overtly loud during the tasting. Upon tuning this out, it was lovely trying the different bottle selections, learning about the fermentation process, and sipping on a lovely afternoon! Our presenter noticed the interruptions and offered us another tasting on the house with some of their Syrah's and Cabernet's. This was a very nice gesture that went a long way - what a fun experience. I'd happily come back! Enjoyed the different experience to sample sparkling wines.

Joined their family of wineries earlier in the year. This was my first visit and was very impressed with the quality of their sparkling wines. Clean, crisp and mostly brut style which I prefer. Service is fantastic - just remember that they keep the wine on a separate tab than food. Wonderful experience overall!

Sparkling wine pairing with some less than appealing tasting bites

Have you ever said "I want to drink some tasty sparkling wines while watching a sales presentation and eating random cold food that tastes like a hodgepodge of leftovers?" If so, this place is for you! We drove by Heath and decided to stop in based on the beautiful grounds and our love of sparkling wines. The building is modern, but as soon as we arrived, we knew this was a different vibe from the small and cozy winery we visited earlier in the day. There were tasting areas with large display screens, and we started to put together what was coming. We were accommodated within about 10 minutes of arriving without a reservation on a weekday, and shown to our tasting area with another small group. Everyone was excited for a pairing tasting, but the excited stopped when we tasted the cold food. It was basically like some cold leftovers you would find in someone's refrigerator not the chef curated tasting they mention. Want some cold curry?!? Cold piece of meat? Mystery bite with pop rocks for "Halloween"? Nothing was good, and everyone was trying to be polite, but it was bad. On to the wine, while the wines were delicious, there was no education behind them. We asked about blends and differences in the vintages, and the wine host couldn't really answer. She mainly stuck to her script which went right along with the video shown on the large displays. From there it just turns to a sales pitch... Overall, the wines are 4 stars, but the tasting experience is a 1. Buy a bottle and enjoy, but skip the tasting.

Kathy was amazing! She was so knowledgeable and kind and fun. We had the best time doing their paired tasting. They offered gluten free food which was so nice and we were so thankful for. They were able to get our larger party in which was amazing. The garden area was stunning and we had a wonderful time.

We stopped in on a beautiful Sunday afternoon for a tasting. We had a wonderful experience with Ivan who was very personable and knowledgeable. The sparkling wine was delicious and we loved that it was carefully paired with small bites which was very well thought out. I can not say enough good things about Ivan who took his time to explain each wine and answer questions- Heath has found a gem with him as an employee. We bought several bottles and were very pleased with what was offered in joining the wine club. The tasting was a 5 After our tasting, we stepped over to the members patio to enjoy the sunshine, a glass of wine and a bite to eat. This experience was not as nice as the tasting......we were told "well we will have to charge you as your membership doesn't start until tmw" we said ok that's fine. "Ok, well I don't do that...I'll send someone else over" ok.... someone else came over and We ordered. No biggie. My husband didn't order wine as he was driving.... He later asked if he could get a refill of water.... They didn't seem very pleased...never got a refill..., we finally asked if we could get our ticket as they never returned. We did not find the patio staff to be friendly or accommodating. This part of the experience was a 2. Hoping the wine club will be better customer service than what we witnessed this afternoon as we loved the sparkling wine and the tasting was really awesome.

This was a really nice experience. I was not even aware that Texas had vineyards. Also this was my first time visiting an "all sparkling wine" vineyard. The sparkling wines were great. Our host, Larry was also phenomenal and very knowledgable about the wines and the production process. Each glass also comes with a chef curated bite (portion size was very small), nevertheless the experience was nice. They also have traditional wines including Cabernet -- but I was not impressed with the taste. I would recommend this experience if you are visiting Fredericksburg, TX.

Ask the Community - Heath Sparkling Wines

The rules from the website state "We only allow shuttles or limos, through our *partner providers, regardless of group size." Is a Lyft/Uber still allowed to drop off inside the property? Does this mean no personal cars are allowed to park inside?

Yes personal cars can park there and yes you can be dropped off by Uber. That statement only applies to people trying to show up and park in limos and/or shuttles.

