He took us on a guided tour of his facility. We got to see the hams in the process of curing and the storage rooms. Also got to see the staff processing bacon and packaging it. We picked up a country ham, several packs of bacon, smoked sausage and some smoked cheddar cheese. We just loved the place and the hospitality! Very nice, clean facility!

Sadly, since moving to Tennessee, most grocery store meat department employees haven't a clue. I just happened to be driving by and saw the sign advertising custom cuts of beer. I decided to check it out. I went inside and it's literally a functioning butcher shop. They know what they are doing here. From the front house staff to the butchers, they've got it covered. And, for their try tip, it was only $12.99 a pound which is a great price, especially since steaks at Krogers are going for $14.99-$18.99 a pound. I was so impressed, that I bought three with that delicious 1/4" fat cap fully covering the one side. I took it home and put it right on the grill. Delicious!

Then after going inside and seeing the operation and care the staff take to keep things clean, I was satisfied. - It's a Butcher Shop people, there is going to be a little blood people and a bit more when they are working! As for quality, I was told my Elk and Deer would be ready in 5 days! Perfect timing. They had it done on the 4th day called me and let me know I could pick it up on the 5th day as promised! Amazing.
