My husband and I have been a few times now. It has very relaxing vibes. The owner (I believe it was…read morethe owner anyway) is so knowledgeable. One time I just popped in to buy a few bottles and he graciously helped me pick out some goodies. I was so impressed with how much he knew about wine. You can also pour your own wine at the wall and hang out which is so fun. Really love this place.

Back in 2012/2013 I talked about opening up a wine bar in downtown Waukesha because we needed one…read morehere. Then Crush opened and shortly after that Spring City. Both have different business plans. Spring City offers a way for you to try, sample, taste and drink a wide variety of wines that changes frequently. It is more about learning more about wines from all over the world. Other places, you simply order the wine and then find out you don't like it but are forced to finish it because you just paid $X for it. Here you pay by the ounce. 1, 2 or 3 ounces. It is set up as wine on tap with Aerators. Get a card with your credit card linked to it, read about the wines and start tasting. 75 different wines and varying prices. If you like what you are tasting, they will sell you bottles. If you don't like wines, they have a full bar as well. They also have a limited appetizer menu and nights with live music. Just a great spot to unwind with your significant other or with a larger group. Plenty of parking around the corner or up the street a bit. Yes, downtown Waukesha can be difficult to drive and find parking but there really is plenty of parking. Cheers!

The chicken sandwich was great--the Korean mayo on the side was good but too salty for me. The bloody Mary was great. There were good conversations between strangers and the bartender. We are here for trivia and there's a good sized crowd (every table is filled), but only one server for the entire dining side. We've been here for 2.5 hours and have only been asked our drink order once when we initially sat down. We had to go up to the hostess stand and ask the server for another round after about an hour of being here. We were asked if we wanted an appetizer at intital greeing, but was never asked for a food order - we had to flag the server down for that as well. After not getting our food for 2 hours and seeing multiple tables who were sat after us recieve their food, we flagged the sever down and asked about our order. The server claims "it wasn't started yet" (we assume she never put in the order). She said there are still 3 orders ahead of us if we still want food, but we told her after 2.5 hours and trivia practically being over, to skip it. Our waitress seemed to walk around to talk to people at the bar for extended periods of time while having a full dining room waiting for service. Either understaffed or just bad wait staff.

It's the perfect fancy cozy with velvet and wood. The cocktails are magnificent and the wine selection is great and the flights are so fun. The bartender Em is a sweetheart. We went two Tuesdays in a row and she had great recommendations both times and makes wonderful cocktails. She recognized us the second time and I felt like I have known her forever. I can't wait to go back.

The floor to ceiling windows would provide a great view of the lake and on a return visit, I would come in earlier. Unfortunately I missed the view as I came in for a nightcap. Thankfully the space was decorated for the Halloween holiday and very festive. There is a nice variety of wine and cocktails on the menu. There is also some small bites available for purchase ie cheese and crackers. The cocktail menu is curated by an external consultant and changes seasonally but creative nonetheless. This meant I couldn't ask as many questions about how the cocktails were conceived or what they were planning for the upcoming season. There were definitely some that were combinations that I've not seen before! The staff were kind and engaging. I genuinely appreciated the company and conversation as a solo drinker.
