There aren't too many variations, but all the basics are there. Salmon maki, salmon sushi, salmon sashimi, salmon cucumber roll topped with more salmon..... Oh and other things I saw like octopus, squid and red snapper sushi as well as Philadelphia rolls. The plates are small and only have one or two items on each which is great because you can try everything without fear of not liking something. :) There were other fried foods that came around tons.
