Overview: Lido 84 is a renowned restaurant in Gardone Riviera set on the western shore of Lake Garda. Run by brothers Riccardo and Giancarlo Camanini, it holds a Michelin star and a regular spot on The World's 50 Best Restaurants list. Their cuisine blends Italian tradition with thoughtful, minimalist execution. The setting is romantic and picturesque, with views of Lake Garda that beautifully complement the restrained artistry of the food. Food: I ordered the seven-course Fluctuations tasting menu, including the Cacio e Pepe en Vessie. The meal opened with a curated aperitivo experience: a quartet of amuse-bouches offering a range of textures and subtle flavor combinations. While I couldn't name every element, the interplay of crisp, creamy, herbal, and warm sensations was intriguing. Bread service followed with a flavorful sourdough and crisp grissini, both served generously throughout the meal. It was a small but memorable gesture that set the tone for hospitality. The first official course featured raw Sardinian langoustine with almond cream, citrus, and sage. The texture was cool and tender, with restrained herbal and nutty elements that complemented the sweetness of the seafood. The plating was particularly elegant, using negative space to draw attention to the simplicity and form of the langoustine itself. A quiet but confident opening that set the tone for the rest of the meal. Next came grilled tuna belly paired with zucchini, orange sauce, and a marigold garnish. The flavors leaned familiar but were clean and carefully constructed. The buttery tuna and acidic glaze worked well together. The pasta course included a flower-shaped handmade pasta in a sauce of fish liver and smoked sesame oil. The sauce had a wonderful umami depth. The sesame gave it a subtle warmth, while fresh chives added a bright edge. Though flavorful, the presentation felt a little awkward compared to other dishes. The risotto, served in artichoke and olive broth with smoked eel, was a standout. The texture was perfectly al dente, and the eel added smoky richness. The combination of brine, earthiness, and savory depth made this dish one of the most memorable of the night. The next course featured roasted eggplant, served in its charred skin with tomato and Parmesan fondue. It reminded me of wood-fired pizza in flavor, but was more rustic than refined. The tableside presentation felt unnecessary and slightly at odds with the otherwise minimalist tone. The Cacio e Pepe, cooked in a pig's bladder, is the restaurant's most famous dish. The flavors were refined but lacked a moment of surprise. A final pair of mignardises, a chocolate bite and lemon gelée, ended the meal in a classic, quiet fashion. Still, the overall execution was impeccable. Service was polished and gracious. The setting is spectacular, and for a restaurant of this level, the price point, €140 for the tasting menu I ordered, is astoundingly fair, especially when many restaurants of similar reputation charge far more. Eclectic but distinctly Italian, warm Bread and Grissini flavored with Olives present throughout, late-Winter's "Fluctuations" begins with a veil of Cuttlefish overlying soft Rice in Eel Butter before moving onward to Oysters perfumed by Pine and Buttered Spaghetti made anything but simple by crispy puffed Yeast. An admirer of all forms of art, books and statues surrounding a piano overlooking the water, Risotto comes splashed on a white canvas with Red Berries prior to intentionally sticky Pennoni meant to be dipped in an emulsion of Uni. Lucky next to receive 84-hour steamed Pasta allowed to ferment for a year, its texture quite distinct beneath Foie Gras and Pigeon Ragu, Chard offers a bit of levity before moving onward to faultless Sweetbreads sharing the spotlight with Honey and Mustard. Known best for Cacio e Pepe cooked in a Pig's Bladder, a blind method of preparation that leaves Pasta firmer than al dente but beautifully matched to simple toppings, tender Beef comes with accents of Duck Fat and Pork Lard plus the bold skins of Sheep's Cheese. Offering each guest a different dessert, on this day Chocolate toasted to taste of Burnt Milk and Caramelized Pears with Pumpkin Seed Praline, those with capacity should inquire about adding a laminated "King Size" Cannoncino perfumed by Moroccan Spices with Apricots. Always pushing forward, with textures and flavors inspiring questions, the story ends with Torrone clipped tableside and a quick tour further seeking to educate those who already think they understand.
