What an awesome, funky little place. I'd just arrived in Hudson moments before after having traveled all day and was both starving and in the mood for something funky and ethnic. The friend who picked me up had been Hudson Food Studio once, but before the pandemic and was happy to see that it had survived. We ordered three dishes to share and they were served on a mishmash of unmatched plates and bowls, which only added to the ambience. We ordered the baos--yummy with a streak of spicy sauce on the plate you could dip them into--the spicy chicken rice noodles, and the summer ramen--the last two complementing each other quite well. They also had a nice selection of local beers (not draught). I'll definitely come back to this place, without a doubt. read more

Food was great. Location and indoor decor is fantastic. We showed up a Friday evening at around 530. Very rushed service to be such an empty restaurant at that hour. The waitress who was also the bartender was extremely frazzled and rushed it seemed like. Asked us for our drink order and then asked us for food order 30 seconds later. We told her we weren't ready and not even a minute passed and she came back. Great Asian Fusion restaurant we found here in Hudson! The owner uses locally sourced products in his food. We were here on a Tuesday so they had the special of an app (Bao roll) and either Pho or Ramen (I got the Ramen) with a beer for $25. When thinking about visiting Hudson, we didn't really plan on hitting up an Asian-inspired establishment, as there are tons of good options in the city we can always go to. However, it was super cold on this visit to Hudson, and the Hudson Food Studio was near our AirBnB--so that's how we ended up at dining there! And, as you can likely gather by my rating of 5 stars, we had a great experience. Everything about this place was on target! The food was amazing--from the Brussels sprouts appetizer to the luscious crab cakes to the noodle dishes! The drinks were on target, too! I ordered a dirty martini at first, which was made just right! Then I had an amazing Bordeaux, which the bartender recommended. I typically do not order Bordeaux, but their "by the glass" option was tasty and affordable. As for the service, it was first rate! And if you are wondering about the interior, it is more modern, but the space is dark... which makes it a perfect spot! Final note:s: The name of the restaurant doesn't scream Asian, which I thought was kind of fun! In fact, I thought it might be a food museum or something similar at first. Doh! I would rate Hudson food studio 4 and a half stars. During COVID-19, they had available seating in their rear courtyard plus self service seating on the street in front of the restaurant. We arrived when they were booked for their rear courtyard, so we decided to try their takeout/street dining format. The process was seamless. We picked a table. Ordered and paid on my phone. Then they brought out our drinks and food when it was ready for us to pick up from their counter. I thought it was easier and more safe than dining in. For food, we shared crispy pork bao, pork ribs, and the gun cha. The bao was pretty big. The bun was soft and airy. The pork was savory and the skin was very crispy. The pork ribs were succulent and had an interesting cumin based flavor. The gun cha is a dish with vermicelli noodles, daikon, carrots, lightly aged pickles, leafs, toasted peanuts, and pork patties/meatballs. It reminded of pho without broth. Like a pho salad or sorts. It was an efficient, delicious, and interesting experience that I'd definitely do again. read more

Came by for dinner in early November for dinner. We had a reservation for the courtyard and were seated no problem. Everything was clean and neat and all staff were wearing masks. Tables in the courtyard were spread out and provided a great view into the kitchen to watch the chefs at work. We had bao to start. The buns themselves were tender and fluffy. Pork belly filling was very meaty. The texture was closer to a very tender grilled pork than silky smooth pork belly. I like my pork belly a little fattier, but this was still delicious. I was craving noodle soup and went for ramen. I thought the broth was delicious - rich but not greasy, flavorful but well balanced. The noodles were tender but not mushy. The portion size was huge and it was exactly what I needed. My date had the garlic sirloin. Despite the name I thought it was seasoned with a cautious hand. Otherwise it was cooked to order (medium) and plenty tender. The greens didn't blow me away. COVID service was friendly but appropriately distant. Every visit to the table was just as long as it needed to be with no lingering. Wow! My husband and I are so happy we found Hudson Food Studio!!! What a lovely restaurant inside and out. We were seated