I went with the butcher's cut (pièce du boucher) and it was cooked to perfection - clearly high quality meat prepared with skill. The real star was our Riesling pairing - crisp, mineral, and exactly what you want with a proper Alsatian meal. The server's wine recommendation was spot-on and enhanced both dishes beautifully. This is what you come to Strasbourg for - authentic local cuisine in a traditional setting where locals actually eat. Skip the touristy places around the cathedral and come here instead.
