I have been going to Mulhouse every summer since I was two and I have never been to this…read morerestaurant. I am so glad that I had the chance to rectify this mistake this past visit! I love how French restaurants, worth a grain of salt, build their menus around seasonal foods. Fall = mushrooms. I got the prix fixed menu with 8 oysters, a fish (I don't remember the name) with a mushroom sauce, and your choice of a cheese or dessert. TO DIE FOR. The whole damn thing was to die for. The oysters, which I had never had in France, were very salty. Saltier than any I've had in America. I tend to like oysters on the sweeter side but..they were oysters nonetheless and they were fresh and delicious. The main plate was the real star, though. If you know anything about French food you know that to spot a good chef is to judge his sauces. The mushroom sauce was perfect. I would not change one thing. It was a mixture of mushrooms which included my favorite, chanterelles. In addition, they were extremely generous with the amount of mushrooms. Had it been New York you would have seen a mushroom here and a mushroom there...not in France. Heaps of mushrooms drowning in a superb rich sauce accompanied with a puff pastry in the shape of a heart. Fish? What fish? I was lost in the haze of the mushroom sauce. Maybe they were magic mushrooms 'cause let me tell you these boys had me seeing stars. Dessert: the co-owner is actually the pasty chef so to do her justice I ordered the rasberry milles fuilles with its partnered ice cream. UH - mazing. Light, crispy milles fuilles done right are hard to come by. They are usually hard to cut apart without distroying the delicate layers...this one was so fresh and so crisp that it lovingly gave way to my fork. The flavor of the rasberries came through so well and you couldn't help but add a little spoonful of rasberry ice cream with each bite. I hardly ever give 5 stars or write ridiculously long reviews but le Bistrot a Huitres deserves both. Not to mention the decor is so cute. It looks like the inside of boat giving a wink to their name even if located in an area far from any bodies of waters. I must give a little hat tip to a certain waiter who no longer works there. My grandparents have gone to this restaurant for many years and were heartbroken when a certain Jeremy left for other opportunities. Thanks for putting a smile on my grandparents face for 10 years.
