The suggestions were spot on! Cassoulet was amazing and the Faux Filet, aka Top Sirloin, was perfectly cooked. The owners are really good about taking time to talk to you.. It turns out that they used to operate restaurants in Paris and their quality and service is great. It appeared that many of the diners were locals. Although we were in Foix multiple days and ate at a number of places, we probably came here the most!

The menu apparently changes often, but based on our choices (pork for me and fish for my spouse), we will certainly come back and try something new. The hosts were very friendly and accommodating and added to the pleasure of the meal. The rural location added further to the ambiance as we ate outdoors. We highly recommend this restaurant!
