    I love Jasper's Bar-B-Q for so many reasons. This place has been around for so long! It's been around since before I was born. My grandparents would take my mom when she was a kid. My mom and grandparents would take me as a kid, and now that I'm older, I'm bringing myself here! The people that work here are so nice and welcoming. The bbq here is very good!! It still taste the same as I remembered it from when I was a kid. I would usually get a plate, but this time I got a sliced brisket sandwich, and I feel like I should've ordered two!! It was so smoky and tender! You can tell they take their time and put love into the food. I recommend this place because it's a Waco classic, all of their bbq is good, and you can eat in with your family or yourself and enjoy all of the Waco milestones on the wall.

    Best BBQ in my opinion. Period. All the Texas vibes in one place, friendly staff and great people altogether. 3 meat combo with ribs, sausage, and brisket. Sides were delicious and that's some real sweet tea. Plate pictured is under $20, and I feel is an amazing deal considering it's all quality. Will be back

    We ate here on our way out of town after showing up too late the day before. If you are planning to go by, go early. They sell out of everything every day. The ribs, at least the ones with meat, were tender and succulent. There was, however, a good deal of fat on both, which was inedible. I liked the sausage, as well as the bacon-wrapped stuffed jalapeño. The Cole slaw was very good. The rat cheese is actually just sliced cheese in a baggie. Kind of odd, but ok I guess. Others in my group weren't impressed with the sliced and chopped brisket, which were both very dry. They also weren't terribly impressed with sides or other stuff ordered. For 4.5 stars, we were really hoping for some amazing central Texas BBQ, but we were left primarily unimpressed with the food at Jasper's....further proof that our own favorites closer to home should be appreciated even more.

    We come to Waco once or twice a year from SC and Jasper's is the place we MUST eat. The brisket is amazing, prices affordable and staff very pleasant. It's where the locals go. Don't expect fancy but expect delicious. Picture of my meal. What is in the bowl? It's what they call gravy. It is the drippings from cooking the brisket. Dunking white bread in it is a must and drizzling it over the meat works too, although it's so moist it's not needed.

    This place is a must visit. Awesome brisket, Ribs, Sausage, Smoked Baloney, Slaw and Potato Salad, pickles, picked veggies... da works ! Great history as well. Original chopping block, cleaver, bone saws, smoker dating back to 1906 !!!

    The decor isn't going to win any awards. This place is designed for the serious bbq lovers. The service was adequate. A big plus because you get to see them prepare your item in front of you. A hearty sandwich housed between two pieces of white bread is definitely old school but I would have to say it's one of the best I've had in Waco. The beans had a nice smoky flavor and were tender. It's Waco favorite and I can definitely see why.

    Bottom Line: Hole-in-the-wall BBQ of the finest magnitude! Mighty good & cheap eats from exceptionally friendly folks. Top Line: When you get out of your car and the whole parking lot smells of smoke, know that you've struck gold. And in this case, Jasper's is the gold mine sitting on a mother lode of way fine BBQ tasty-o-normity! I opted for their one-meat plate (1 meat, 2 sides) with cole slaw & beans, plus a glass of sweet tea, for a shade over $11 after tax. That's some mighty affordable eatin', especially given the quality of the food. The sliced brisket was hyper tender & juicy. We're talking fork only, no knife needed, no wear or tear to your teeth chewing, poke it pull off a piece & eat it, literally fall apart while you're lifting it to your mouth tender. And there were enough slabs o' beef to make a fine portion of it. The flavor of the brisket was not as strongly & starkly smoked as some others around town. But it was sufficiently smoked, particularly in the bark, that you knew it had spent its time talkin' to the fire & the finesse of the pit master's hand. While the interior fibers of the meat whispered their smoky notes, the outer crust was a big dog with a very sharp bark. (Bark. Get it? It's a pun.) The bark had that charred semi-harsh attack note expected on burnt ends of the most righteous sort. The beans were fairly typical, but with a tiny shading of kick to them. They had plenty of juice on them, so no danger of dryness. They were nice, but not enough to send you to the plasma bank just to get another dish of them. The cole slaw was likewise very juicy. The taste was sweet with lots of pepper sharpness. Hopefully my picture will show that the cole slaw dressing was liberally laced with fine ground black pepper. The sweet tea was sweet without being syrupy thick sweet. The flavor was more sweetness notes and not a lot of the tea flavor shining through. Let's say a rather typical glass. Nothing your Mama is gonna sell you down the river to get her hands on. But she might expect you to pay for it, since she *is* after all your Mama. Staff at Jasper's rates an easy 10 stars on a 1-5 scale. Everyone (and I do mean every one of them) was as low key, laid back, friendly, cordial (a word that seems to be showing up a LOT in my reviews since coming to Texas), welcoming, and hospitable as you could ever hope for. These are *such* nice folks! Do stop in to see them and give them a chance to impress the heck out of you with their tasty, super tender smoked BBQ and wonderfully friendly staff.

