If you happen to be in Quebec Province and travelling from Montreal to Quebec City or vice versa, there are several towns you might stop in to get a cross sectional sample of history, from Chambly, a synthetic, plant and just add water instant suburb in the middle of a corn field, to Cowansville and Waterloo, Bromont and Shefford, places that are seeing tradition eclipsed by suburban sprawl, are still mainly agricultural, and are seeing some hard times, but as they will tell you, hard times are nothing new for these towns that started as pioneer settlements four centuries ago. In any case, to get a sense of all this, I would recommend stopping in at the local boulangerie in any of these towns, getting an elaborate pastry such as tartelette aux fruits, milles feuilles, napoleon, paris-brest, chocolatine or just an eclair with a great cup of coffee, capuccino, espresso, tea, or your choice of caffeinated beverage, and look out the window as people walk by and take you through a story both fascinating and sad at the same time. If you can, buy a loaf of bread to take with you, and if you are feeling forgetful you might neglect to realize this until you are safely back at home.

Their selection of course includes bread, pastries and cakes/tarts, but also includes local cheeses, homemade jams, chocolate and cured meats. We've tried a variety of their chocolate which has been great. In particular I really love their bars with dark chocolate and berries which are excellent. We've also had a number of their tarts, cakes and pastries. The strawberry-melilot tart in particular was both beautiful and extremely delicious and the chocolate eclairs where delicate and not overly sweet. Just delish! We have also enjoyed the bread that we've tried from Dorville. I must admit that I'm often sceptical when a bakery tries to tackle such a wide variety of items. But here at Dorville they have managed to do an excellent job with a variety of offerings including their chocolate, bread and pastries.
