Truly fantastic and unique food. I talked with the waiter and heard the story of how this really unique place opened in Oaxaca, the chef had always had an interest in fermented food, and during the pandemic he took it upon himself to become a master of it.
The fermented foods are fantastic, they serve little bites in the beginning similar to Korean banchan. In addition you can buy a portion of their kimchi (which is fantastic). We also started with a bowl of truly delicious Miso soup.
Their menu seems to rotate a decent amount, as the daily lunch menu did not match the online menu -- but we were not upset! We got cold noodles that were perfectly cooked and resembled Sichuan flavors, and pork dumplings (with smoked cheese?!) that were truly fantastic. Everything we tried on the menu was great.