The pork rib meat was also perfectly cooked, the seasoning was one of the best mix of savory I had in a while. Instead of a special restaurant dinner for anniversary we thought we would eat a couple ribs. The adage @you get what you pay for" holds up well here. But the bill was exurban and this was before the current high price of meat & everything else. My husband said that I would not want to know what he paid which means over $100. I hope they can hang on until their supplies are more affordable. The cost will I am sure be a disadvantage. What we paid would have been or useful in filling my pantry. That being said, it was one of the most enjoyable meals we've brought home. If we could afford it we would definitely be our go-to place. We are looking forward to iur anniversary in a couple months when we won't feel guilty about paying a big price for a meal. I will go for flavor over fancy every time and Helberg fits that shoe.

    Halfway between Dallas and Georgetown is a Rudy's BBQ in Waco. It's on the north side of IH-35, but…read moreeasy enough to get to even if you are heading south. There is construction going on, so you may need to exit early and stay on the frontage road to avoid missing it. Parking lot out front is generally empty because most people park in the back. Gas pumps out front are usually available without a wait. When you enter, you'll pass the country store where you can buy sauces and jams and such to take for gifts or yourself. Someone is usually there to greet you as you head inside. They have a line barricade that you have to weave through in order to get to the register to place your order. The wall menu board is positioned so you can read and decide what you want while you are in line. Meats are often ordered by weight, but you can get a sandwich if you don't know how much of an item to order. While in line, you'll zigzag by a large ice bucket of cold drinks in bottles and cans. I always skip these and get sweet iced tea from the self-serve station. You'll also pass a refrigerator of delicious sides and desserts. Be sure to load up on coleslaw, potato salad, pecan pie, and banana pudding. There's more, but these are some of our favorites. At the register, they will put together a large plastic bin lined with butcher paper and then load it up with your meal choices. We love the extra moist brisket, jalapeño sausage link, smoked turkey, corn on the cob, and new potatoes. For the meat, it is fun to order a 1/2 lbs. and a whole link to share with your party. If you want to make your own sandwich, ask for a half or whole loaf of bread depending on how many sandwiches you want to dress. They will load it all into your bin. If you are getting drinks from the drink station, be sure to get a Rudy's cup. You can bring it back for cheap refills on your next visit. They have both unsweet and sweet tea along with the usual soda fountain drinks. Before heading to your table, collect plastic flatware, paper napkins, and more butchers paper to set down as a place mat for each person. They also have a paper boat trays that you can load up with pickles, onions, and peppers for the sandwiches you will make at your picnic table. Each picnic table has condiments available. They have a full bodied BBQ sauce that is a bit sweet and spicy, and a Sissy BBQ sauce for those who need something more bland. There are tables inside and outside. Lots of tables can handle large groups, but there are also small 2-seater picnic tables. Once you are done chowing down, wad up the butcher paper with everything inside and deposit it into one of the many large trash bins. You can also ask for a bag to go and small containers to take items on the road. My family has always enjoyed their visits to Rudy's. They are located around the state of Texas, but they even have some in AZ, NM, OK, and CO. Not really great if your a vegetarian or on a diet for cholesterol or heart issues, but if you are young and healthy, it can be a nice meal for a splurge or cheat day.

There is lots of outdoor seating, very fair pricing, and a surprisingly extensive menu; I doubt you'll fail to find something you enjoy here. Overall it seemed like a location that would be bumping in conjunction with Baylor college nights, post church service, or otherwise Waco-oriented affairs. My only complaint was really the smell. We came near close when some workers were cleaning, however there was an apparent chemical stench within the patio, between the inside seating and outdoor seating. My partner ordered the sausage po boy, while I ordered the fried chicken plate, wish mashed potatoes & gravy + green beans. The wait was rather long, which can be attributed towards the chicken's cook time - which might be front scratch. After we got our plates, I certainly couldn't complain. The chicken was decently sized and decadent with flavor. Consistent, strong Cajun spicing littered the tray and chicken, while its interior was extremely juicy and filled with flavor; additionally, it still maintained structure and provided a nice crunch on the surface. The mashed potatoes were equally as enjoyable. The gravy complemented the potatoes well, and established an equilibrium through texture. The green beans however, were not my favorite. They initially appeared fine on the surface, but became watered down and lacking in flavor the farther down the bowl you went. I would not be surprised if these beans were canned. I would certainly find myself eating here again. Its biggest appeals are the prices, genuine quality of food, and disposition. It is not perfect, but it is more than satisfactory. If you cannot get over the minor inconveniences that you may run into here, then you probably shouldn't be eating Cajun anyways.