outdoors due to COVID and it was a beautiful little patio with perfect lighting. Our waitress was very sweet and was extremely attentive and helpful when we asked her about the menu. Here I am, to give Hudson Food Studio yet another five star review! We are huge fans of this restaurant, and often make the lengthy drive up from Westchester just to dine here. However, we hadn't given the Food Studio a visit since the summer started, and I've had my eye on a meal out in the courtyard ever since I discovered they had one back in the winter! We had an absolutely delightful meal here dining al fresco under the "stars" (millennial friendly twinkle lights) on a gorgeous July evening. When we arrived around 8:30 PM, we were seated promptly at the cutest little table for two EVER, nestled in a nook under a large tree. I was already in love! Our server, Vanessa, was fantastic, and offered great recommendations for our food and beverage orders. I ended up veering off the beaten path of my usual sticky soy glazed chicken (not on the summer menu - sad trombone!), and opted for the Braised Chinese Eggplant, Pork, and Tofu, and my boyfriend stuck with his usual Chicken Wings. I also got a Thai Iced Tea, which was probably my favorite part of the meal. Since I've been eating healthier, I've had to give up Thai Iced Tea, since it's usually packed with sugar and heavy cream. Not so at Hudson Food Studio! It's all the flavors of Thai Iced Tea for zero calories! I was impressed and ordered seconds! The Braised Chinese Eggplant dish was fabulous, and a very filling portion. Roasted eggplant, tender pork, and soft tofu are sautéed in a flavorful mirin-soy sauce, and served atop fluffy jasmine rice to sop up all that salty goodness! I think I have a new favorite menu item! The Chicken Wings were awesome as always, drizzled with the signature caramelized soy sauce that we've come to know and love after a few previous visits here. Unfortunately, we didn't save room for dessert, but in the time since we've been gone, Hudson Food Studio has partnered with the new bakery next door, Nine Cakes, to provide locally made cakes and other desserts for the menu. The Coconut Lime cake tempted me, but I'll have to wait for our next visit! If you have the opportunity to dine here before they close the courtyard garden down for the season, DO IT! Averaged 2 experiences into the 3 stars. Both times the outdoor area was clean, neat and had quite a few tables filled. First time was great, food was hot and fresh, service was speedy even though quite a few menu items were not available. Bao buns were served warm and rib starter was almost a meal size, salads were crispy, pho was filling and hot. Second time the bao buns were cold when served and stringy, pho felt more broth than anything substantial and over salted waitress felt overbearing and food took quite a while to arrive. I thought this place was worth going to if you like Vietnam/Thai food and happen to be in Hudson. The ambiance is all things hipster, casual and intimate all at the same time. The art and lighting fixtures were really cool. The service is top notch. From the maitre'd to each and every waiter, you could tell they took their jobs seriously, and even made conversations with the clientele. As for the food, there's a limited amount of vegetarian options, although they could swap tofu for anything pretty much. Would recommend if you like pork, chicken, shrimp etc. We got the Brussels sprouts, which came with some sort of sauce and "bird chili" peppers in the middle which were super spicy. We liked this, and especially the fried shallots that topped it. The Eggplant mint tofu dish was - very minty - not sure I've ever had stir fried mint before but seemed this dish wasn't what I thought it would be Also got the Chicken Rice noodles - seemed overpowered by fish sauce, but had good ginger notes and the shaved carrot was nice. Sauce had lots of vinegar or other acid in it, but was fresh and tasted great after the initial bite. The stir fry wasn't a pad Thai but had good quality basil and big bold flavors. Would have liked some textural differences, ie crushed peanut. We listened to some amazing music here. It was both worldly, fun and classic We paid $57 before tax for two mains, a side and a beer. Food studio has some amazing stand out dishes, such as the spicy chicken rice noodles, greens & rice, stir-fried chanterelle mushrooms, and warm sesame noodles. Their appetizers are also fantastic, especially the grapefruit & pea shoot salad, smoky cauliflower, and roasted brussel sprouts with aioli. Yummm!!! I haven't used Yelp in years but this place was such a colossal disappointment I started this account. What a shame. Such potential. An great space and a nice concept- but ultimately it's a lackluster effort from recipe concepts to execution. Please