That's clearly where chef (Cristóbal Rosales) gets to play with whatever the seafood vendor brought in that morning and thought, "hell yeah, I can do magic with that." The tuna just melts in your mouth and somehow tastes exactly like putting a seashell to your ear and hearing the ocean inside. Soft, delicate, but still punchy. The off-menu fried cabracho were magnificent. we also order the berenjena andalusí with sun-dried tomatoes, pistachios, and feta, plus the lingote de atún al whisky con habitas encebolladas.
