St. Louis also completely gets the most essential element of the burger quality equation: they cook the burgers to your exact specification. I tried the burger with the mayonnaise (which is served on the side for anyone not a fan of mayo) and am still not a fan of mayo on a burger. I tried some of the mustard that was handy on the counter and felt more at home. But honestly, I ate most of the burger with neither because I didn't NEED mayo, mustard, or ketchup to enjoy the burger! I usually judge my burgers by how messy they are....if you don't need a pile of napkins, then it's just not good.