stop calling this Vietnamese or Southeast Asian. It's a joke. And it's old. There is always something missing from every single dish, not just an ingredient but a flavor profile where you bite into it, and you just say "meh" - so your server offers you to try and add some of the fish sauce they offer, some soy, some Rooster sauce...and still. Nothing. And it's because at the base it just feels uninspired, lazy, and if we're going to be honest it's as if someone spent a short time in Southeast Asia and decided they could easily recreate centuries of a culture's cuisine by traveling a bit and reading books. They've had about a decade to get this right and it still isn't. They now have an impressive space in which they could've risen to the occasion and they haven't - the food is even worse. I really wish they'd taken more time on developing the recipes than the space. p.s. Overall probably 4.5 stars and here's why: first, the place is so beautiful inside and the outdoor area (although not open since it's winter) looks fantastic and i can't wait to come back in the summer. The service was great- quick and very friendly. Now for the food.... absolutely amazing! We got the Brussels sprouts and bao to start and both were amazing. For entrees we got the ramen, pho and spicy chicken noodle dish. Everyone was very happy with their choices and the flavors of the pho and ramen were amazing - the broths were to die for. The pork in the ramen was so tender and flavorful. The only check against them is no beer on tap, only bottles and cans, but that's really no big deal. Summer Ramen (roasted chicken bone broth, seven hour braised pork shoulder, alkaline noodles, shiitake mushroom, pea shoots, nori, soft egg) - Perfect for those hot 80+-degree days when you still crave soup. Richly robust broth that perfectly complements the fresh vegetables with which it's served Greens & Rice (seasoned kurobuta pork, dark greens, tofu, farm greens, jasmine rice) - I almost wish I'd gotten this instead. Almost. It tasted like so many family meals I had growing. It tasted like childhood. For drinks, try the Yo Yo Ma Old Fashioned (lapsang souchang infused rye, domaine de canton, maple, cardamom), which fills your sinuses with smokey essence. Where to begin? Nice locale and atmosphere. Everything went down from there. The spare rib appetizer was a pale brown meat. No flavors at all...unless mushy is a flavor. The sautéed veggies were passable (undercooked) but somehow fishy. A pho with noodles raised the blood pressure from the amount of salt in the broth and was sent back. My sesame noodles (which I waited 20 minutes for after my companion's meal arrived) were again passable but lacking in any true depth of flavor. So I'm wondering... why 4 stars? Came here on a rainy Thursday for dinner with a few friends, and overall had a good time. You enter through a red, velvety curtain, into a fairly austere looking room. It's minimally decorated, which was a little cold, but I could see it being really appealing in the warmer summer months. I really liked that there was a "T" in the bar to make a little more space for people to sit - it makes it a little bit more fun to sit/get to know your neighbors. We were a few minutes early, so tried the cocktails. Their margarita flavor was toasted pineapple (omg, YUM), and another with cynar, lemon, and prosecco that was to die for. All the options we ordered throughout the night were beautifully made, and gorgeous to look at. 5/5, full stop, for the cocktails. Now, let's get to the FOOD. We started with the pork bao (3/order), fried shrimp wontons, and fried chicken with honey slaw. The pork bao were fabulous - crispy pork belly, perfectly squishy bao, a few crunchy vegetables, and a drizzle of sriracha on the plate to drag the yummy combination through. The shrimp wontons were okay, if a little disappointing (but very spicy, to our delight!), but the fried chicken was the real star of the show. For entrees, we ordered the spicy chicken noodles, "big bowl" (ramen), and the warm sesame noodles. The "big bowl" was good, with lots of noodles, flavorful broth, and yummy pork. I can't say it was the best I've ever had, but definitely hit the spot on the cold rainy night we were there. The sesame noodles were also a hit, with GENEROUS portions of braised pork in a yummy (if overly salty for my taste) sauce. The real home run for me were the spicy chicken noodles - delicate rice noodles, lots of chicken, and lots of minty basil flavor for a light, refreshing yet satisfying taste - THIS was a unique dish I'd come back for in a heartbeat. This place definitely isn't cheap, but I think the portions/meat ratio is worth what you get personally. For those on a budget, they do a fantatic $20 deal for ramen, a beer, and a bao on Thursdays from 5-7 pm. While our overall