Kisume was one of my favorite meals in Melbourne! This sexy and elegant Japanese restaurant had extraordinary quality of fresh seafood and local ingredients. Each bite was incredible and the experience was paired with impeccable service. Watching the sushi chefs prepare dishes was truly a work of art so I definitely recommend sitting at the sushi bar. It's a bit on the pricier side but I felt like it was well worth it and cannot wait to visit this spot again!

So I showed up to the restaurant at 9:20 PM when it shows that it closes at 10 PM. I wanted to try to sit at the sushi barn and order a couple things nothing big. but they turned me away and said that the kitchen was closed already I guess I'll have to try to come back another day but it would be nice if they gave the information on when the kitchen actually closed online

Gorgeous lounge and cocktail menu. Delicious sushi with beautiful presentation. Sit at the sushi counter to see the presentation and occasional wagyu flambéing up close.

That's an amazing spot!, extensive, but it's all about the experience. I wrote a big review on Google. Find it, it has lots of pictures.

Ridiculously in love with this place. We called in to ask about vegan options and all was instantly taken note of and we were assured that they could work around my dietary restrictions. We booked a table right away and started to head over. The sushi bar was on display and orders were made right in front of customers. The precision and craftmanship put into each dish was remarkable. Staff was kind and attentive, and we were immediately asked which one of us had requested vegan substitutes, prior to taking our orders, which was very considerate of them! And the wine (my very first white variety!) was delicious as we waited for our respective orders. When I say that my meal was a work of art, I mean it was a masterpiece. I was expecting small portions and a large bill to come with it, but the dishes just kept coming! One after another, a variety of dishes and bowls and plates accumulated onto my placemat to comprise my single order. Even my partner was jealous! The restaurant is pricey for the area, but well worth it! You absolutely get what you pay for and more! Please do give them a visit if you're in the area. If I could give them double the amount of stars I would! I even made it my profile photo!

This was definitely an enjoyable dining experience for anyone who is a fan of Japanese cuisine. There are three levels worth visiting. Top floor is the bar where we had a drink before our meal. Excellent bartender that served a mean martini. Middle level is the cold sushi counter. Unfortunately we could not get seated here to watch the magic. We were seated at the hot counter level instead, just as interesting to watch. I will say they have some strange heavy chairs! Service was less than impressive as the night went on. Many staff running around but less organized than the kitchen appeared to be. Thankfully the saving grace was the amazing food! We got the tasting menu with extra sushi and sashimi. It was a better value than ordering off the menu. Fresh seafood and elevated artistry. They made a simple thing like grilled edamame absolutely delicious with salted black garlic. Miso soup was slightly plain with only tofu however other dishes made up for it. Decadent foie gras on tender sirloin, divine! Come here to celebrate a special occasion and you won't be disappointed. Kanpai!

I have visited this place for Omakase more than a Doz times over the last few years while working in Melbourne and have never been disappointed. Tony is an artist! Some of the very best sushi ever.

Japanese fusion at it's best. Every single bite was amazing, and surly some of the best sushi I had outside Japan. Everything from starter to desert was very well served and presented by the staff. The tasting menu (that I had) gave a bit of everything they had to offer. Enough to paint a picture of the whole menu as really good. Cocktails are made really delicious and served with a touch of a Sakura.

Had the most wonderful meal here today. Well worth the wait. We had their Omakase which was simply awesome. Definitely a Must go place when in Melbourne.

The front desk at the Adelphi recommended this new Japanese restaurant. There isn't a large sign with its name on the front so I walked by it despite having admired the round "fishbowl" window of the front table. It was a Friday night and the place was packed. They did find a seat for me at the bar down stairs. The fun of this spot was watching the kitchen prep there food. The staff were busy but also quite attentive and polite. The wagyu truffles were AWESOME! I also really enjoyed the tuna feature. I would highly recommend this place.

Great service. Tri-level bar/restaurant serving fused Japanese cuisine with a bit of MasterChef flare. Reasonably priced for dinner, drink (spirit) and dessert. Will go back again!

No one informed us about any policy. We paid for the bottle with 5% service charge which I do not think they deserved. We had a sudden work call at 11.30pm and grabbed the bottle to go, only for the staff to chase us to the front of the bar to inform us that they do not have a takeaway license. For christ sake, we already had bought the bottle!! Though it's alright, we respect policy. They highlighted that they needed to keep the bottle in the establishment. We asked if we could come back and finish it. They said they would keep our bottle. We rushed back to our hotel (Marriott- 200m away for the call). When we returned at 11.58pm, they had already thrown our bottle away. Unbelievable! They were quick to receive our money but equally quick to throw our experience out the window. No doubt, we returned almost at closing times but throwing our wine before closing time - if you wanna go by the book, that is still not your closing time. When we raised our grievances to the staff, she said she told us about closing time at 12 midnight. However, we emphasised that she should have let us know about the takeaway policy and license. Had we known, we would not have ordered a bottle. She looked at us blankly and simply replied "feedback received, but we do not allow anyone in after 12, so you have to leave". Quite honestly, ChatGPT / Claude / Grok could have conveyed more empathy. I am not a VIP customer nor am I a high spender. That being said, I value places with a human connection and empathy, and would regularly visit such places with joy and happiness multiple times. This place is not one of them. For this reason, I will never visit again. If you think likewise, and value authenticity and a true Aussie welcome, you would not visit this place. I hate to give negative reviews but please spend your money elsewhere.

From the moment you walk in, there's a buzz that makes the place feel alive without being overwhelming. It strikes a great balance between upscale and relaxed, making it perfect for a date night or a fun evening out. The warm lighting and eclectic design add to the charm and make you want to linger. Service was friendly, attentive, and well-paced throughout the night. The staff were knowledgeable about the menu, checked in on us at the right moments, and made the whole experience feel effortless and welcoming. Every dish we ordered was excellent -- not a single miss. We started with the Cauliflower & Mozzarella Croquettes, which were crispy on the outside and perfectly creamy inside. The Grilled King Prawns were flavorful and cooked just right, while the Kingfish Ceviche was fresh, bright, and beautifully balanced. The Stracciatella & Heirloom Tomatoes was simple yet outstanding, letting the quality of the ingredients shine. For mains, the Duck Breast was cooked perfectly and full of rich flavor, and the Lamb Backstrap was tender and well-seasoned. The Pecorino & Ricotta Ravioli was comforting and delicate, while the Seafood Linguine stood out with generous portions of seafood and a beautifully balanced sauce. The Honey Glaze Carrots were the perfect side -- sweet, savory, and executed flawlessly. Overall, State of Grace delivers on every level -- ambience, service, and food. An exceptional spot that lives up to the hype, and one we'd absolutely return to on our next visit to Melbourne.
