We had a bubbly server with cool acrylic nails who recommended an excellent bottle of local Aix produced organic rosé wine (much of their list is organic). Delicate strawberries and cherries that ended in a clean, dry finish. Our party of three each ordered different dishes. All unique and delicious. I had a slow-cooked chicken on the bone with a rich cream sauce I would compare to the best USA southern gravies accompanied by a gnocchi-style baked soufflé. A wonderfully subtle flavor that was enhanced by the cream sauce. The pickled vegetables on the side added a fresh pop of acid that made for a well-balanced dish. My fiancée had the tuna tartare which I thought was a bit more like a ceviche than a tartar, but was nonetheless delicious. A sour and savory vinaigrette combined well with the tuna and vegetables. I say ceviche because the tuna was chopped more finely than I've had in prior tuna tartare. Our friend had the salmon which he seemed to quite enjoy. He mentioned that he loved the interplay of hot and cold elements in the dish. Finally, we all shared a few of their small chocolate lava cakes for dessert--a highlight of this meal.
