Focused on old-world technique, the selection of breads varying by day along with a collection of pastries and viennoiserie, it was largely a matter of planning and favorable traffic that saw me arrive just after doors opened at 8am on Monday when bakers were still present, and with most options still warm the question of how much to order was largely that of preferences alongside those of capacity. Undoubtedly a place where anything but a "one of each" order will see desirable items left behind, the prices shockingly low with a total bill of just €10.45 for seven selections akin to robbing the place, it was in a chilly Place Camille Jullian that I sat to partake, first bites of the airy croissant awash with butter as golden flakes fluttered away in the stiff breeze. Taking a unique approach to presentation, the apple 'tart' a delicate finger of stewed fruit between layers of buttery cake with a toothsome texture while the financier was a smooth orb dusted with powdered sugar atop rich nutty notes, those fancying clafoutis should make an early morning visit to La Fabrique Pains et Bricoles a top priority, the version offered in late November a creamy masterpiece with raw sections of citrus and stonefruit on top and cooked bits at the still steaming center. Turning to classics at the end, a Madeline with light lemon as good as any straight from the pan, it should seem obvious that when in Bordeaux the canele is nothing short of mandatory, this version as good as any found outside the restaurant setting while the flawless Gateau Basque was a hearty way to finish, the double layered shell rich with almond flour around a pastry cream center.

There is no seating inside, but there is plenty of seating in the square. It's a popular spot so there is usually a line, but the lines moves quickly. Of course, order your daily baguette here (we did!). But in addition to their fresh baked breads, they also offer some pastries such as classic French croissants, cannelés, madeleines, and more. I found their prices to be extremely reasonable compared to other boulangeries in the area (we did our own boulangerie crawl), and the service was fast and friendly.

I fell in love with the amazing contrast of caramelized chewy outside and the fluffy, eggy center. Not to mention they taste like the best vanilla cake with a hint of rum. There are two main canelé producers in Bordeaux with many outlets around town - La Toque Cuivrée and Baillardran. Having tried both, I preferred La Toque Cuivrée slightly more for their stronger rum flavor and better outside chew. It's also nice that the price is a third of the other brand. Both brands make canelés in a small, medium, and large size. After many taste tests (and some more for good measure), I found that the medium size had the best ratio of outside chewy crust and soft inside. Baillardran had notable visible specks of vanilla bean in their largest size and prominent vanilla flavor, but La Toque edged them out with their superior rum taste. Either way though, you can't go wrong. Now if I only I could find this level of Canelé in the US!

Definitely a must try when visiting Bordeaux! We were able to get a box of 8 medium sides candelés for 4 euros. -- Service -- This is a walk-up window bakery. They do not have a public area inside or seating. They do accept credit cards and speak enough English to make a purchase without any issues. -- Location -- The bakery is located on the Promenade of Saint Catherine, near the Apple store. It is a great location for people staying near the many tourist areas or if you're shopping on St Catherine.

The bakery itself is beautiful, with light colored marble, high ceilings, and you can peek into the space in the back where the pâtissiers are making the pastries. The pastries are all beautifully displayed behind glass and they have a few tables so you can have a cup of tea, coffee and your pastries. We got the matcha choux which was really nice. It had a layer of matcha crème pâtisserie on the bottom, then a layer of matcha crème chantilly in the middle. The choux pastry was nice and fresh and I thought the matcha flavor could have been a little more pronounced and stronger, but it was still delicious. Having the two textures of the crème pâtisserie and the crème chantilly was nice, but I preferred the crème pâtisserie layer more. We also got an Oyatsu in the vanilla flavor (they had praline, matcha, chocolate, and a few other flavors) which was more like an egg/milk Asian bread/pastry with a more solid custard-like filling in the middle. The bread part was more bready (like a brioche or if you've ever had Chinese pastries) than a pastry or sweet bread that is more in the French-style. My husband liked this better than the matcha choux but I preferred the choux to this. You can't go wrong with the pastries here - make sure you stop here when you come to Bordeaux as it's a little hard to find Japanese-French pâtisseries outside of Paris in France.