experience was good, we definitely had a few off-putting interactions with the staff. We called a couple hours before coming in (same night) to ask if reservations were needed, and were told (a bit condescendingly) that they were "highly encouraged". We had some uncertainty about our # (4 versus 5, which I realize IS important for table selection), so dutifully only made a reservation once we had final #s. When we arrived... empty tables everywhere. Other minor thing, we wanted to do a shot towards teh beginning of the night (we were celebrating!), and were quickly shut down saying "oh, we don't do that here". I was very excited about the concept of locally sourced Vietnamese inspired food, but Hudson Food Studio did not live up to the Vietnamese end of the promise. The first thing that probably should've tipped me off was the overwhelming number of skinny white hipsters and the very apparent lack of any Asian-looking folks on staff. But hey I try not to judge a book by its cover - so we proceeded to put our names down (20-30 min wait for a table of 2 during Sat prime dinner time). Now the food. We decided to forego the much talked about $12 boas- we came for Vietnamese (not Chinese) and 2 for $12 seemed like highway robbery compared to the amazing, more reasonably priced options in NYC. We also decided to skip the other apps as most seemed only mildly Asian (again not Vietnamese) inspired and more New American. We instead ordered just 2 mains: the spicy chicken noodles and pork with Japanese eggplant, tofu and rice. The spicy chicken noodles had most of the flavors of Vietnamese food- lime, fish sauce, chilis and basil- but the noodles were served in a manner that was neither here nor there (neither properly stir fried in a wok nor served fairly dry). The overwhelming amount of largely sliced carrots in the noodles also felt and tasted out of place. The Japanese eggplant with pork, tofu and basil came served on a giant plate of rice. While the flavors sort of resembled that of a good home cooked Chinese meal, the eggplant wasn't slighty crispy and instead a bit soggy (similar to when I cook it at home - and that's not a good thing!) and the flavors didn't pack quite the same punch as my dad's cooking. Both dishes aspired to to be Vietnamese and Chinese- but they could've used an OG Chinese cook to give them a proper stir fry in a greasy giant wok. But maybe that's the point of Hudson Food Studio? To give you some taste of the Asian flavors without the Asian cooking technique? Not sure. But I'd much rather go down the street to a real Chinese restaurant (sorry no good Vietnamese to be found in these parts!) read more

Yum. Yum. YUM. I think my favorite genre of food is anything Asian inspired. It's typically more veggie-centric and also -- just plain good! My mom and I had a special dinner here and were seated in the back room in a corner. The people watching was great, the service was attentive, and the mood of the room was casual but classy. Our server was attentive to asking the kitchen about vegan options and provided a wide array of choices. I will say that the food that came was not the format I was expecting (more of a noodle dish than we thought) but I would recommend everything I ate, and we considered returning a second night to try the rest of the menu. GREENS - I don't see them on the menu, but the sautéed greens were perfect! I don't remember the flavor profile, but I remember I liked them a lot. STIR FRIED CHANTERELLE MUSHROOM - I removed the miso butter to make it vegan and it was so so so good! A lot of noodles, but the mushrooms were fresh and earthy and the whole dish was amazing. CAKE - My mom loved the cake from the neighboring bakery. They're little circles that look like a mini wedding cake and she talked about it for days. CIDER SORBET - This is a great idea. The execution was a little too sweet to finish, but I applaud the creativity. I did see a lot of pho and bao going past me, although I think pho is best from a hole-in-the-wall type dive. While visiting my parents this past weekend we wanted to try a Hudson spot we had not been to before. We had heard good things from friends that visited Hudson that Food Studio was their favorite and having dined in a variety of Hudson eateries my entire life we somehow had missed this one. My father was adamant that we get there right when they opened at five as there are not a ton of seats in this very narrow restaurant on upper Warren Street. We got there at around 5:15 and there was one other couple dining so we gave my father a hard time. I would say not 15 minutes later the place was nearly full with the host taking names for a waiting list. After our dinner I could understand why. We started with crab cakes with a little spice and roasted Brussels sprouts which was just enough for our table of