One trip changed a lot for owners Craig Stevens and Chesney Castleberry. During a safari, they…read morewitnessed the tragedy of rhino poaching, an experience that inspired them to get involved in conservation and create a sanctuary. Their 55-acre property became a home for Blake, their Texas-born rhino. And there is a winery here, too! Since opening in '22, it has become a natural extension of their passion for fine wine and a meaningful way to support their conservation efforts. The estate now includes nearly 10 acres of Tempranillo, Sangiovese, Merlot, & Malbec. With most vines in their 4th leaf, estate TX wines are still on the way, but visitors can already enjoy excellent Texas wines made from High Plains fruit along with South African ones. The McPhersons have helped craft many of the Texas wines, while Dr. Bob Young has contributed red wines aged in Texas oak. A team of South African winemakers helps support wines made from the Stellenbosch, Elgin, and the coastal area. The tasting room and back patio offer spacious seating, beautiful views of the Pedernales Valley, and direct views of Blake. The north-facing wine tasting patio is an extra plus design to have, especially with the Texas summer heat. For your testing selection, you'll have a list to choose from. For this tasting session a mix of South African & Texas (both reds & whites) were sampled. Starting off with the Sumatran Sparkles, this South African sourced bubbly is Pinot Grig based with notes of honeysuckle and citrus. Next from SA was their Wijde Sparkling. This white bubbly was blended with 53% Chard, 46% Pinot Noir, & 1% Pinot Meunier. It expressed itself with a floral aroma coupled with acidity and a bit of pear. Following that were two of the Crash label brands. Both Pinotage based, with the dry version a nice and light easy drinking wine featuring notes of strawberries with bright acidity. The sweet Pinotage bubbly version (lightly sweet) exhibited more of a cream sensation with a touch of cherries. Moving on to white wines, the first sipped was the '24 Albariño. This TX white wine has some good pineapple notes giving a pleasant tropical finish. The next white was the Texas High Plains 2025 Viognier. Sourced from Lahey, this one was quite impressive with apricot and lemon. The next Texas red was the '24 Horn Red Blend. This High Plains sourced fruit, comprised of 40% Malbec, 25% Dolcetto, 25% Sangiovese, & 10% Petite Sirah, had notes of clove and cherry going for it with even tannins and acidity. Texas Mourvèdre has been making big waves in the Texas wine industry, and their 2023 vintage has Grenache blended with it to yield an intense fruit forward wine with blackberry to satisfy the nose and palate. The final TX red wine sampled was the '24 Sangiovese. With cherry, raspberry, and a touch of spice, this classic Italian varietal was quite satisfying. For the South African red wines, the '22 Cab Franc was the first to sip. Part of the winery's Keras collection, this bold wine was loaded with big tannins and had a firm mouth gripper! Following that were two '22 Cabernet Sauvignons. One was also from the Keras collection with deep cocoa and raspberry notes and a fine tannic finish. Not quite as bold, but still big, the other Cab wine displayed more blackberry and plum notes with a bit of leather. Rounding out the tasting adventure was the '23 Five Species. This Bordeaux style blend had Cab Sauv, Cab Franc, Malbec, and some Petit Verdot blended to craft a well-balanced, smooth, and elegant wine to savor all evening. With a long family history in the Hill Country spanning more than a century, Craig & Chesney are adding their own chapter to the region's evolving story. The estate offers one beautiful surrounding scenery, dedicated up-close viewing sessions with Blake, and local artwork displayed throughout the tasting room. At its heart, this place is a true rhino conservation effort, strengthened by excellent wines from South Africa and Texas that help support the mission. It is a unique gem in the Texas Hill Country. Cheers!

We signed up for a tasting, and it completely possible that I just didn't know what that entailed, but it was far different from what I expected. Instead of being seated (or doing a standing tasting), we were given drink tickets and told to go outside for drinks. We were given a welcome wine to try with our tickets which I appreciated! When we got outside, we were met with long lines leading to what looked to be a bar with three staff members pouring wine. For the first pour, we were told a little bit about the wine but after that, no one bothered to tell us anything. In addition, the pours were very inconsistent. Some of them were barely more than two small sips while others were far more reasonable. We quickly discovered which staff member was willing to pour more and who he was willing to pour more for (not me lol). The wines themselves were fine but it was difficult to enjoy considering we had to keep getting up to get pours and the drink tickets felt a little like SXSW. We did very much appreciate that they offered actual food unlike many other places in the area!