four. My parents and I each had the red table wine which was very, very good while my fiancé had two cocktails, her favorite being a tequila/agave concoction. The waitress was great - attentive and knowledgeable - sharing her menu favorites. My fiancé got the chicken pho, she is a pho fanatic and said it was excellent. I went with the pork shoulder ramen noodles which was EXCELLENT. The broth itself was one of the best I have ever tasted but the pork was so tender with a soft boiled egg on top of the noodles it was perfect. Perhaps adding to the evening was the fact we could dine with the restaurant door open as it was 65 degrees in February. By the end of our meal the door was closed, temperature had dropped 15 degrees and there was downpour with thunderstorms. Looking forward to coming back next time i'm in town. read more

We had a disappointing dinner here tonight--highs and lows, and we ended on a low. The heat only kicked on about halfway through our meal, so that didn't exactly have us in the best of moods to begin with. Their rustic warehouse space is uber hip though. We started with the duck bao and loved them--a spicy creamy peanut sauce with a decent amount of duck. Yum. We also enjoyed the Viet salad, which was light and crunchy. But the roasted kabocha squash? Yikes. Here's the description on the menu: "ROASTED KABOCHA SQUASH Humboldt fog goat cheese, honey, pistachio dukka, toasted bonfiglio bread". Here's what came out on the plate: overly sweetened squash puree served as more of a decorative smear, a sprinkling of ground pistachios on top of honey (if there was an actual dukka take, it was lost on us), with two hunks of the cheese and some overly toasted bread. We get that the bread needed to be sturdy to stand up to the accoutrements but the squash was such a joke and the whole thing smacked of a confusing fight two chefs had about how to conceive the dish. At least change the word "roasted" to "roasted and pureed"! "Din Din" (barf; when the word entree became anathema is an unsolved mystery) also left a lot to be desired. We ordered the roasted half chicken. Roasting was all too successful for the half piece of breast & wing that we were served. HALF chicken?! Misnomer! The greens and rice were awesome. OK, we're almost done here. Dessert. We ordered a cheesecake made with labne. We're Israelis, we love labne, so yes. Out comes a funny little goat cheese-looking log that tasted exactly nothing like cheesecake. Not even in the same solar system as cheesecake. And the hunks of ginger and roasted pineapple did not help. Even our toddler--who pretty much lunges at dessert--wouldn't have anything to do with it. Luckily it's teensy tiny so of the two of us, one finished it on principle alone. $100 all in, which is fine, whatever, it's Hudson and our last dinner here, but it did not seem worth the money. And hopefully they hire someone to edit their menu to reflect what's actually on the plate. It's possible that had we ordered dishes other than the "roasted" squash, "half" chicken, and "cheesecake", that we might be raving about this place, but that didn't happen and we wouldn't recommend HFS in good faith. read more

Beautiful setting, inventive food, miserable service. We'll try again, but not on a weekend. The two of us joined on a Friday night around 8-830 pm. Seated at a communal table despite several open two-tops that remained open the duration of our meal. Our server was cheery and pleasant but the lag in between check-ins was too long. For instance: we found out that one of the items we ordered was not available about 15 minutes after we ordered it, as opposed to immediately or within five minutes. The person who delivered our food placed it and scooted off, not checking to see if we needed anything further...which we did. It took a long time for find the server to order an additional dish...and then request a check...and then have our payment processed. We would have loved a small bowl of peanuts or something to munch on during the long wait for our starter and entry. We greatly enjoyed the local greens (frisee) but probably wouldn't order the cauliflower again because of the stew-like presentation. Loved the almonds in the Berkshire pork ribs but found the overall flavor too earthy; would have preferred a zestier marinade. The meatball dish was delicious but the proportions of lettuce, pickled veggies, and protein seemed off and meatball was tricky to work with in the wrap. Maybe a longer sausage-shape would work better? Crossing our fingers for a successful second visit. read more

Staff is always super friendly. GREAT FOOD!!!!!! Never had a bad meal there and been there many times. Wish they were open earlier in the day but it's always worth it. It was a little shock when you first go there (have no soda) but their teas/drinks are amazing.
